The parfait is certainly a unique way to deliver the whole experience in a single convenient dish. Beans in the bottom, pulled pork, with coleslaw on top. Certainly the different types of slaw influenced the overall flavor but I think it was also the way the cabbage in the slaw was rough cut instead of shredded. Siracha and Dijon were in the driver's seat with one of the slaws I tried. The staff was super friendly. Although the restaurant is a humble place it was jammed when we were there. If I lived in the area I'd probably show up once a week too! Maxons clearly captured the rural area's attention and some folks from town were there too. What a great experience. I have heard of their food from friends and happened upon them at an event in St. Johns. They served up a full menu of brisket, burnt ends, pork, ribs, and chicken. They also had an apple slaw and loaded mashed potatoes, along with their signature sauces. It was all delicious. I had their meats taco-style, one chicken and one pork with slaw and a spicy crema (sour cream). The meat was so smoky with a robust flavor that wasn't salty. The slaw and cream amplified the flavors of the meat, and didn't distract from it. Before leaving, I picked up a plate of what was left, chicken and burnt ends. My partner ate some last night after the drive home, and I just finished some (24 hours later). The flavor is still spot on, and the meat is still tender. The owners of this BBQ joint seem to love what they do. They do it very well. I can't wait to track them down again.
