Cashier had previously checked that all labels said ingredients were gluten free except the burrito/quesadilla tortillas. Taco tortillas are corn, seasoning labels said gluten free. The meat is cooked quickly on a super-hot grill and loaded into mini-tortillas along with chopped onion, jalapenos, tomatoes, and cilantro, with a squeeze of lime. It's not greasy or gross, I promise!), but if crunchy is not your thing, they also have soft tacos. Everything is made with care and attention to detail. I live in Texas, and I can't find authentic tacos like these! I crave them! (Yep, live in Texas, but crave random ass Missouri tacos. They're that good.) I think a lot of people on here have never had good Mexican food or they're just exaggerating. To say that this place is even remotely good is just being nice. I have been here twice for take out. the first time I got the Asada combo ( but substituted chicken in place of beef) and the second time, I got the Enchilada combo. The tortillas were authentic but the overall taste was okay, nothing to rave about. The rice in the Enchilada combo was actually a little under-done. I get my soda and I go sit down to wait for my food. I wait 10 minutes and they don't have my food. I wait 20, still no food. 30 minutes past and I have been waiting for almost a hour so I go up to the front to ask them if they have my food. We moved into a new house recently, and we pass this restaurant a lot. We decided to try it one night. The parking situation is weird, but there is more parking in the back if you can't find a place in front. You order at the front, and they bring you the food. I was a little disappointed that you don't get salsa with your order because I'm the kind of person who puts salsa on everything, but I just asked for some and I think they charged me $1 for a ton of it so that was fine. I am from San Diego and have literally eaten at hundreds of Mexican restaurants from Santiago Chili, Rio De Janeiro, to Mexico. And I have recently returned from San Diego and I have the pleasure of eating Carne Asada taco's at least six different locations while there in San Diego. I still say that Carlitos Cabo is the Best, better than all of them. First of all when you walk in this place, it is immaculate, you can see the kitchen, it also is immaculate, most restaurants you can't even see the kitchen, scary though at what goes on behind the scenes. Secondly, the prices for this delicious food is very reasonable, and much healthier than other places. Lastly, the food smells Great, the rice has Flavor, the refried beans has Flavor, and of course the Carne Asada taco's have Great Flavor. The others did not have the smell, taste, or Flavor that these had, even though I have had food from Latino restraunts from different countries and the many places in SoCal. The only bad review's that I see on here are people from California; I think they are just hating because they think that the southwest is the only place that can have good, authentic Mexican food. I used to go here all the time during high school but never knew the status of their greatness until I moved away. I've lived in the southwest for over 6 years (California included), where there is plenty of authentic Mexican food. I still have strong cravings for Carlito's 6 Pack and can't find a close substitute in Phoenix. Carlito's is my first stop every time I'm back in town. Great consistency in service and food quality. I've been going to Carlitos for their amazing Carnitas Tacos for over a decade now. I'm sure everything else on the menu is just as good, but this is my go-to! You can taste the freshness from their ingredients and it makes you want seconds. I remember that the 6 pack (my usual) carnitas tacos used to be $5 back in the day. Now, it's $7.99! I understand that over the years, prices will increase, but they've even started charging $0.35 for each small pack of hot sauce, HOT SAUCE! The gentleman there tries to charge for everything. I feel like they're struggling financially and trying to make ends meet. They are a very clean establishment and make the best go-to Mexican food in town, but if you've been going there for some time, you will notice that they've become pretty stingy. I used to go at least once a week, but now I only go when I have a mad craving for some Carnitas Tacos (once a month or two?).
