Both of the papusas I got were fresh, had a good amount cheese, and the veggies were delicious. They do include the salad and tomato sauce on the side. The horchata isn't just a regular rice and water drink. There's a bunch of seeds and toasted rice blended together so you get a real nutty and almost smoke flavour. This is my 2nd favorite kind of Horchata. I've never had chapulines and a family member wanted to try them so I got a side of those as well. They didn't taste like much, mostly salty, sour, crunchy and a toasted flavor. I only ate a few because I started having flashbacks to insect videos on YouTube which have permanently ruined my eyesight. I'll definitely come back when I'm in town.

The Nopal one was cheesy and surprisingly delicious. The jalapeño was chopped finely but lacked flavor. If you know pupusas they are accompanied by Curtido (cabbage pickled slaw) and a red tomato sauce that is drizzled over them. The Curtido and salsa de tomaté at Pupuseria Villanueva are on the spicier side. Jalapeños are added to the Curtido and the tomato sauce is spicy. I recommend a taste test if your not unto spicy food. For takeout it was pretty good but I was not impressed. I will return to sit down and try other food items because I did enjoy the Nopal pupusas and the Curtido.

Rich, complex, packed with flavor, and unlike the typical Mexican food you find just about anywhere. After six days of rafting, camping, and eating along the river, sitting down to a great meal at Red Iguana felt like the perfect return to civilization. Great food, great atmosphere, and a fitting Utah send-off before flying back home to Pennsylvania. If you're visiting Salt Lake City, especially if you've never really explored mole before, Red Iguana is absolutely worth the stop. I know it'll be on my list the next time I'm in town.
