This place is a must visit anytime we are in the area! The cheeeeeeese! On the last visit we picked up a chèvre and a delice de Bourgogne which was simply phenomenal. Service was okay. They also have various grilled cheese sandwiches, which I've enjoyed on previous visits. There's a small outdoor seating section on the sidewalk. Neat little high end cheese shop on Main Street. It's a convenient spot to pick up stellar cheese and accompaniments to impress snobby guests. For most days, come for a light lunch. Grilled cheese sandwiches are $6-7, and baguette sandwiches are $7-8. $30/lb prices aside, my main critique is that there are surprisingly few local cheeses in stock. The prices are laughably high. The service is laughably indifferent bordering on rude and dismissive.

We were there for lunch today at Bimi's Cheese and ordered a tomato soup and charcuterie board and out of all the 3 cheeses that were selected by the staff/chef. One smelled like ammonia and it's horrid to eat, thinking that the cheese would smell like blue cheese but it wasn't, It was spoilt !!! Don't ever serve anything to your customers if you're not going to eat it yourself!! This is so disappointing and we paid $25 for the charcuterie board! If your instincts tell you something is wrong, speak up and ask for the manager!!! We will never go back there again ! read more

Hidden gem in downtown Chatham! You'll pay to play but this is good artisanal cheese for the rich and not so famous of Columbia County. Everything we sampled we bought- and yes like a top shelf cheesemonger, taking a cue from the professional dope slingers in Albany and NYC, samples flow with reckless abandon, knowing full well that anything you try, you're going to want and you'll be hooked. But again, I must warn you, margins are set high- it must be the rent in downtown Chatham- So you are going to pay for quality, something we gladly did. But alas, this shop is outside of our regular circles and we can't justify the trip for the cheese, but if we are ever in town again and Visa raises my credit limit, I'll be back, skulking around Bimi's, looking for samples and another fix. read more

There's certainly a range of personalities working at the shop, but some individuals are downright rude. I arrived 8 minutes before opening and a staff member literally shut the door in my face and walked away. On another occasion I was accidentally overcharged ($40) for an item. I brought it to the attention of the cashier and it didn't occur to them to apologize. Quaint shop located on the main road in downtown Chatham. The place has a modest size of incredibly phenomenal cheeses and cheese accessories. If you wanted to spontaneously spend a lot of money of really quality things to have a romantic picnic, you could get pretty much everything you need here. They had drinks in a cooler, cheese (obviously), bread, various dried fruits and sweet spreads, made to order grilled sandwiches, and picnic blankets. The staff knows way more about cheese than I ever will and you can tell they really love what they do. Wanted to grab a cup of coffee somewhere. They had a little chalkboard out front that said they had coffee and espresso. Thought I'd give a try. I mean it's only coffee we're talking about. Shop itself is nice, lots of different cheeses and Specialty items. A lot of offerings for such a small space. There were two people sitting down in the window eating and two people outside waiting for food as well. After waiting 5 minutes for my coffee or I should say to even being acknowledged finally I was able to get my coffee. I asked if they had a dark roast. She said "yeah it's just whatever one kind" I grabbed the coffee anyways. Honestly it just seemed as if the staff was annoyed that you walked in. By the way my coffee wasn't even hot. Normally I have to put an ice cube in it or wait 10 minutes. No biggie just a place that I won't go to again. read more

Bimi's Cheese Shop is an incredible place. Their grilled cheese sandwiches are absolute heaven and by far the best I've ever had (and I date a chef...and he agrees)! The addition of a choice of a side of a pickle or kimchi is a great play on flavors. They carry a wonderful selection of cheeses that their friendly & knowledgeable staff are always happy to share notes on and a taste of before you purchase. Their Mycella Blue, Ossau Iraty, and Challerhocker are some favorites of mine; and their "Omigod" cake (a savory blue cheesecake) is not to be missed! They have many other tasty goods including great charcuterie, pantry staples, and many hard-to-find specialty items. I hesitate to share this (as I fear others will love it as much as I do and buy them all out)- but I buy two jars of the Meredith Dairy Marinated Sheep & Goat Cheese every time I go and quickly find myself needing to buy more! read more

When I saw "cheese shop coming soon" in the window I couldn't wait to tell my wife. And tell my wife I did - with the kind of excitement normally reserved for winning lotteries or finding Bono passed out by your compost bin. I'd like to pretend I didn't get excited about a cheese shop opening, but I did. I got really excited. I want to be cooler than that, but clearly I'm not. And I'd like to pretend I didn't make it a point to go there as soon as they opened, but I did. I was there within 24 hours. Because I wanted to see cheese. They have lots of cheese. Excellent cheese. Cheese imported from great cheese-making places. They put the cheese selection of the Price Chopper down the street to shame. Price Chopper thinks "imported" means "from Wisconsin." They had the cheeses that are most important to us and often hard to find, namely Brillat Savarin and Raclette. That's right, my wife and I have strong feelings about cheese. And I can spell Brillat Savarin without having to look it up. It's an important cheese. It's cheeseportant. They also had other hard-to-find things like quality olive oil. And they had salt flakes. Only a week earlier my wife was talking about needing salt flakes for a recipe. I had no idea where I was going to find such things. Lo and behold, these guys had them. It was a very exciting moment for me. You should have been there. I love this store and will be there a lot. I'll be the tall guy pouting if they're out of Brillat Savarin. read more

We read about this place and specifically made the 1.5 hour ride there. The gentleman behind the counter was friendly and knowledgeable about all things cheese. BUT...be forewarned...we didn't discover until we got home that the pricing for the cheeses in the refrigerated case were based on HALF POUNDS ! Our fault of course, but I find that way of pricing a bit misleading; smoked cheddar is $30 per pound??? It's cheddar, folks...And other selections $35 per pound ? My wife and I visited Chatham with our 17 month old son recently. We stopped in Bimi's and were greeted with a warm and friendly welcome by the employees. One employee took the time to show our little boy where all the "mice" were hiding from the cats ( obviously, the mice weren't real). Another employee was kind enough to box up our purchase of several cheeses with ice packs to prevent them from spoiling because we were not arriving home until the next day. How many other cheese shops would do that for you? When we arrived home, we ate the cheeses with family and friends. The Drunken Goat Cheese was creamy, rich, and flavorful, yet not overpowering. The Gruyere Cheese was firm, rich, and flavorful too, and remained so, after we made grilled cheese sandwiches with it. You will be pleasently surprised that a small cheese shop could be so rewarding in many ways. So, if you are passing through Chatham, please consider this village gem.
