Wonderful food, service and overall dining experience! Waitress and chef were both excellent. Loved the cozy and quaint setting. Food was delicious and served with style.

I recently ate at Bistro Milliard and couldn't be more impressed. The waitress was super sweet and food came out relatively quickly. It's a small restaurant, so make sure you book a reservation in advance. Food was delicious!

Charming and intimate experience with this chef owned unique bistro. Highly recommend the Tuna and Muscles. Wine was delightful and the waitress had a great attentive but not overbearing approach. Hidden in bustling Hallowell! Special occasion kind of experience.

10/10 best gnocchi I've ever had. Focaccia to start was a nice touch, and the apps were fantastic as well. Tim changed the recipe to the white beans and sausage to meet my vegan dietary preference and absolutely nailed it. Excellent service as well, couldn't recommend this restaurant enough.

    Agnolotti al sugo di funghi

Exactly what Hallowell needs! While other surrounding towns are getting fabulous chef-owner restaurants, this one landed with aplomb. The chef, experience from Italy to Portland, is very welcoming and delivers every dish with finesse and faster than expected for a one man show and one waitstaff for now. There are limited tables in this cozy romantic space (former Slates building) so reservations are encouraged. Outdoor patio is planned for the future. The calamari was tender and savory, braised with porcini and pecorino. Eggplant was a perfect parmesan app. And the agnolotti di funghi the best pasta (house made) dish I've had in some time. Panna cotta was very traditional. They call the apps "tapas" but really they are a half dozen appetizers of choice, slightly larger than a tapas house would deliver. So in the end the prices are typical for a joint like this (including the wine and good beer offerings). We are returning to try more!

We already have some excellent local Asian restaurants but we don't have too many places, serving upscale bistro and pub food in an attractive setting. As this was our first time here, our server, Joshua, Was especially helpful and attentive in beverage and menu selections. And he did a really nice job of trying that all of the dishes came out at the right time in the right order, which isn't done often enough. Joshua highly recommended the falafel and I join him in that recommendation. The switch to lentils is the base made an exceptionally light but tasty version of a wonderful favorite. The mug, fish and cabbage dish was delicious, though maybe a bit larger certain of lentils, maybe with a bit more spice, would've made this dish even better . The risotto with crab was delicious, but the crab was lost in the dish, so it probably would be better as a crabcake or as a amount of crab meat on top of the risotto. And normally addition to risotto are made at the very end anyway, so this makes sense to get the most out of the crab. We had several glasses of wine, with generous pours; the Sancerre was exceptionally good and paired well with everyone's dishes. There are some excellent local beers on top as well for those who want beer rather than wine. One of our group had some of the oysters and said that they were extremely fresh and delicious - they were local from Brunswick (Mere Point). The desserts and after dinner drinks looked good, but we were full enough that we'll wait until another visit to do that.

My guest and I shared the country bread to start, and it immediately set the tone. It had a subtle sweetness against a beautifully salty texture, which made it far more memorable than bread service usually is, comforting and refined at once. I had the steak tartare temaki and the tagliatelle, and both were outstanding. The tartare was clean, balanced, and quietly confident, with excellent texture and flavor. The tagliatelle was just as impressive, rich and satisfying without ever feeling heavy. Both dishes felt composed rather than overworked, which made them all the more memorable. My guest had the salad and the salmon, and those were equally well executed. Everything that came to the table felt thoughtful, polished, and deeply appealing without trying too hard. The dulce at the end was a lovely finish, understated but exactly right. The only small note is that the room was a bit robustly noisy, especially for an early reservation. Even so, the quality of the food and the assurance of the kitchen carried the experience. What stood out most was the consistency. Every dish felt considered, every flavor felt intentional, and the entire meal had a calm sense of confidence that is harder to find than it should be. The Knotted Apron is the kind of place that leaves a strong impression precisely because it does not need to announce itself.

In the Paella cooking class, we really enjoyed the intimate instruction that Chef Damien and Bartender Asher. The class was informative and very fun - and the food & cocktails were delightful! When we returned a few weeks later for dinner, our impression of Chaval (the staff and the food) didn't skip a beat. We sat at the bar and had a really enjoyable evening. This is a great place for date-night, a celebration or just an excuse to go out and enjoy what Portland's local cuisine has to offer!

They make you feel very welcome and will answer any questions you have. I have great beverages when I dine here as well, fantastic wines, they did well choosing the wine list and it's always delicious. I even enjoyed a fantastic cocktail this most recent time i went and I think it might have been my favorite cocktail i've ever had. The Ay Caramba! which was reminiscent of a dirty martini and spicy margarita - it was fantastic! Now for what has deemed this a 3 star instead of higher - the food and prices. The food is wonderful, i don't remember having a bad bite but for some of the pricing i would hope i wouldn't. I think the snacks and appetizers are more fairly priced for what they are considering portland in general but I was rather disappointed that the doses weren't more of a wow factor. My biggest concern was the paella night that they have every monday, i had been so excited to go and finally got the chance. I was disappointed to find out it is $28 a person and a minimum of two people so it's actually $56 total minimum. As a solo diner i couldn't justify that for myself and wish they would make that clear when they advertise it every Monday on instagram. I love Chaval but I don't think the dishes make sense all the time - i think it is in the eye of the beholder how you feel about this place!
