Despite how busy it was, the bartender was knowledgeable, friendly, and attentive. I never felt rushed or like I was a bother, which really stood out. It was liquidy instead of creamy and missing the richness of the cheese. And third, the pancetta was very odd. The pieces were way too big, and several were more like steak than pancetta. I also think an Italian restaurant that considers itself to be upscale should be using guanciale for their carbonara, but that's just a personal opinion.
