Rewriting review to suggest improvement. Like most Texas bbq, their beef brisket has a layer of bark that has a concentration of smoke flavor. It's a feature on large center-cut slices I'm use to, but my host and I got slices from the dried tapered ends that were dominated by the bark. We couldn't finish it. Perhaps not serve the ends at current prices. Mix the House and Hot & Sweet sauce. They work better together. read more

Our 1st visit 6-26-26 was better than expected. Staff is friendly, helpful and proud of their craft. We ordered, beans, coleslaw, chili, brisket, 1/2 rack of ribs and burnt ends. The coleslaw is so light and delicious. A great summer side. The beans did not wow us. However, will order again. The chili was a tad greasy. Yet, has a nice spicy flavor. Now, the meats! Went here Monday night in February, been waiting for a while for this one. Things we tried were, the pulled pork, brisket, ribs, potato salad, cole slaw, corn casserole, Texas red chili. PULLED PORK: Bread is not brioche. Should be toasted, doesn't quite stand up to the sandwich. Pull pork was fine. Sweet Hot sauce was the best. House sauce was unremarkable. Gold sauce would do better with wings. BRISKET: Well done and soft to perfection. Delicious! RIBS: Well done, excellent. The ribs were divine. POTATO SALAD: Was unremarkable. COLE SLAW: Very unique. Poppy seed lemon. Not too strong just a hint of lemon. It pairs well either the pull pork sandwich. CORN CASSEROLE: Very good, my wife liked it. TEXAS RED CHILI: Enjoyed it. Took some home for lunch at work. Ordering is kind of wonky, not sure the staff even understands it. Very hospitable and attentive staff. They will get better. You can eat outside, at the bar inside or out, as well as inside dining. I've been to many BBQ's, and at this moment I'd have to say this doesn't stand out above the best. The Mac n Cheese was dry. The ribs were not meaty at all and the brisket was tough. Maybe it was just a bad day. The pecan pie was terrible hardly any pecans and also dry. They ask what sides you want while you're still trying to read the menu on the opposite wall, which makes the whole start of the meal feel rushed and inconvenient. Unfortunately, the food didn't quite make up for the clunky start: * The Meats: Both the sliced brisket and the chopped brisket sandwich were very dry and hard in some spots. The jalapeño cheddar sausage was also dry, though the flavor wasn't bad. * The "Soupy" Burnt Ends: These were swimming in so much sauce they looked like soup, yet somehow the meat was still tough and dry underneath. * The Sides: The Mac and cheese was very good. The brisket chili was disappointing, it tasted burnt and had a hard, crunchy texture. Even the slices of white bread were stale. The Highlights: The BBQ sauce itself is actually very good, and the banana pudding was excellent. The food was very good. We got 3 kinds of meat and it was all very good. The only thing I was surprised about was the heavy membrane found on the back of the ribs had not been peeled off prior to smoking or cooking them. It was very tough and hard to chew. The food is provided cafertia syptyle which is fine but once you go to a traitor as bless there are floor staff that check up to see if there are new drinks you want or anything else. Very nice. First time ever at Caldwell County-ever. The building is beautiful with ample outdoor space. Staff is smiling and welcoming. We opted for the Family of Four bundle. Pork ribs, brisket and pulled pork. Don't ask me which one is better because it's like asking which kid is your favorite. Delicious in their own way. Sauces are equally delicious. Now I will tell you about my Mac and cheese addiction but the corn casserole is so good you may want to lie and tell people it's bad so you can keep it all for yourself. Get your order packed to go so you get small sides if the sauce. You can then sit down (outside) and enjoy yourself. The seating area is on the East side so no glaring hot sun shining on you. There are misting fans and heaters outside so they are ready for the change of seasons. They have a small side room that sears 20 easily for those families looking for a place for dinner. This place is amazing! Not only is the food delicious, but the service is friendly and so helpful! We tried the pulled pork, turkey, ribs, sausage, brisket, mac and cheese, and corn casserole. Everything was delicious, and I would order them all again. My husband and I have tried the famous staple BBQ joints in Texas and Kansas City (Arthur Bryant's, Joe's BBQ, Terry Black's, and on and on), and Caldwell County is in that league. I love that the pits are right there, and there is plenty of seating, which the staff turns over promptly as soon as a party leaves. You can also watch sports at the bar. The staff greeted and guided us to where we needed to go, and they offered us samples of the sides and turkey as we decided on our choices. While we were eating, three different staff members visited our table, including the general manager, to check on us, offer to get us anything we needed, and to chat a little. I wish we lived near here, but we will certainly be back the next time we're in Phoenix. read more

I went here for the first time on a Thursday evening. It was very busy but everything went smoothly and quickly. We had no problem getting a table in a comfortable spot. All the workers were friendly and very helpful. The food line was easy to navigate and the servers were not rushed. The food servings are huge and the drink choices are plentiful. We were so excited to try a new barbecue place in town! But sadly disappointed the Location is definitely not the greatest area, but the restaurant was very pretty and clean on the inside. All of the employees were very friendly spending $100 for a family of five is a little ridiculous! A baked potato with just cheese and sour cream on it was eight dollars, and the potato was hard on the inside. The food doesn't have a super smoked flavor. This review is for Saturday 8 March 2026 for the recently opened Peoria location. A tip of the hat to the city of Peoria for adding a quality resturant like Caldwells. The building was well renovated and has a cool vibe like an updated and modernize shack like you would find in the south. We arriver at a busy time approximately 1230hrs but the line moved efficiently due to how they have it set up. You go through cafeteria style. At the first station you pick your sides then move over about six feet and pick what proteins you want. It was quick and well orchestrated. On to the food. The sides we got were Lemon Poppy Seed Cole Slaw, which was outstanding. Its a dry coleslaw, and I was thinking the lemon was going to be overwhelmingly tart but wasn't. In fact it had a light refreshing taste that helped to disrupt the heavy after taste of BBQ meat. We also got the mustard potato salad which was seasoned well and did not have an overly mustard taste which some people, not me, could possibly find off putting. Further we got the Corn Casserole which we both found to be very good and neither of us had any thing like it before. Lastly we got the bbq beans which were probably the least liked food of the day. They weren't bad just plain tasting especially compared to other BBQ beans around town. Now on to the meat. My companion got the chopped brisket sandwich. The bun had just the right combo of crust and a softly inside to keep sandwich integrity and to sop up juicie and sauce. The meat had a nice bark on it and was soft with the right amount of chewiness so it wasn't sloppy. I tried some of the brisket and agree with the review. I got the burnt ends and two+(I'll explain this in a moment.) Ribs The burnt ends themselves were excellent. Meaty and cooked well. My only "issue" with them, and is based entirely on a personal preference, was the BBQ sauce was on the sweeter side and I like a more tart and savory sauce. Once again that is a purely personal preference. I only mention this so other customers will know this about the sauce. Now about those "two+" ribs. I asked if I could just get a couple of ribs to try and the cutter said sure. He pulled them from the warmer and found in that foil that there were three to he gave me the third one no charge. That is excellent customer service IMO. The ribs were great. Nice flavorful bark on the outside and soft and juicy on the inside. Lastly, and I know this long, a few general observation. The sauces on the table were all good with the mustard based one IMO, standing out. The sweet tea was flvorful and not overly sweet as that sort of tea can be on occasion. Lastly, the service staff and managers circulated through and ask how everything was for us or other patrons and if we needed anything. I sincerely think they were trying to see what was working and what maybe needs review. They were all very friendly and helpful, in fact one of the managers went and got some contrainers for the leftover sides and a box for my companions sandwich half and my left over burnt ends. Thank you for reading my long review rivaling the works of Russian masters, to sum it up this was a great first step in the revitalization of downtown Peoria and its a very good place to catch some well made BBQ. read more

We were looking for a new BBQ place to try and we are so glad we decided to give Caldwell County BBQ a try. We were welcomed at the front door by Brad who gave us an overview of the menu and invited us to ask for a taste of ANYTHING - as many items as we wished. While this might seem like a small thing, folks (me!) often have definite ideas/preferences for their baked beans, coleslaw, chili, pulled pork, BBQ sauce, smoked turkey, burnt ends..... For my taste, the pulled pork, burnt ends and baked beans were cooked perfectly. The baked beans were generously seasoned with pork (looked like maybe some of the pulled pork). I added some jalapeños to kick it up just a notch -- yum! The BBQ sauces on the table deserve a special mention. I tried 2 of the 3 options and found both to have just the right mix of spicy, tart and sweet. Lexi checked in with us as we prepared to order and also as we were finishing up our meal. She insisted we take home samples of all of the BBQ sauces and made suggestions for pairings with our take-home items. Elijah masterfully managed our drink service. He was professional, capable, efficient and personable. My husband and I have tried quite a few BBQ places in the Phoenix area and this is now my top pick! They even do whole smoked turkeys for pick up at Thanksgiving. I look forward to the promised opening of their next restaurant in the Mayo Blvd area in September.
