A Truly Artisanal Bakery I rarely leave reviews on yelp anymore, but this bakery is so impressive, it inspired me to type this down. I'm from the Bay Area and loved going to all kinds of bakery when I travel. I did not have much expectations when I came to Raleigh. I tried Paul and Jack and couple other bakeries, they were all good, but not impressive. The first thing I noticed was their Mill Room, and second I noticed that they have 100 score on hygiene. Not that I care about the score that much but still impressive. Then We got a bunch of pastries, the shortbread was the first one we tried and wow, it was so simple yet so flavorful, truly malted tasting shortbread, it has so much depth in taste. Then I had a had a ham and cheese croissant, it was on the salty side but I kept eating it when I'm not even hungry. The true winner though, is the plain croissant I got which traveled with me for 72 hours back home. I got it out of my bag, slightly flattened by all my stuff, I expect it to taste flat and meh. I put it in the oven for 6 minutes and it turned out to be the best croissant I've had. It was flaky, soft and soo flavorful. Now I cannot stop thinking about it. Lastly, I want to say that with so many pop ups, new bakeries coming up in different cities, often times we were chasing that unique flavors, that special toppings on croissants, but Boulted Bread stayed true to bread, and perfected the craft without focusing on "exotic" or "special" flavors. The same ownership as Benchwarmer Bagels. They really know bread. I got here at almost closing time, and I wish that I had come earlier because almost everything was sold out. I got: 1. A bialy (bee-AH-lee) is a traditional Polish-Jewish bread roll, similar to a bagel but with key differences: it is baked, not boiled, has a dimpled center filled with onion bits and poppy seeds, and is generally softer and less dense. Originating in Białystok, Poland, these rolls are traditionally served plain or toasted with toppings like butter or schmear. 2. Rye shortbread. Not too sweet. Just perfection! 3. Bran biscotti. I like the idea of a high-fiber bran biscotti over a refined flour one. 4. Buchi Tepache. I got the mango-pineapple flavor. This is a local NC brand. It's a mildly fermented drink that originated in Mexico. I got the ingredients from their website (drinkbuchi.com): Organic Tibicos (Water, Organic Fair Trade Certified™* Cane Sugar, Organic Kefir Culture), Organic Apple Cider Vinegar, Organic Mango Puree, Organic Pineapple Juice Concentrate, Organic Whole Lemon Puree, Organic Mango Natural Flavor, Organic Pineapple Natural Flavor, Organic Monk Fruit Extract. 5. The baguette. Unlike a refined flour white bread baguette at La Farm Bakery, this one is made of a red wheat flour. Turkey Red flour is an heirloom, organic hard red winter wheat brought to Kansas in 1873 by Mennonite immigrants. Prized for its rich, nutty flavor and superior baking qualities, it is often used for artisan bread, sourdough, and pasta due to its unique, sometimes more digestible, gluten profile. It is commonly stone-ground and available from local Kansas millers. 6. The star of the show was the Everything Croissant. Like the Everything Bagel but soft and buttery. Topped with all the sesame seeds and seasonings with a cream cheese interior. So good! I do plan on returning! read more

We went this morning excitement so glad to say that this all of my expectations. I had the pear jam pastry, my partner had a ham and cheese croissant and our little one had the cinnamon roll. They have fresh milk for sale from dairy farm in Juliet, nc, the coffees are incredible! It was super busy so you have to wait a little for a table, but the pastries are so incredible that it's worth the wait! The ambience feels like an industrial bakery, but it's inviting and cozy. You can tell. It's a wonderful neighborhood spot where people meet up every day. It's definitely recommend it if you're not yet visited. And if you're looking for a place to get your fresh bread weekly then I highly suggest this space. read more

The morning bun is my absolute favorite. Coffee is 10/10 especially the lavender flavoring but all of it is delish. Any pastry I've ever gotten I haven't been disappointed. So clean and such a cute spot. They also have drinks in the fridge, but if you are wanting to get a coffee, expect to wait a little bit. read more

While the bread was spectacular, I don't know that it was worth standing in line for. The coffee was well done. The bread in the raspberry chocolate pastry was so stunning that the filling felt distracting in comparison. I'd be back to buy loaves of bread from here. All I can say is wow! I have heard nothing but great things about this place and it certainly lived up to my expectations. Upon getting there, the line thankfully wasn't that long but it is such a cozy spot. My only gripe is that there are definitely not enough seats (which is telling to how good this place is). I got an assortment of things - a chocolate croissant, everything croissant, morning bun and a cheddar scone (not the name for it but that's my best shot at a description). The croissants were incredible - both flaky, light and with the right amount of "chew". My only complaint with the chocolate croissant was that it was so fresh that the chocolate basically shot out of the other end when eating it. The everything croissant was amazing. It was filled with a scallion cream cheese which to me, was heavenly. The morning bun was definitely more indulgent and heavy, but still incredible. The layers were fluffy and had exactly the right amount of sugar and zest. Finally, the cheddar scone was awesome. I think I would've enjoyed this as a breakfast sandwich to be honest with you but it has layers like a biscuit and such a kick of spice at the end of the bite, it was fantastic. I had the morning bun and this other bun filled with raspberry and dark chocolate. I really enjoyed the raspberry and dark chocolate bun! The pairing was top tier. The morning bun had some citrus notes to it but was very dense. I ordered the Lady Grey Latte thinking it was a tea latte, only to realize on first sip that it was a coffee beverage :( I personally don't like coffee, but it was my mistake so just a word to the wise for anyone else! The lady serving us was very friendly and provided lots of great recs. There was a bit of a line when we went on a Saturday morning but it moved quickly and we were able to get our items (baked goods + drinks) within 15 min of initially getting in line. So many breads, they have pastries and cookies and everything we tried was excellent! Did not get coffee or sit to eat there but brought several things out to try. Onions have layers, Ogres have layers. Boulted Bread has more layers. The croissants, amazing, morning bun, to die for, the coupa cheese honey danish thing, amazing. Service is fast and friendly. Well worth the wait, walk, or drive. You may have to wait outside but it moves fast. Iced coffee is decent. Parking lot kinda sucks but it's downtown Raleigh so you still have street parking. I met a friend here for a late lunch and was pleased by their pastry offerings. They grind their own grain, and, as I suspected, I was able to eat their pastries without a reaction (I am gluten-intolerant). It was like visiting Europe without getting on a plane. When you approach the street your senses are overwhelmed by the delicious smell of freshly baked bread and pastries. We knew we were close when we inhaled the good bread smells. We came in on a Saturday around 11:30am so a lot of the pastries were already sold out, but we snagged an everything croissant and chocolate croissant for breakfast. I found this coffee shop and bakery on TikTok and had to check it out since everyone was raving about it. The line was out the door when I got there, which felt like a good sign. Service for the pastry was super fast, but I waited about five minutes for my coffee which was fine. The coffee itself was really good, but the pastry I grabbed was way too salty for me. I'm guessing I just didn't pick the right one because this place is clearly popular, so next time I might need someone to point me in the right direction on what pastry is worth trying. I really wanted to like Bolted Bread because I lived in Germany for 4 years and genuinely miss the quality of breads and pastries there. Unfortunately, my experience here has been inconsistent at best. The banquet and ciabatta breads can actually taste pretty good -- when they're not heavily overbaked. The problem is that most of the time the loaves are burnt to the point where the charred flavor overpowers everything else. Occasionally you get lucky and the bread is only dark on top with a deep golden crust on the sides and bottom, and those times it's enjoyable. The pastries have the same issue. What should be soft, flaky, buttery pastries instead end up tasting bitter and burnt. A little extra browning on the crust is one thing, but this feels excessive. I once asked a staff member why the bread was baked so dark, and was told "that's how people like it." Maybe some customers do prefer that style, but for me it crosses the line from well-baked into burnt. At this point, if I'm nearby, I'll sometimes peek in to see how the day's bake looks before deciding whether to buy anything. I just don't understand the appeal of bread and pastries that consistently taste charred. read more

Really enjoyed Boulted bread one of the best ham and cheese croissants. The egg tart like pastry was very good loved the light citrus flavor. In general I was really impressed by the bread. Was also impressed by the mill and seeing the croissant lamination machine putting in work! If I had one issue it was the service. It was our first time there it just felt a bit rushed and there wasn't much help. Just a silent person watching us waiting for us to tell them what we want. A simple "how are you doing, please let me know if you have any questions". The space was perfectly fine. The highlight of the space was definitely the visual of the bakers baking. read more

I have very sharp bread knife and even with that I am unable to cut slices. What's not to like? This place is wonderful. Cappuccino was an 8 out of 10. The bakery looked very tempting but I didn't go for it. Anyone knows me well knows I'm all about the coffee in the morning. I got my cappuccino with oat milk which is not typical of me. I've been disappointed in the past with baristas not making it right unless they use whole milk. That was not the case here as my cappuccino was very good. Right temperature, right texture, right color, good coffee taste. If anything, the parking was a bit of a pain, but I think they have additional parking in the back, be aware this and you should find a spot. It's a yes for me. read more

We have been in Raleigh 5 years now and have tried several B.B. offerings. Ambiance is ok. Clean. Well lit. New store and contemporary look. Service is also good. No issues. We have tried breads: the baguette, whole wheat and maybe a rye(?). They are ok. People rave about the morning buns: they are very very dry...and once we were served buns that were a wee bit burned/over baked. We already had them home so we never followed up with the store. Coffee is OK. We have really tried to love B.B. and support a local shop...it seems like they are popular and have good customer service....but it seems over priced and it does not meet our expectations. read more

Been seeing the reviews so I had to come try for myself. I went on a Sunday after church to get some breakfast and do some work. It wasn't crowded but business was steady. Many of the items were sold out and I was told you have to come early. ( It was Bou 1:30 pm). First. You can smell the bread in the parking lot across the street - delightful. I had to choose from the limited leftovers so I got a ginger cookie, chocolate croissant and a new item which was like bacon and cheese in a muffin. The cookie was a bit firm. A little heat and softness would have made it better. The croissant was top tier. Flaky and delicious. The muffin thing was edible but not delicious. Heating it would have made it 1000 percent better. I didn't finish it so I took it home and heated it up and put jelly on it. It tasted better but I probably won't get it again. I also ordered a salted caramel ______ latte (it was another word that I forgot. It was amazing. Good coffee flavors and well balanced. The staff set helpful and amazing. Medium seating inside no outside seating that I could see. Clean restrooms. I will be back earlier to try some of the other items. read more

No need to travel to France, Boulted Bread has the best croissants you will find and a wide variety of flavors. I was incredibly surprised by how great the croissants tasted. Don't let the line scare you. It goes quickly. A few of us chose this spot for breakfast last week. We couldn't decide what we wanted so we selected several things and shared. Everything was amazing. Except the bread pudding thing. That would've been better warm. The eggyness of it was off putting. I also wish they had a larger variety of coffee drinks to choose from. The tables fill up quickly so people tend to hover waiting for patrons to finish and leave. So if you're ok with either vacating the premises right after you finish or having people give you the side eye for taking your time...that's a decision you'll need to make. Raleigh people tend to be very kind and patient so if you linger with your friends so be it. Definitely get the morning roll and the custard thing. Yum. read more

Met my sweet friend for coffee and ended in a wonderful conversation with strangers. This was my first time at the new location, conveniently located in the Boylan neighborhood, the parking is precarious with tight parking on a gravel lot but very close by. My friend suggested lattes and croissants and both were very delicious. There weren't a ton of tables so we waited a bit and noticed others waiting so we ended up sharing a table which was quite wonderful meeting new friends. Such a great community spot for coffee and maybe a place to work remotely. read more

Finally decided to check this place out after seeing all the hype! Came in on a Wednesday morning at 9:30 and it was super busy. There's a gravel/rock parking lot and street parking. I imagine it's really hard to find parking on the weekend, so if you have parking anxiety- be warned. I got the morning bun and an iced coffee, which were just okay. The morning bun was on the dry side and a little burned on top. I also took a ciabatta loaf home, which I've enjoyed. It has a crusty outside, and soft chewy inside. The place has aesthetic vibes and the staff were super friendly, I can see the appeal. I will likely return and try different items. read more
