Disappointed, but maybe my expectations were too high given the delicious Big Hoss caterings I've enjoyed these past couple of years. Big Hoss is NOT the place to bring semi-large groups. For a successful large-scale caterer, the restaurant kitchen and staff are surprisingly not equipped/trained to handle large orders. We were a group of ~20+ Killeen area locals. We were one of two "parties" there on a Saturday night. Big Hoss had only one waitress available to help us. Took ~20 minutes to take all our orders and another hour to get our food. Recommendation to management: Hire a hostess and maybe a floor manager. I would task the hostess to just go from table to table and offer to refill drinks. Waiting an hour for your meal would have been less tedious had we not been staring at our empty drink glasses. I would also have the floor manager and hostess help during the surge when the meals came out. I can think of no reason why there should be a 20 minute gap between the time a table gets its first order and its last. It's fun to eat together. Serving plates haphazardly puts pressure on the early served who either wait and watch their food get cold, or have to eat their food alone while the rest of us stare. Towards the end a couple of additional servers came out of nowhere and did help in getting the last few orders out, but by then most the rest of us were done with our meals and looking for the checks. The actual BBQ was not bad, but definitely not "wait-an-hour-for-your-order" good. On the plus side: 1. Automatic 15% gratuity ensured our "Lone Ranger" waitress did not suffer from total lack of support by kitchen, management, and overall terrible dining experience. 2. They were quick to replace my cold and mushy sweet potato fries with a new order. The replacement order of fries came out crispy and hot. Delicious! ...but then again only begged the question of how good the entire meal could have been had it been served hot and not sat out on a kitchen table prior to serving. I support local business and you can tell by my Yelp profile one-star ratings don't come easy. The sad/lost opportunity is instead of having 20+ Killeen locals raving about the dining experience to friends and family they were instead all out in the parking lot offering their assurance to our party organizer that they did not hold him responsible... Every place has its off day. I may come back to give 'em another try, but only if I'm showing up as a table for two. read more

The food looked and smelled great but if you are gluten free you can only get chicken or sausage. And side is limited to Cole-slaw which was not really great. And if you go expect long wait time after ordering. We ordered 2 half chickens , a quart of slaw ( for me and the kids which are gluten free) my husband got brisket and a side the wait time was 50 mins for them to bring it up to us. They do check your order before leaving which was good because we were missing the brisket and 1/2 of the coleslaw. We won't go back not enough of variation for gf people. read more

Great food with awesome prices for serving sizes. The menu is on point and since I've been ordering i have never heard them say we don't have it. Ended up here for my cousin's rehearsal dinner. It was close to our hotel, but seemed like we were out in the middle of nowhere. Didn't get a great idea of the food since we didn't get to try a lot of things. Our plates had chicken, brisket, beans and coleslaw. The chicken and coleslaw were awesome. The brisket was pretty fatty, and I wasn't a fan of the spicy beans...expected them to be sweeter. They didn't have booze, but let us bring in our own. My family LOVES getting Big Hoss at The Settlement. Atmosphere is great, food is delish, and the staff is attentive.

It's ok. That's about it. The food tastes like it's all pre made and frozen then reheated with steam. The brisket doesn't have much life to it, the mashed potatoes were over salted and the Fries are out of a bag. Hell, the cobbler tastes like they bought it and microwaved it. Not worth the drive way out in the boondocks. If it were two miles away I still wouldn't go there because it's pretty bland. Not terrible, but not a lot of flavor. They give you plenty, it's comfortable, nice folks, but the food is unimpressive, especially for such a remote location. read more

I attended a post-deployment unit function at Big Hoss Bar-B-Que. My unit had the entire establishment booked, and we all received the same basic meal for $13. I found the main entrees to be good, the pulled-pork especially so, the side-dishes, mac-n-cheese and green beans to be very good. The staff was friendly and the atmosphere causal. I found that the $13 price per plate a little on the high side, but not exorbitantly so. This restaurant is definitely worthy of consideration, especially for those who live in the Harker Heights area. read more

The food was excellent (I had pulled pork BBQ sandwich, green beans, red-skin mashed potatoes, and "boar's egg"). The ambiance was enjoyable -- the place has unique decorations with each booth presenting a slightly different theme. The location isn't perfect -- outside of town -- but they've paved their parking lot and spent a lot of time making the property look nice. When I first looked at the menu, I thought the prices seemed a bit high, but our bill turned out to be less than we spend at comparable restaurants. My only complaint was the service, which seemed slow -- took 15 minutes or so to get the appetizers, and another 10-15 minutes to get the food. I had to wave over a wait-person to get a refill. When the bill was presented, I had my card ready, but the woman walked away. After waiting some time, I eventually brought my bill and card to the front door and paid there. Me and my hubby went here a few months ago when we had a day without kids . After hearing all the Radio ads we were expecting to be let down. Quite the other. All of the food was great . Some of the best we've had around this area and growing up in Tx thats saying something. The price was average for BBQ . Loved the feeling of the building inside and out and had great customer service .
