Whichever order you get, you get the choice of red or green salsa, the red is molten and hot to the core! The service is always friendly, but the food, on point almost every single time. The only thing that makes me feel like I can't eat this on a weekly basis, is the oiliness that collects from the chicken? Sometimes its barely there, other times, I question the golden liquid fats... perhaps its from them using the rotisserie spit? Whatever it is, its at least worth a try on your end.

We were all jolly when we left. I've really come to appreciate the consistency of Jollibee's chicken fried chicken. Unlike some of their competitor's, where the chicken breading might be coming off because it has been sitting under a heat lamp too long, their chickenjoy breading is crispy and their meat juicy. All of us had already eaten breakfast at the hotel we had been staying at, so weren't particularly hungry. Thus, just got a 3 pc Cjoy combo meal ($18.49, no tax) with 3 pieces of spicy, dark meat chicken (2 drums, one thigh), a biscuit (fluffy and tasty), two sides (mash potatoes and fries) and fountain drink. It also comes with a cup of brown gravy, meant to be used as dip for the fried chicken. Brown gravy with fried chicken has become something I seek out now. The fries are very similar to McDonald's and the mashed potatoes to KFC. In both cases, that is a good thing. I got a pager and it went off about 10 minutes afterwards, so got up to bring the chicken back. They have a self serve soda fountain. It is expensive though for a fast food chain, with no value-type menu available yet. Fil-Ams are loyal to this chain, and seem to be OK with the slightly higher price. It will be interesting if they ever choose to expand, what they would do to draw in non-Filipinos.

Along with flavorful salsas at the amazing salsa bar, El Jefe's preparation is simple and authentic. Our first visit we ordered the Whole Chicken Meal combo ($24): a whole perfectly seasoned and grilled chicken (cut up after grilling) with two sides and a pile of corn tortillas. We chose whole pinto beans & guacamole and chips. The chicken was fresh and we got one just off the grill. Juicy, tender, with perfectly charred skin. The whole beans were good but needed some seasoning, as did the guacamole. Plus we had enough for leftovers the next day. You order at the counter from the menu up on the wall. The place is small with a few tables inside but the outside seating area is covered and has heaters. I noted that the plastic panels can be removed for summertime when the weather is perfect for sitting outside. Everything is clean. Staff is knowledgeable and friendly. There's a small merch area where you can get an El Jefe T-shirt, travel mug or ball cap. Entrance is level, ADA accessible with no stairs or steps and your doggos are welcome in the outdoor area. The owner is a (I think) a Japanese fellow and I believe everyone who works here is family. There's often a young girl at the counter who I suppose is his grand daughter. I go up to the counter and she knows what I order... always chicken teriyaki. I don't have to say a thing. She rings me up and a few minutes later I have a hot, tasty meal in front of me. There are a few "rice bowl" type businesses in Cedar Mill and they are all good. But Kokos is the best! I'd encourage my fellow Yelpers to check them out if they haven't already. Hence the reason for this review refresh. I don't think they make much of a profit and being in the mall I'm sure their overhead is high. The folks there work very hard and likely don't get paid much. Dunno if they are native Americans or immigrants but they are living the American dream.
