CantoVI is a wine bar and doesn't offer traditional table service, so sitting at the bar is the way to go. The bar seating was surprisingly comfy, and the atmosphere was romantic and effortlessly laid-back--perfect for a cozy night out. The staff were incredibly friendly, and we absolutely loved our bartender/server. He was attentive, knowledgeable, and made our night feel really personal. We kicked things off with a complimentary sparkling Chardonnay and the Chèvre Chaud, which paired beautifully. Creamy, tangy, and indulgent--just perfect. Next came the Borgata Fries, which quickly became our favorite bite of the night. I ordered a Lambrusco (my all-time favorite red sparkling wine), and my boyfriend went with the cab--both excellent choices. We followed that with the N'duja spicy sausage and the straccetti, both of which were packed with flavor and wonderfully satisfying. Just when we thought the night couldn't get any better, we were surprised with a complimentary lemon sorbet--light, refreshing, and the perfect palate cleanser to end the meal. I live right around the corner from Canto Vi and couldn't wait for something to take over the old dive of a pub that was there before. They turned it into something magical! You won't believe you are in Chatsworth. Our first time at Canto Vi was an unforgettable experience. Brian, the wine expert, guided us through a wine and charcuterie tasting that was nothing short of spectacular! It was an explosion of flavors, and we had a great time with our friends talking about wines and drinking into the evening. The other diners were fun too and we made some new friends. Peter, one of the owners, also owns and runs the liquor store around the corner that I have patronized for over 25 years. He has always been a fantastic source of information on Scotch, Whiskies, and wines. His expertise and passion for fine beverages shine through at Canto Vi. The place is small and quaint, creating a cozy and intimate atmosphere. I understand there are plans to open up the other half of the building for retail sales and more wine tasting. The complete lack of service was a major disappointment, especially given the high prices. Constantly having to get up to order drinks and food disrupted the atmosphere, making it feel more like a self-serve snack stand than a proper restaurant. A staff member mentioned they were going for a speakeasy vibe, but it seems like they've never actually been to one... this was more like a snobby hometown buffet. :( To make matters worse, the pasta, which should have been served steaming hot, was lukewarm. Bread was also cold. While the aesthetics were impressive, the lackluster service and underwhelming food left me disappointed. This attempted "speakeasy" has style to be sure, but no substance. The biggest letdown was the wine, none of the vintages listed on the menu were actually available, which was frustrating. On top of that, there were no waiters, so we had to keep getting up to place our orders at the bar. It definitely took away from the experience.
