    Vegetable Enchiladas

    The best! Came here with a group of 6 ladies and we were seated in a large round booth, which was perfect for us. Our server came quickly and helped provide us recommendations and answer any questions we had. The starter bread was lovely, and my Vegetable Enchiladas meal was amazing! We wrapped up dinner with the Churros, which were sooo delish! Another aspect to note: They had a free coat check at the door! This was super helpful as we had large coats.

    This place was good, but I think it's expensive for expensive sake. If I'm gonna pay $50-$65 for a meal, I expect five stars. This place was a before because the flavors didn't quite hit as much. The duck enchiladas were just OK. The appetizer was probably our favorite part with the guacamole and tuna. The bread was also tasty with its dip. We got this to share for two people. I love the water cups. They're really fun.

    This place was awesome! Came here for a group dinner the night before Valentine's Day. Kent was our waiter. Everything was awesome. Margaritas were strong and delicious. The bread at the beginning with the dip was the perfect starter after a long day of drinking we started with the el trio and it was delicious. Then we all ordered different entrees and were all impressed! Would definitely come back here again

    Finished out our trip with a delicious dinner. We had a party of 15 and ordered a various selection of appetizers. The El Trio and Queso Fundido were my favorites. For my main course, I split the Tierra y Mar (steak and lobster) and Trout Fajitas.The lobster was incredible. Everyone at the table seemed to enjoy their food. Our server Matt was great and didn't miss a beat. I didn't like my margarita and he got me and my friend a new one, and also helped me organize a birthday desert for my friend. This was a great spot for a nicer group dinner

    We loved our experience here. The Chimayó beet salad was vibrant and well balanced, and the mains really delivered. The herb-crusted Chilean seabass was perfectly cooked and flavorful, while the blackened Wagyu sirloin had great depth and a beautiful sear. The vegetable enchiladas were comforting and thoughtfully seasoned. Tasteful, flavorful food, a cute and inviting interior, and attentive service made the whole evening feel easy and enjoyable. Would definitely come back.

    Very unique dishes and pretty tasty. There weren't many people there when I went so the ambience was very chill. However, the staff gave good recommendations and guided us through the menu. I enjoy the experience and would go back.

    We made a reservation at this popular restaurant highly recommended in the MY Times. It is a southwest theme & we are sure to believe we are somewhere else. The wine & tequila lists are extensive. Cat waited on us & started with icy cold goblets of water, warm bread & a cilantro spread. She was so accommodating and told us all about the ingredients in our fabulous dishes. The entrees run $50+ and the glazed ribs are not to be missed. We started by sharing the Aztec nachos with ahi tuna with capers, avocado, pistachio pesto & a mango sauce. The portion was generous and sweet, salty creamy, just wonderful. Next came the ribs they were indescribably beautiful, unique & delicious. They were Instagramable! Chef Gudrun Thorne-Thomsen did an exceptional job!

    We tried this restaurant for dinner and noticed right away that the prices were pretty high. We decided to order the Duck Enchiladas. The dish looked great when it arrived, but it was a too salty. For the price, we expected it to taste way better. Our server was very friendly and knew the menu well,However the food took a long time to arrive. The atmosphere was really nice. It had a cozy, castle-like design , and even the cups and plates matched the medieval theme. Overall, it's a ok place

    This is my second year eating at Chimayo and think I love it more each time. The food is impeccable, it's fresh, tasty and the menu offers such a wide variety where you feel like you can try something new and 10/10 times be pleasantly surprised. I usually get the Elk steak but ventured to the trout fajitas and they did not disappoint. The duck enchiladas were also very rich, flavorful and filling. You have to start with the queso which is the best queso I ever had. And if you save room for dessert the churros are excellent. The wait staff was lovely and very happy to answer questions! Inside of the restaurant is also very cool has a rustic Spanish vibe to it.

    This restaurant has friendly service, classy atmosphere, and photogenic plates. Everything feels so grand here-- from the chalices you drink from to the spiral staircase leading you to the downstairs bathroom. I ordered the chicken relleno and it was a large portion and tasty. I thought the garnishes here were over the top, but that could be nice if you're looking to celebrate something special. I would recommend this place for a small group or date. For a party of 3, we spent around $250.

    Chimayo has a special place in my memories because 5 years ago I was proposed to right after eating here. We came back this visit to celebrate. A beautiful fountain right outside the entrance can provide great entertainment for children while waiting for food. :) As with all of Park City, prices are steep. It's easily the most expensive Mexican restaurant I go to. Most entrees are in the $50- $60 price range. Despite the steep prices, Chimayo is a great place to eat. The service is great and the food is quality. The wagyu beef fajitas were easily the best fajitas I've had in my life. Freshly made tortillas with beef cooked perfectly on top of a delicious bed of melty cheese and veggies. The sauce on top was umami central. This was a special menu item, and I highly recommend ordering it!! The scallops were cooked perfectly, the beet salad was refreshing with lovely sugared pecans, and the potato served with the wagyu sirloin was also the best potato I've eaten in my life. The skin was crisp and salted, so I happily ate the whole thing. The bathroom is downstairs and is clean and decorated. However, a diaper changer is missing and would be appreciated by parents.

This was our first time here and I was pretty concerned about what the rest of our experience would be. We got to our table and then sat there for 10 minutes without any kind of greeting. Following the disorganization of getting seated, we weren't sure what was happening and almost left. I'm so glad we stayed. Once our server greeted us, it was smooth the rest of the evening. We ordered drinks (Old Fashioned and wine), both were excellent. Someone brought delicious soft rolls with olive oil and balsamic vinegar-excellent. We stuck with tapas and the portions were bigger than expected. We had a whole lineup of items we wanted, but filled up after three. We ordered a charcuterie plate that was an off menu special. Iberico and a truffle manchego cheese and a rosemary manchego cheese served with toasted baguette and grapes. It was delicious! We also ordered the Gambas Al ajillo salsa Roja (shrimp in a red sauce) and the Pulpo à la gallega (octopus). The shrimp were incredible. I could have eaten the sauce with a spoon. Okay, I DID eat the sauce with a spoon and then asked for more bread to sop it up. The octopus was a surprise. My husband ordered it and I was prepared to try a small bite. It was fantastic. The octopus was nicely chewy without being rubbery at all. And it was served with potatoes in a thin sauce that tasted like olive oil and paprika and onion. So good. We looked at the desserts and my heart said yes while my full stomach said no. I almost ordered the crème brûlée cake to go, but decided to come back another day. Our server (Zack) was great! I really think something happened with the hostess because the rest of the evening was so smooth. Very interesting interior. We sat at a small cafe table that felt strangely intimate despite how crowded it was. We'll be back!

Surrounding us was an enchanting gothic ambiance: flickering candlelight cast trembling shadows upon the stone walls, and the air was heavy with the heady perfume of roses and aged wood. The entire room breathed intimacy, like a cathedral of indulgence. Upon first glance at the menu--gilded and inked in an elegant, archaic script--my mouth watered with almost sinful anticipation. Everything looked positively decadent, but alas, I knew I must show restraint, lest I be consumed by my own ravenous desire. Our waiter appeared--Gehrig, a vision of aesthetic perfection, with cascading brunette curls and eyes that seemed to hold ancient, knowing mischief. He recommended that we begin with three to four plates. We chose the baked brie, lobster ravioli, Eva's steak, and Eva's pizza. Each dish arrived like an offering to some delicious pagan ritual, and my husband and I devoured them as though spellbound. With each bite, we released low, primal murmurs of pleasure--"mmmmmmm"--echoing like chants in a haunted chapel. For dessert, we indulged in the crème brûlée, its sugar crust cracking like old parchment beneath our spoons, revealing the creamy, golden heart beneath. Beside it sat a decadent marvel: a dark chocolate cup filled with warm, molten ganache, crowned with scorched marshmallows that looked like ghostly little clouds singed by candlelight. As I took a bite, the toasted sweetness gave way to a rich, velvety darkness that coated my tongue like a forbidden spell--smoky, sweet, and utterly divine. It was less a dessert and more an incantation, casting a spell that sealed the evening in delicious eternity. Throughout our two-hour reverie, sweet Gehrig floated in and out of our little sanctum, always arriving precisely when needed, as though summoned by some invisible incantation. His enthusiastic spirit and hauntingly bright smile elevated the evening to something almost supernatural. Eva wouldn't be Eva without Gehrig--our charming guide through this gothic culinary dreamscape. My husband and I agreed that all future anniversaries must be consecrated at Eva. That may have been my misunderstanding, but when I see lamb pincho I expect grilled pieces of lamb. They were tasty, just more basic than I expected. For dessert we had churros. This may be personal preference, but I like to pick up a churro and dip it in chocolate without it breaking apart. These were more like a fried cake in the shape of a churro and required a spoon. They also have what looks like a very nice patio for good weather. I would be a bit concerned about speed of service if the patio is full, since the kitchen seems quite small.
