We order from this place about once a month. Their carnitas (pork) and costillitas (beef ribs) absolutely delicious. The bbq sauce they make, my goodness that is so good. I usually do not care for bbq sauce, but this place has the best! I want to put that ish on everything that's how good it is. The restaurant itself well I never really see too many people eating there. It's extremely hot not sure why and with the summer on us it's very unpleasant to sit and sweat while eating. Yes prices have gone up that's understandable, but when you start to cut corners and don't offer tortillas and try to nickel and dime everything it's the beginning of loosing business. Maybe not now, but eventually.... Not only that, but I bought refried beans and instead of getting them in the normal styrofoam cup that holds a lot they give it to me in a plastic cup Chinese restaurants serve their wonton soup in!! I came in with family as they wanted to try this place. I was pleasantly surprised at how good it was! I'm always skeptical of Mexican food. I ordered their super tacos plate, which is something I would recommend. I ordered the carnitas, Al pastor and chorizo. Personally, the carnitas was the best tasting taco. The family ordered chicharrón and they really enjoyed it. Other family members ordered asada tacos. They said that they liked it, but it wasn't something they would get again as the carnitas was better tasting. A plate of BBQ ribs was ordered as well. They enjoyed the plate, however, they also ordered a super taco on the side. After that taco, they said that they would recommend the super tacos over the BBQ ribs. Even though the meat was super tender. The parking lot is small, and so is the inside. When we arrived, there wasn't many people eating in, however, there were several orders to go. Living in Modesto for a while and never really had a "go to" Taqueria. Either their consistency lacks, they don't take the time to do make authentic Mexican Food (which takes time and love) so, the end product is rushed. Our tacos were carnitas, grilled chicken and al pastor. FINALLY a place that does carnitas right! FINALLY a place that does al pastor right! And, FINALLY a place that does chicken tacos right! My wife is extremely picky and will only eat grilled chicken tacos. If they don't meet her approval (absolutely must be grilled not boiled chicken) she won't eat it. She said, they were the best chicken tacos she's had in Modesto. I on the other hand am extremely picky about how carnitas and al pastor is prepared. If the al pastor isn't roasting on a spit I won't order it. Best damn al pastor I have had in a long time. And that brings me to the carnitas. Well, with carnitas in your restaurant's name you better come correct. And the staff at Carnitas El Bajio do not disappoint. The carnitas has a nice crisp golden brown exterior and a moist and tender interior that is full of flavor. We have been getting carnitas to go from the old location for years now. Tried the new location a while ago and this place has the best carnitas in Modesto. The new restaurant has a great vibe, well decorated, big tvs and the service is awesome. We ordered this weekend catering from them for our daughters wedding party which we hosted at the house. I had too many drinks so forgot to take a picture but they did an amazing job. They were in time, set up was efficient and the service was fantastic. The hand made tortillas, chips and the carnitas where Fire!!! The family and guests were happy with the food, mind you that for years at family parties we have backyard carnitas so the fact they liked them is a true compliment to this place. Customer service was excellent and the food was on point. I wanted to try the carnitas since it seems that is what they're known for, but they do have other items in them and the menu. Tacos al pastor cooked on a spindle topped with pineapple and the perfect amount of condiments If you have not tried pastor cooked on a spindle, definitely do your taste buds a favor and give it a try (pastor is simply not possible in a pan or griddle). Essentially it is slow cooked pork shoulder seasoned with Mexican adobo which is a pastelike marinade of chilies, cinnamon, garlic, herbs, vinegar, and other spices. So, our food was fresh, quality was excellent, and the price point was definitely worth the visit. Considering this is a taqueria the bbq tri tip was awesomely tender and they even made tri tip tacos for us. The service was great, the inside of the taqueria was clean and maintained well. The restrooms were clean and fully stocked which is important hygiene in light of current times. El bajio is a hidden gem in north Modesto, definitely recommend this place for an authentic taqueria experience. *This was a lunchtime visit. read more

Our company has been using Guillermo and his staff to cater our annual company picnic for several years now and the turnout gets better every year since he started catering. There is a wide variety of food selection which satisfies all of our employees and their families. The service is outstanding and the employees look forward to this every year. We've even used them for small catering jobs throughout the year when we want to recognize our employees with a pop up taco and quesadilla stand after work for a few hours.
