They weren't kidding when they said "best bagels in Austin" had an amazing bagel with cream cheese, lox, tomato, onion and capers, and I felt like I was back in NYC! So good!! And the baked goods are also amazing, you can't go wrong with anything but I really loved the "Phoebe's Rugelach" melted in my mouth and made my day! Also the Kombucha, I don't like Kombucha but this was great! Tasted like sparking cider, yum! Also the staff is super friendly, warm, and has the best recommendations and a true honest opinion about all their goods. The owner Phoebe is so nice! Props to her and her fiancé for opening such a great establishment, I hope they expand and come to LA! Tbh I was firstly attracted by the cute icon of this place and could finally have a chance to try it out. My friend and I ordered kombucha, berry rugalech and focaccia toast. Sorry I didn't post the focaccia toast because it tasted so good that I finished it before I realized... you can apparently see how fresh their tomatoes and avocados are! The focaccia was epic! Awesome little bagel shop/bakery/coffee shop with fermented goods, like kombucha and kimchi. I loved the lemon/chocolate black and white cookie, the massive sourdough cinnamon bun, and of course the bagels with cream cheese. I wish the bagel with cream cheese was a little more toasted, but it was still delicious. They also have bialys! I got some vegan kimchi to go and can't wait to come back. This review is exclusively for the Whole Wheat Country Loaf. As a baker, and general sourdough aficionado, I'm always on the look out for new bakeries in the area. I like to test my amateur breads against the best, to see how I can improve and to just have delicious bread. Now, as to the Whole Wheat Country Loaf--- it was certainly tasty and overall pretty good, using high quality grain. However, I couldn't help but think that for the price ($12), this was not top drawer. For that, I'm expecting Tartine level bread, with amazing oven rise, fluffy crumb structure with those Instagram-worthy holes. This wasn't quite there for me. The bread was a bit dense, and a bit flat. It was still a nice artisan sourdough loaf that tasted great, but the hype was just a tad high for me. I'm happy to give Casper another shot soon, and I'm definitely interesed in trying their other products. The bagels looked pretty tasty. read more

Best goodies in town, so freaking yummy I can't even tell you. The focaccia with turmeric sauerkraut ($7) is to die for and I will always get some to go! All their bagels are sourdough and come in a variety of flavors like poppy, plain, sesame, jalapeño, everything, etc. I got the lox bagel ($14) and it was the best I've had in town as it has the perfect amount of chew! Highly recommend everything they sell here, from baked goods to kombuchas. What a find at Republic Square saturday market. The most fabulous sourdough creations. The bagel is Montreal style so dense, looks wood fired, and is awesome. The focaccia was also incredible. Stumbled upon this place while walking to the coffee shop next door & I am glad we did! Decided to stop in and grab a sandwich & it didn't disappoint! The sandwich was huge and came with some chips & a pickle which was yummy. The sandwich bread was... incredible! Soft but crunchy and just made the whole sandwich! We didn't get any other breads but we plan to this holiday season! The breads on display all looked so good, I feel like you couldn't go wrong with any of them! The hits keep coming at CF! I'm working my way through the menu and have yet to be disappointed. The egg salad sandwich is perfectly creamy and the housemade sourdough (all the breads, really, are to die for). I wish the red onions were pickled instead of raw, but that's my only note. The bagels here are fresh and delicious! I am a bit of a bagel snob coming from New York and it's hard to find a good bagel in Austin. The bagels are small but they are fresh! I did not have to order ahead and the in person service was very quick. I haven't tried the bakery section but the breads looked delicious when i was browsing the options! Inside is super cute with a few seating options with a relaxing cafe vibe. There's also outdoor seating as well and a ton of parking. My husband and I are Jewish, and love sourdough baking at home, so we thought we came up on a super niche bakery finding Casper. Turns out when we arrived, it was super busy and a line out the door, so Casper is a lot more than niche, it's a super popular, well loved bakery by so many. We chatted with some regulars in line, and heard just how well loved they are. Like someone else shared, the lox bagel had such a perfect ratio of fresh ingredients, and was our favorite. The caramelized onion bialys bagel and chocolate rugelach was amazing, too. I love the intention that is put into the ingredients, as well as the branding. We will definitely be back. read more

Really enjoyed the bagel//breads! Was excited to try this place and got a jalapeño bagel with vegan cream cheese. The house made kimchi and sauerkraut was really tasty, I recommend at least trying it on the side. The focaccia with grilled onions was good and huge. Place is a bit pricey, but worth trying. Belated review from last Sunday when we hauled across town to try this place out after hearing whisperings about a "really good" bagel place in Austin. We'll be the judge of that! We ordered a plain bagel with cream cheese and the tuna melt, as well as a berry rugelach and the miso brownie. The bagel, we think, was more Montreal style and we found it to be...good. Put it this way: if you're from NY, you won't complain, but you won't find it to be that different from Nervous Charlie's or the like. We really enjoyed the tuna melt, especially since the kimchi added the perfect addition of sour and funk (how has nobody thought of this before?? Or maybe they already have?). The rugelach was standard, but we loved the miso brownie, though have no idea how/where the miso was incorporated. The space was clean, open, airy, and had a nice chill vibe. Service was friendly and the wait wasn't too long. Honestly, our main complaint here is value: we're happy to pay a markup for good quality, but this place took it to another level by with overcharging. Six bucks plus for a bagel with cream cheese in Texas? Y'all need to rethink and recheck those numbers. 3.5 stars, rounding up, and we wish them well. We might go again if we're in the area, but probably wouldn't make a trip for it. read more

Happiness in a sandwich... or bagel... or glass of booch! Everything we tried at Casper Fermentables tasted like it was made with TLC and intention. If it was physically and financially possible to eat here for breakfast + lunch every Thursday- Sunday, you bet your fermented bubbles I would. The attention to detail down to the pickled rainbow carrot that came on the side with my (delicious!) tuna salad sando is admirable. The bread was perfection. My husband's pizza bagel was hands down the best bagel I've had in Austin, topped with simple fresh tomato sauce, fresh mozz and fresh basil! I will dream about their ruglach, and maybe one day I'll even learn how to pronounce it correctly. The holy basil kombucha on tap was so lovely and definitely full of pre/probiotics bc it was bubbling out of my cup. I was not mad, I was impressed. They had a few other flavors of kombucha that all sounded great. The turmeric is next on my list! We brought home a brownie, a black and white cookie, and a loaf of rosemary olive focaccia. At this time all have been devoured, and I'm happy to report, they were all excellent! I'm sure you can tell by my fan girl post that I will be back here many many times. This place is okay. The menu is limited with only 2 cream cheese choices- plain or scallion. I found the everything bagel with scallion cream cheese lacked flavor and they skimp on the schmear. However, the Lox Bagel is a solid 10/10. I also tried the tuna salad on a toasted everything bagel. The tuna salad itself was delicious, but the bagels weren't all that. They're a bit thin for my liking. The bagels are presented open face, which I find a bit odd. I'll be back to try the caprese sandwich which is only served for lunch from (11a-2pm) because I can't find focaccia bread anywhere in Austin, so I'm thoroughly looking forward to it. On a mission for a bagel adventure, we arrived at Casper Fermentables. Casper Fermentables is quaint, local bagel shop with Korean and jewish ancestral traditions. It's also worth noting their on tap kombucha and fresh fermented vegetables! Appealed by the sound of smoked salmon, we both got the smoked salmon lox bagel- one on an everything bagel and one on a sesame bagel. The sesame seed bagel was perfectly toasted to a golden crispness that crunched delightfully with each bite. The everything bagel delivered a similarly sublime experience. Its crust was speckled with a medley of seeds and spices, offering a savory explosion with every bite. Both bagels were crisp, but perhaps a bit more softness to the inner insides of the bagel would have given it the perfect melt. Both bagels smothered in a generous layer of velvety cream cheese, provided the ideal base for the cascade of toppings that followed. Smoky, tender slices of salmon draped elegantly over the bagel, their rich flavor balanced by the fresh burst of dill. The briny capers offered a salty contrast that tied everything together. Juicy tomatoes and thinly sliced red onions perched on top (on only one of the bagels by request), adding a burst of color and a sweet, tangy note that rounded out the symphony of flavors. Both bagels were masterpieces in their own right, each bite delivering a delightful balance of textures and flavors.
