Instead they don't press it and leave it loose. Which lead to a kinda airy cheese curds with a ton of cheesy flavor. Those were wonderful. The wings were perfectly cooked and the sauces had some heat but not too crazy. Good flavor, and ample portions. As a greasy spoon pit stop, it hits all the right notes.
