It's fun to watch. Customer's start by picking the size, then the type of base -- SubZero has original, low-fat, vegan, sugar-free and keto -- and then one (or more) of 38 flavors, and adding whatever mix-ins (about 38 of them) strike their fancy. The first person will pour the base, add the flavor(s) and the mix-in(s), and then hand it off to the second person who will stir it, and turn on the nitrogen to freeze it. The clouds of steam from that process make it difficult to watch the freezing take place, but it continues to cool after it's turned off and the employee is still stirring. Then, the chosen concoction is scooped out into the the bowl and you're on your way. On this day, it was their first day opening and those two ladies really got a workout with the customers lining up out into the mall. With only two of them working, it was crazy. But they kept their good nature and stayed polite to everyone. Not sure what to expect and opting for simple, I picked a keto base, watched her pour the liquid into a cup, add the scoop of cinnamon and hand it off. I didn't add any of the mix-ins, partly because I wanted simple and at an added cost for each mix-in, wanted to be sure this was something I would like. It was good.
