The wife and I were in the neighborhood and decided Le Pas Sage looked promising. Oh, how right we were! Le Pas Sage served up traditional French bistro fare made with fresh ingredients and a modern, upscale presentation in a very casual setting. It was located on what can only be described as a fairly busy but seedy side street/alley replete with several sex shops up and down the street from it. However, we weren't deterred by the colorful neighborhood, which only added to quirky charm of our experience. The weather was perfect, so we sat at one of its handful of tables set up outside. The menu was small, but listed some interesting, if not delicious, offerings. We decided to go the 3-course prix fixe route (39€/person). Our meal started off with a delicious amuse (a small bisque whose ingredients I don't recall). I had the Tartare de bœuf topped with foie gras and fresh herbs. The foie gras atop the tartare was a beautifully sinful indulgence, but the brightly colored fresh herbs gave the dish a wonderful flavor, aromatic, and color contrast that put it over the top. The wife and I decided on the Côte de bœuf (12€ supplement/person) for our main course. Talk about a meat-lovers wet dream! It was over 2 lbs of beefy goodness served on a cutting board with grilled tomatoes and also bone marrow. I love marrow! The rib steak was prepared bone-in (the bone was removed for service), nicely seasoned, and cooked perfectly to the Chef's recommended medium rare. We accompanied our food with a 2011 Jean-Luc Colombo Cornas Les Terres Brulees, a full-bodied syrah that complemented the juicy, meaty Côte de bœuf amazingly well. For dessert, I had the Soupe de fruits, a pleasant, not too sweet, end to my meal with its assortment of fruits and sorbet served in a fruit gelée. Le Pas Sage served up a tremendous meal! Considering what we had and its quality beginning-to-end, it was also surprisingly reasonable. Service was friendly and solid throughout. Le Pas Sage was truly enjoyable and a place I would gladly return.

I had the spinach and mushroom risotto, and my wife had the fish of the day, sea bass. Both dishes were very good. The table next to us noshed on frog legs as their starter (entree in France)... so I had an order after my risotto. They were flavorful, but a lot of work for a tiny bit of meat. Make sure you visit the location on 34 Gassendi Street. When I realized the mistake I phoned the correct restaurant and apologized letting them know we'd be 30 minutes late and to request they hold our table. They obliged and stated that it's a common occurrence. When we arrived at the restaurant the first person to welcome us was Chef Sebastien Dagoneau. Chef and his team offer "neo-bistro" French cuisine around products grown with respect for the seasons and the environment, always looking for creativity and beautiful taste sensations. The closest comparison I can think of is the American "farm to table". Restaurants in the USA that focus on local grown and raised within season ingredients. The inside of the restaurant is quite tight. Be prepared to be close to your neighbors, scoot past other guests to get to your table. But once seated you feel like you are in a little community of fellow diners. After reviewing the menu for wine we ordered a bottle of Laurent-Perrier Cuvee Rose. It was refreshing and the perfect wine to toast a dinner in Paris. The kitchen sent over a delightful offering of a chickpea flat bread, Socca, cut into strips. It was a fantastic companion to the bright champagne. For my first dish I ordered the Foie Gras with Granny Smith apples and a hibiscus, apple, and ginger compote. The creamy and fatty foie gras paired with the champagne bubbles. I strongly believe that Foie Gras and champagne are a must while in Paris. For the main dish my wife and I decided to share the Rib of Beef and potatoes for two people. Shortly after ordering Chef Sebastien reappeared with the Rib of Beef. It was the largest steak I've ever seen. Definitely big enough for more than two people. With some serious beef coming it was time to order a bottle of red wine. Looking through the list something caught my eye. Domaine Trapet - Gevrey-Cfhambertin 2018 - Red Wine. Chef Sebastien took my request and smiled ear to ear. He decanted the wine, smelled the dark red juice, looked at me with a smile and nodded. It was going to be the perfect companion to the beef. The wine punched raspberry, cherry, leather, oak, vanilla. Everything I look for in a fantastic French red. Compelled to have others experience this amazing wine I offered some to the table next to us. A group of locals. Chef Sebastien saw me do so and smile then proceeded to tell the table it was a very nice wine. The table shared the glass and we struck up a conversation about Paris, America, wine and food. A fun exchange over fantastic food and wine. Something we all can agree on. The rib of beef arrived. It was so big it barely fit on the serving tray. The cook of the steak leaned a little closer to rare than medium. But the quality and taste of the steak was of such quality it didn't matter. The roasted potato accompanying the steak were perfectly roasted and rich and creamy. For desert we ordered one of each for the table. The Exotic Fruits - fresh fruit on a creamy bed of rice pudding, meringue shards and mango sorbet. Crispy Cabbage - choux pastry filled with bourbon vanilla cream and a caramel sauce. St Domingo Chocolate - souffle with chocolate and ginger ganache and diced roasted pear. One of the things that we admire about French deserts, besides being the upper echelon of pastry skills, is the lower level of sugar and sweetness. Often in America deserts can be overly sweet. We found the deserts at Le Cornichon to be just the right amount of sweet. To accompany our deserts Chef Sebastien sent over some fortified wine by Domaine Des Schistes - maury la cerisale. A bold and sweet desert wine with cherry, dark berries and chocolate notes. A lovely way to finish out the evening. The wine had many characteristics of a port but much more approachable. It was a wine you wanted to keep enjoying through nose and sipping while enjoying conversation and taking in the environment of the French bistro. If you find yourself in Paris I highly recommend Chef Sebastiens Le Cornichon. It is by far the best meal I've ever had in Paris. When my wife and I return we will definitely be dining there again.

So I called to let them know we would be late, "no problem, we will wait for you" was the response, putting us at ease. As we were seated the first thing I noticed was a plate of pata negra, that lovely black footed Iberico ham from Spain, sliced perfectly thin. They also had ceps that evening, the French porcini, simply pan roasted with herbs, shallots and a nice jus. For plats, my wife had the skate, perfectly moist thanks to being left on its cartilage, accompanied with fresh haricot verts and a nice sauce. For me I kept with my pig theme, with a lovely, perfectly cooked, bone in black footed iberico pig pork chop with white beans and chorizo and lovely jus. I don't usually order pork in a restaurant unless it is a braise or BBQ since it is usually overcooked and dry. Not this one, it was moist and succulent. All four dishes were absolutely awesome. We had been drinking a lot of champagne and northern Rhone all week, so we wanted something different, something medium bodied and a red Burgundy seemed like the obvious choice. My problem is unlike other regions of France, Burgundy has always baffled me. Way more complicated than Bordeaux, the Rhone, Cahors, Champagne...you get the picture. Not to worry, they had two things going for me. An extensive list at all price points and a great somm to help. I told him what we were having, a price point and that we wanted something with some age. Voila, he suggested a 2009 Volnay premier cru from a small producer that I had never heard of, and probably is not available outside of France due to a limited production. At 145 euros a relative bargain. It was a perfect match and drank very well throughout the evening as it developed in the glass. My first inclination was to have it decanted, but again our somm recommended not to, and just let it develop in bottle and he was right. As I have said in many past reviews, a great somm brings so much to the dining experience! After a lovely chocolat desert we were done, but our driver was running late due to the still horrendous traffic. He called a few times to let the restaurant know he was running late and when to expect him and again, the restaurant was very helpful and accommodating. A perfect experience, off the beaten track, no Americans, lovely non-hovering classic French service. We have now been in Paris ten days and this was easily the best meal of the trip thus far. We will be back.
