That's how you know the locals are protecting a secret. I've only been in Midland for about three months, but this is the most authentic Mexican food I've had since I've been here. The first time I ordered the lunch fajitas. They were good enough that the owner walked over and said, "Next time, get the chile verde." That's a dangerous level of confidence, but I respected it. So I came back with a buddy. Ordered the chile verde. Pulled off a piece of the homemade tortilla, hit it with some beans and chile verde, took one bite... and me and my friend just looked at each other and smiled. Nobody said a word. We just looked at each other like, "Grandma? Is that you?!" The place is dimly lit and cozy. The TVs don't work, but honestly you don't even notice. People are just eating, talking, and enjoying their meal. They've got community tables in the middle, plenty of seating, some of the best salsa and chips I've had, and the food comes out hot and fast. If you're on a lunch break, they'll have you in and out, but it never feels rushed. The whole experience feels like your grandma cooked dinner, your grandpa's outside working but comes in to check on everyone, and your beautiful wife brings you a plate with a smile. For about 30 minutes, life is exactly how it's supposed to be. Your bills, your job, and every bad decision you've ever made stop existing.
