The steakhouse is located inside the Hope Lodge. Very easy to find - I dined from this restaurant twice during my stay in January 2026 The first time was for lunch- we did a to go order from the bar menu. My group ordered the popcorn shrimp that came with fries for $13, bone in wings with fries, onion rings, chicken tenders and fries. Once we got back to the room I noticed I received a French Onion soup instead of onion rings. ( this soup could've just been boiled water. There was ZERO flavor in the broth). The popcorn shrimp that was listed as $13 was on the receipt for $16. I was on a birthday trip & did not want to make things awkward so we ate what we received. Later on for dinner- we kept our reservations at the Steakhouse ( this was planned well in advance) I ordered an espresso martini and it was brought to the table in a MARGARITA glass. No explanation from the server or the option to switch to a different drink. Before she left the table I asked if they ran out of martini glasses - that's when she acknowledged that yes they did. (( this was shocking because it was a winter Sunday evening in Cortland- the restaurant was not packed nor busy)). That was off putting however I didn't fuss. I started to drink it and realized it was super sweet- even though I didn't get the baileys with it. It was overly done with simple syrup or it was a batched poorly. I ordered a mule instead. The table ordered: crab cake with fries, a pasta dish, a steak, the special carrots of the night and the short rib. We all agreed that the food needed seasoning..and lots of it. The best part of the whole meal was the fries . The server also forgot to ring in the carrots so we had to remind her then wait for her. Nice enough lady but needs more customer service training. We were so underwhelmed with the meal that we skipped their dessert and did not even get a second round of drinks. The lodge itself is beautiful and has that high end cabin in the wood vibes. Visually pleasing but would definitely skip Carvers Steakhouse & stick with Trax Pub & Grille! read more

Woof! For a high end restaurant our food was disappointing!!! We had calamari which was great, the side salad was warm, the garlic mashed potatoes literally had full cloves a garlic tucked in them - not chopped up and mixed but full cloves- talk about instant stink breath! French fries looked like they were going to be amazing but they were undercooked and soggy- so I'm guessing the oil was too low a temperature. Let's talk about the meat.... Gag a maggot! I have no problem spending money on a good meal but this was we all ordered steak (6 ribeyes and 1 porterhouse) all asked for medium rare and they were all well cooked! No pink at all! First off, our server Celeste was excellent and the hosts were friendly! This restaurant is located in the Hope Lake Lodge Ski Resort and was recommended to us by family members. We were pretty disappointed in the quality of food considering how pricey the bill was. The restaurant was almost completely empty which should have been a clue as to what our meal would be like. I ordered the filet with scallops and while the steak was cooked beautifully and tasted amazing, the scallops were fishy. My husband ordered the ribeye and did not like that it was sitting in a pool of butter. The mushrooms and onions on top were wet and not cooked appropriately. The potatoes we ordered to share were quite dry. I will say the brown sugar butter that came with the bread was delicious! Overall, we felt that the meal was not worth what we paid. This is my 2nd time here and hard to believe it could be possible, but the service was worse! Today we were a lunch party of 3 with only one other table of 5 that already had their food in the whole place. We were seated and then it took 15 mins for server to even come over to table and then all she did was drop off water and tell us she'd be back. No drink order taken, no ask if we were ready (we were since we had been staring at the pretty limited menu for 15 mins already!). Waited another 5 mins and then just got up and left! Worse was that she wasn't alone- there was another server who was handling that ONE other table. Pretty sure server was the same terribly slow and inattentive one we had last time. My family and I and went here for daughter's graduation dinner . Probably our 5th or 6th time at this restaurant. We had a terrible experience here. My wife never received her meal, and when we finally flagged someone down, a manager came over--not to apologize, but to tell us with an attitude that it had been sent to the wrong table (how is that our issue) That they are very busy. The place was half empty. No effort to make it right other than taking her food off the bill, no courtesy. Just rude and dismissive service from start to finish. We won't be coming back. Then she add 18%. Then I said why didn't you let me make my own determination. She said with a party of 6 we are subjected to Tip being added at 18%. I said great we are a party of five. She looked at me handed me my receipt & card and literally walked away. The manager needs to go back to manager school and learn to be a better person. The next day another manager found me eating breakfast (not from Carvers) and totally apologized for the service issue last night. This was one of the only two restaurants that was open at the resort so we decided to give it a try. We had dinner reservations at 7:45 PM. Apparently, it was the earliest time we could get on a Friday night. We decided to walk down at 7:30 to see if we could get seated and to our surprise we got seated right away. However, no one came to give us water or introduce themselves for 45 minutes while we were sitting there and there were still plenty of open tables so it wasn't like the restaurant was fully booked. Service was terrible - probably due to staffing issues and the reason why they gave us such a late reservation but I didn't expect to wait that long. Our kids were asking if the food was almost ready and we hadn't even ordered. By the time the waitress came around, we ordered drinks and food all at once. I made sure to ask for the kids food to come out first and good thing I did because our food took a while to come out too. Besides service being terrible, the food that came out was delicious! My husband ordered an aged sirloin from their special menu and it was delicious but quite pricey. $65 for just the sirloin. He got a side of baked potatoes but he said it wasn't the best. Our kids got the linguini in marinara and I ordered the tenderloin tips. The ambiance was nice and made you feel like you're in a fancy place (which it was supposed to be) but for the price we paid, service didn't match. read more

We come here all the time and sit at the bar, it was closer to 10 and we had Tara as our bartender and she was wonderful, very fast, very attentive and for it being so close to close she was so kind and didn't make us feel rushed one bit. Did dinner here on 9/6/24. Shareables we ordered were very good. Two orders of Salmon were both over cooked. My $60 medium rare Porterhouse was served medium well. I couldn't eat it. They brought out another one which was still a full medium to medium plus. I could only eat half. Also, the entrees were served immediately after our dinner salads. This establishment gets 3 stars for their service and environment only! The lobster " bisque" wasn't bisque at all. It wasn't thick at all. Not to mention tasteless with very little lobster in it. Expensive doesn't mean good. First, the signage to get to Carvers is very unclear. This is located within Hope Lake Lodge, but the arrows on the directional signs seem to point back by the water park. If you are going, know that the steakhouse is right inside the main lodge entrance. I will say that the staff here are incredibly kind in their customer relations. Plus the decor is gorgeous. We expected a lovely dinner. However, the food and the timing of the food was not great. My steak was horribly salty. Then it was very clear the waitress forgot to place the order of our sides and the bread that comes with the meal. When she got to the table with our steaks she asked if we wanted anything else and I asked about the sides we ordered. She then pretended they were about to come out she just needed to hop back in the kitchen. However, they didn't come. She came back to say just thirty seconds more, and we waited far longer. Then when they finally came out we were already well past done with our steaks. We would have preferred to skip the sides at that point. They weren't even good. The seasonal vegetable was plain boiled broccoli, without any real culinary skill added to it. The mashed potatoes tasted like they were from dried flakes. Luckily the manager picked up on our disappointment and did compensate the sides that came out late, which I really appreciated. (If she hadn't this would have been a 2 star experience). read more

Ok so.... I walked in with a couple coworkers trying to take them to lunch. The initial service was laughable, nobody else was there and one person was the host, server and bartender. His ambition was pretty well non existent and his attention was on his phone.... After about ten minutes we were served our beverages and after I found menus for us on a table so we could get food, we put in our order and we're excited! And then, about ten minutes later the server returned to inform us that the cook just left because it was slow.... They were not sure when he left or when/if he was coming back. So there was nobody to cook our food. At this point it was too late to find somewhere else, lunch break is only so long... the rest of the day was long and filled with grumbling stomachs and employees. The good--the restaurant decor was lovely and our server was very pleasant and efficient. The not-so-good--the Chef needs to wake up to the number of reviews that say the food is overly salted. Tenderloin tips were nearly inedible because the sauce tasted only of salt. Others have complained about excess salt... this is unhealthy. This practice is driving customers away. Steak was only ok: the NY Strip had a large piece of gristle that hadn't been trimmed. Ham special was pretty good. Other meals--vodka sauce and seafood fra diavolo were nothing to write home about. We had a large family gathering at Carvers. We were staying at the Lodge. Dinner was served by Tyler, one of the best waiters I have ever had. Everything was perfectly cooked. Special requests done with a smile as we had mother with two young children who were having dinner in the room.
