I could only eat about half of it so I took the rest home for dinner I added tomatoes and bacon to my sandwich, which was a little oily from the pesto despite my not being able to taste it. The place is cute, the stairs at the entrance are lethal, so take care going in and out. There is a small seating area in front and no lot, but room to park on the street. This place has very impressive Yelps and after going it's not hard to understand why. Grilled cheese everyone's favorite snack feels like a niche type of food and this place nails it. I got the Classic Grilled cheese and dipped it of course in some savory tomato soup. Happened to go on national grilled cheese day so they had a $5 special as well as the food truck out front which you can catch at various places. Service was quick and friendly and they even have a nice selection of cheeses you can sample and purchase on the side of the register. Small shop but incredibly busy! Solid menu, we had the Classic and a Bac-ish grilled cheese with a side of tomato sauce. It was really fresh and paired well with everything. You could really taste all of the ingredients and the heat from the hot pepper and onion relish were not overwhelming where you could really enjoy the flavors. I was devastated when the Caseus in New Haven closed. It was a regular stop for me and I was always on the wrong side of the state to go to the food truck other than a couple of lucky strikes. When they opened in my hometown (even though I don't live there anymore) I was stoked. A new market for them, a whole new legion of fans. Talk about delicious! Hubs and I stopped in today for a quick lunch. We met Christopher one of the owners who is super sweet - we love great customer service! We decided to go with the Classic and the Cuban. I'm gonna be honest... the classic was definitely the best grilled cheese I've ever had! It was the perfect cheese to bread ratio with a buttery crust, and let's not forget the creamy yet tangy tomato soup I got on the side for dipping. Yummo! The Cuban was really tasty as well! Next time I would probably add some type of hot pepper just to give it a little kick. We grabbed some specialty chips and a chunky brown butter chocolate chip cookie that I haven't tasted yet, but can't wait to sink my teeth into later tonight! Honestly, I don't go seeking grilled cheese. I just don't. Why? I'd prefer to get my calories and carbs from brunch and drinks and wings. After getting recommendations, I ordered the Classic Combo, grilled cheese with six different cheeses (YUM) and a side of tomato soup, very thick and rich. Great for dunking my sandwich in. As they said "Not your momma's grilled cheese". The sourdough bread made the sandwich absolutely amazing. The surprise little container of whole grain mustard and cornichons to go with my sandwich were appreciated. They also carry very different flavored potato chips along with many choices of beverages. I was reading an article promoting new and opening businesses and there grand opening was today. My kids and I traveled to taste there famous grilled cheese they serve on there food trucks. We all ordered the Classic Grilled Cheese which is a mix or Provolone, Swiss, Gruyère, Gouda, Sharp Cheddar and Munster cheese. The grilled cheese was really delicious but for me it was too much cheese but that's what a grilled cheese is all about. It had the right texture and flavors with buttery, golden, crunchy edges and the bread they used was just right to mellow with all the cheeses. I've only had anything comparable (even close) in a café in Paris. Wallingford is much closer! I had the first item on the menu in the store (the classic I think). I'm going to promise and try every sandwich on the list. PS the invent your own sandwich looks compelling but I'll try the tried and true first. - The uncluttered store with additional excellent foods and cheeses. I bought a cookie and some bread pudding. Again, absolutely world class. I also really liked how there were tables outside, the food is served in classy little boxes that make sure the food stays warm but doesn't get soggy. Details matter. This place could have found a home in a half dozen international cities however we are lucky to have Caseus in Wallingford. I plan on making this at least a monthly stop to see what the chef/owner comes up with next. If I lived closer, it'd be more often. I am ecstatic that cheese masters Caseus has a brick and mortar again. They used to have a beloved place in New Haven, and have been operating out of food trucks for a while now. This time, the storefront is in Wallingford, CT, which is really having a moment food and drink-wise. The Caseus grilled cheese technique and the finished product are off the charts. For my visit, I jumped at that French Onion. They start with a blend of shedded gruyere, comte and other Swiss Cheese. They put it on top of French sourdough and they allow the cheese to get melty before they cap it with the other piece of bread. They also grilled the pre-cooked onions to get them hot again. The grilled cheese had perfect color, texture and taste. Fantastic! Caseus also sells cheese and other gourmet products. I sampled and bought a few cheeses for home, including old favorites like Aged Gruyere, Comte, Triple Cream and Roquefort. All top notch versions. Chris from Caseus also recommend a Percorino Tartufo, which was a peppery Sheep's Milk cheese with awesome truffle flavor. A new favorite for sure. This place is great. Such amazing customer service too. We went for cheese and grilled cheese. Cute little shop in there too. I got some jalapeño jam and my boyfriend got a nice cutting board. Chef making the grilled cheese let us sample cheese before making our selections which was so nice. Arethusa doesn't do that anymore and they used to which stinks. I bought two kinds of cheese I loved it so much. Grilled cheese was unbelievable. I didn't even know that I liked tomato soup and I bought a cup because I heard so much about it and wow was that good. I got the regular/plain grilled cheese because it sounded so good. Next time I come I want to try the Cuban. I drove from Mystic on this rainy Saturday to try Caseus, because grilled cheese is one of my favorite foods. All the grilled cheese options looked excellent and I ordered the "Pickle Pickle". The flavor combination of sour and salty is quite balanced. The grilled cheese chef (whose name I am blocking on) is a master of his craft. The bread was crunchy and not burnt and all the cheese was perfectly melted. All the flavors and textures melded perfectly. Additionally, Natalie, who tends the shop, is an enjoyable conversationalist. It was fun talking to her whilst my sandwich was being constructed and completed. Caseus also has an excellent selection of cheeses and smoked meats for sale. They also make their own cookies. I bought two brown butter salted chocolate chip cookies to bring home. I have eaten at the Caseus Food Truck a few times in the past, so when I heard they had opened a storefront in my hometown, I had to try it! The store itself is pretty cool, located on the first floor of what seems to be a two-family house on Center St. in Wallingford. This location was formerly Brunetti's Luncheonette, a well-known breakfast spot in town. At Caseus Provisions, you can purchase a variety of cheeses as well as some grocery items like crackers, cookies, jelly/jams, pasta, etc. They also have a new homemade mac & cheese which I am very excited to try! They offer a small menu of about six different grilled cheese sandwiches, as well as "build your own" toppings and their famous tomato soup. There isn't any seating inside, but they do have a few tables outside near the sidewalk where you can sit and eat. I opted for "The Classic" grilled cheese, which includes a mix of SIX different cheeses. It was so good! The bread was crispy, and the cheese was melted perfectly. It comes with a small side of mini pickles and mustard, which were very sour but good. I also ordered the tomato soup, which you MUST dunk the grilled cheese into for the full experience. Amazing combination! The service was very good! The staff (who I think were the owners) were very nice, and my order was ready in just a few minutes. We have been familiar with the Crispy Melty food truck for a few years, so we were really excited when we learned that they opened a new brick-and-mortar in Wallingford! The space is definitely on the smaller side, but despite being busy, we were able to snag one of the tables outside. I was glad that there's a least a little bit of an option to dine there even though they're takeout only since we live about a half hour away. I don't know where else to find an as-close-to-authentic English-style grilled cheese in all of New England. I expected something delicious from all these Yelp reviews when I stopped while passing through from points south to home up north, but didn't expect to feel like I was suddenly road-tripping along the Cornish coast. So well done. I had a simple grilled onion and cheese and the only thing I would have asked for is a bit larger a side of mustard to dip, since the sandwich was so generously proportioned. Cracking lunch, wish this style of grilled cheese (perfect sourdough, perfect cheese blend, crispy and crackly, with the hugely important side of mustard or hot sauce and cornichons/pickled veg) was more common. When my husband read out loud that Caseus was not only opening a storefront again but right IN OUR HOMETOWN we practically cried in joy! Their original New Haven location was known far and wide, but my husband (then college boyfriend) and I never got a chance to go prior to their closing, which had devastated many. The location is small, take out only, and I don't think you can park in back. Besides a plethora of amazing cheese, they have an great selection or gormet and specialty items, such as pasta, honey, and chocolate, as well as anything you could want for a really nice charcuterie board. As for the actual grilled cheeses, OH MY! SO GOOD! My husband got the classic and I opted for the french onion, but as I looked at the menu I really wanted to try a meat. When inquiring about a meat suggestion, the gentleman was very helpful and suggested bacon - good call! It was beyond delicious! Everything about both grilled cheeses was perfection. The bread to cheese ratio was on point! A common complaint I have with grilled cheeses is the bread being too thick and cutting up the roof of my mouth, but no such issues there! The sandwichs came with a side of Dijon mustard with french pickles that was also a perfect condiment addition.
