Damn Billy! I don't even have to mess with Lockhart or Luling anymore, you make all my greasy delicious dreams come true. To be honest, I can't get past the brisket and sausage so I shan't speak to anything else, but what else do you really need? These guys are always friendly and cut brisket exactly how it should be cut, at half the price of Blacks. My stars is based on the friendly guy behind the counter. Read this correctly when I tell you this is the nastiest bbq I have ever tasted. I figured since I was in a little country town I would get some damn good bbq especially since it was a little shabby spot. I ordered 2 mixed plates totaling 26.00! One sausage two ribs and some nasty store brought potatoe salad with some can pinto beans with no seasoning! Oh and the bread. First the bbq is not bbq it taste like it was straight out the oven and boy was it tough. The ribs was tasteless and noway in hell came from a pit. The drink was good ! Was in town and wanted something good to eat so I came here at 12:45pm on a Thursday. Parking is in the front and to the left of the building. To the right is Dairy Queen parking. Some people here, but the place was sort of empty. Lots of people taking out orders. Ordered 1 lbs of fatty brisket, 2 pork ribs, and a side of coleslaw and macaroni salad. Definitely let the meat cutter know you are eating in or taking out or it will be a take out order. The pork ribs were on the dry side, but very tasty. The fatty brisket was moist and amazing. I'd say it's so good it can compete with the big boys in Austin. Sides were decent, but it's not what you would come here for. They have some mild hot sauce, but no bbq sauce. You dont need any anyway. Downside was that they put too much ice in the fountain drink. Overall this Texas bbq place was great to stop by in Bastrop! read more

I've now had this Bar-B-Q twice and the impression remains a solid 2 stars. While I am a fan of local shops and sustaining the mom and pop stores, it's hard for me not to admit that Rudy's is much better. However, you'd have to go back to Austin for that. After dropping a solid $45 for sausage, ribs, brisket, slaw, and tater salad, we forgot to ask for waters at the time of ordering. They wanted an additional 10 cents for each water - seems a bit excessive. Perhaps if they chose to do away with styrofoam containers I'd feel better about not letting the cup cost slip under the radar. Cartwrights is the next place I'll try. read more

Stopped in this road side joint on our way home from Fredericksburg, by recommendation from friends. Must say, we weren't disappointed! We pulled up to this little place right off 290 and parked in the lot to the side. Hubby ran in and snagged us two sandwiches, one chopped & one sliced, two ribs, chips and iced tea. The sandwiches were the perfect size, stuffed with great BBQ- flavorful & delicious, wrapped in the perfect paper to hold in your hand for car eating (not driving, just sitting in the car). I've been eating here most of my life, and while they aren't the best in the business, I can always rely on Billy and Co. to provide me with some good sausage and wet brisket. Also, they have barbecued mutton. Who doesn't love mutton? The beans are good, but I'd skip the potato salad. It comes out of a bucket, just like 'most everyone else's. Do not come here or waste your money on this place. I had high hopes for this place because my co-workers talked ,so highly of it. This place is so overhyped the chicken is so dry and it tasted bland. The barbecue gave me really bad food poisoning and I was sick for at least a week. The place isn't easy to see coming down 71. I almost passed it completely. I got 1/2 lbs of brisket sliced lean. I always get my brisket lean. I've just never been a fan of te marbled side. I am pretty dissapointed though. The smoker smelled great but I don't get much of that flavor in the brisket. Also, my brisket is pretty tough. Like I said, I always get my brisket lean, and at good BBQ places it is still fall apart tender. I also don't rate much rub on it and the BBQ sauce may as well be ketchup. Just stopped in today for a a bite. I had the 2 meat plate combo with chopped beef, sausage, macaroni salad, and coleslaw. I very much enjoyed the food. If you like a bit of spice try adding some of the vinegar spice that's sitting out on the tables. The sausage was the best part for me. It had that taste of homemade sausage right after going hunting. It doesn't top some of my BBQ favorites like Salt Lick, Rudy's, and County Line, but it definitely held its own. Great little stop and take home , I purchased the family pack -brisket and sausage 2 large sides. My family knows good brisket this was pretty good , tender and seasoned well , all beef sausage was good as well , potato salad was really good, Mac and cheese , green beans were good normal. They don't slice thin on the brisket , so if you looking for that you maybe disappointed. I asked them not to give me chunky pieces of brisket (that's just me). Would definitely stop here again. Best smoked chicken ever, but sometimes they run out of it after the lunch rush (or my timing is just bad!) I like to go there for chicken dinner, but I've learned to call first to make sure they've still got some. I tasted my friend's brisket, and it was very good, but I can't eat it because I have to avoid sodium & the brisket rub (anywhere) is too salty for me. Been passing this place for years and always wondered and finally we found out! It's really good! The two gentlemen at the counter were super nice and very helpful. They asked if this was our first time and we answered yes.... they gave us a sample of their daily house made all beef sausage. It was the start of an enjoyable meal. You can order by the pound or order plates... whatever fits your fancy. Since it was our first time we decided to order a half pound of brisket, pork ribs and sausage for a sample of most of the meats available. The brisket was moist and tender. The pork ribs were also tender and falling off the bone with a bite... not mushy. The sausage had a nice pepper taste with just the right amount of fat. The music to your ears is that wonderful snap of the sausage when you take a bite out of it. Makes you smile when you hear it. The sides of beans, macaroni salad and potato salad were good. We didn't get it but we saw someone have the chicken and it smelled wonderful and looked delightful. There is mutton on the menu and I've heard through a couple of local sources that's its worth a try... maybe next time. Don't pass this place...it doesn't look like much on the outside but when you walk in you enter a little piece of small town Texas and all its charm. read more

I had the brisket and pork rib plate with beans and slaw and I must say this is the best bbq that I have had here in Bastrop County. The sauce is by far the best I have tasted, even compared to Austin places not too sweet, just the right amount of tang. The meat had a great smokey flavor and was cooked to perfection. The only reason that I didn't give this 5 stars is that the prices / portions are slightly out of sync. I paid a lot for not much meat. Beans and slaw are pennies, so the sides just don't justify the price. Also the brisket was extremely salty. I love salt and it didn't ruin it for me, but when I notice something is salty it would probably be very unpleasant to someone who is sensitive to salt. FInally, and this is a small thing, but the sweet tea was a little bitter, as if it had been steeped too long. That was just a small thing like I say, but when it is 100 degrees and you are looking forward to sweet tea, this can be a big letdown. Bottom line is that the BBQ is tasty, with nice smoky flavor and cooked to perfection, the sauce is perfect. I came here for BBQ and not sweet tea and so it's clear that the goods outweigh the bad by a wide margin, and if you crave BBQ and don't want to drive 40 minutes to stand in line a few hours, this is a solid choice. read more

Well not sure what's happened to Billy's bbq it use to be good and priced right but not any more I just got food for my family on 08/28/2020 it was awful for 53.00 I paid I got after asking for it to be trimmed well because the fat causes my stomach to turn well to my amazement it was mostly fat not hardly any edible meat got sausage too it was dried out and full of fat I was so disappointed I had to eat just the beans that was the only good thing out of the order that cost me 53.00 dollars never again I'll travel to Elgin to Meyers bbq their worth the drive plus if you call them unhappy with any part of the order they will refill the order free of charge not at Billy's they just say sorry about your luck more or less but they dont replace your order so I'm done my review is go to Elgin Meyers you'll get more and it will be good they GUARANTEE it and I dont have any Affiliation with them just a satisfied customer is all dont like wasting my hard earn cash for bad food read more

Visiting the area, we wanting some BBQ. A couple of the others were closed on Sunday and Billy's was open. Everyone was very helpful and friendly, and because we said it was our first time, we were given sausage samples when we walked in.We had brisket, (beef) sausage, coleslaw, and potato salad for takeout. We got their regular BBQ sauce and a little container of the spicey mix (to be mixed with regular.) Everything tasted great and we will return if we are in the area in the future. read more

The best in Bastrop and surrounding areas. Just a small place with red checkered tablecloths but don't leave without trying the tender, moist brisket. They do use spice in their rub so be mindful if you can't tolerate a little. The sausage is great as well with very tender casings which are almost unheard of. The sides are good but it's the meats that will bring you back! read more

I've been eating at Billy's BBQ whenever I pass through Bastrop for over 20 years (with 3 different bands) and I've never had a bad meal there. The sausage is the BEST around -- kind of like what Elgin sausage used to be. And the brisket is among the best I've ever had. And the prices are NOT bad. The reviewer who said it's expensive must have never eaten at a Cooper's... And to compare it with Rudy's or County Line??? Rudy's is about the worst, most industrial BBQ I've ever had (with really bad sauce) and the County Line may have good sides, but the meat is about as tasteless as can be. People talk up Lockhart BBQs, Louie Mueller's in Taylor and Salt Lick, all rightly so, but Billy's gets overlooked when it is well worth the trip to Bastrop just to eat there; maybe because it's not a fancy or "folksy" decorated location -- just a simple stripped down place. But I go there for the meat and the people serving you couldn't be nicer and more accommodating. And you can still get the spicy brine sauce there on the table to complement the sausage, in addition to a regular thick BBQ sauce. read more

Billys is a little bbq place on the east bound side of 290. We were coming out of Austin and had a hankering for some good hill country bbq. On a suggestion from a local we decided to pass up the fancy looking places and dive into this little joint. The service was very friendly and I was immediately greeted upon entering. No frills just great bbq. We ordered two brisket sandwiches, one sliced and one chopped. Both were excellent, not too big but just enough for lunch! I also opted for a side of pork ribs as they looked pretty good from the order station. I was impressed, just the right amount of smoke, very tender and didn't even need sauce! Definitely stop in if you are in the area! Its right next to the DQ and if you blink you may pass it by, but I suggest you make the u-turn if thats the case! 4 Stars!!! read more
