Me and my family had a long day of traveling and had reservations at the Chimayo. It did not disappoint, but for your information I have to eat Frosted Flakes for breakfast, lunch, and dinner now. To start off, the service was very attentive. I could not find anything to complain about. Something always good to have in a restaurant like this. Next, the food was amazing. We as a family had the corn tortillas soup. The soup was very good and pair with the complimentary bread, perfecto. For my entree I ordered the Wagyu Serf and TERF. It did not disappoint one bit. The steak was amazing and the lobster. My parents shared the Buffalo flank steak. They said in unison "It was flavorful and juicy." (Don't tell them, but I snuck a bite and I would agree.) Finally, the Ambiance was busy and had an old eclectic vibe. The interior was made up of brick wall and had several stoneworks and glass artwork. It also had a soothing smell and chatter. In conclusion, my experience at Chimayo was amazing and had a great dinner with my family. Everything about this place was amazing from the food to the service to the ambiance. The Service was welcoming and the people were very attentive at the table. Our waitress told us it was best to order both appetizers and main courses to start. Off the bat, I just knew we were going to get pocketed just from dining here. So, we decided to just get salads and appetizers, which were ridiculously overpriced. But let me put this in BOLD! The food was awful. The Clams we ordered tasted like Cow Manuer. I don't know what technique they used in the kitchen, but that has got to be removed from the menu. The Elk Ribs were sweet and a complete rip off. The only positive thing we had were the salads and Ceviche. 1/10 Mark my words, do not come here unless you want your wallet to be striped completely empty for terrible overpriced food. We used to come to Chimayo every time we were in Park City to ski but haven't been back for about 5 years, so we were so happy to see it was still here. The interior is multilevel, with carved wooden posts, wrought iron rails, private booths tucked against the brick walls with warm moody lighting. Altogether a very Santa Fe vibe. The service was great and our waitress answered all our questions about the dishes and made recommendations for our wine and her favorite entrees. We started with the ceviche which was chock full of shrimp and mahi mahi, diced cucumbers, onion and cilantro all tossed in a tomato based lime marinade. Excellent! Then we ordered 3 entrees: the duck enchiladas which came with a confit honey roasted duck leg and a white bean and kale salad; green pipian fresh Utah trout fajitas with warm house-made flour tortillas and all the toppings; and chicken adobo roulade which was stuffed with poblanos, red pepper, corn and gruyere and served on a velvety smoky mole sauce which we could have eaten a whole bowl of! To end the meal (and not that we needed it!) we went for the chocolate fondue- with homemade cream-filled churros, cookies and fresh fruit for dipping. The dark chocolate was excellent and not overly sweet. Although the prices are quite high (!) the portions are enormous! There were three of us and we were very hungry and eager to taste lots of things but honestly we could have skipped the app and split two entrees and dessert and would have still been full! Chimayo is an excellent choice if you're wanting to try more of a modern New Mexico style restaurant. It is definitely worth a visit! read more

Lazy Saturday afternoon with a few thunder showers passing through park city. Decided to try Chimayo. Inside has a lot of dark colors so a little dark. Service was okay. Efficient. Not very engaging. Just a matter of fact. We ordered the quest fundie, roasted corn soup, elk broil, trout fajitas and special of day halibut in a wine mustard sauce. The quest appetizer was good but lacked a little pinch. Almost bland. The roasted corn soup was absolutely delicious. Smooth very good tasting. Elk was good. Trout was good. The special not good. Over cooked the fish. Ended up returning the dish. To the waiter a credit he offered to fix it and offered if I wanted anything else. At this point the rest of the party was nearly done so i passed. I think the manager came by a few minutes later and apologized and offered if anything I'd like. But passed. So kudos to the staff. First, lets start with the drinks. We don't drink but they have some amazing non-alcoholic drinks. 5 out of 5. The Queso Fondue is worth it, make sure you get it. You might also fill up on this and not be hungry for your main meal. 5 out of 5 Their main dishes are good (4 out of 5 good) but I haven't found them to be the greatest thing in the world. I initially thought this was a Mexican restaurant due to the name and decorations. Upon arrival we realized it wasn't. I ordered a Paloma drink and it wasn't very good, but the regular margarita was. The waitress was nice and attentive. Unfortunately the food took forever to arrive. Once it did, it was all very good. My issue with the place are the extremely high prices. This is one of the better restaurants we have eaten at. The food is not what you would consider traditional Mexican cuisine but was still notably inspired by the Spanish culture. The Wagyu was cooked exactly how I prefer and had a great flavor. The churro dessert was also to die for. The service was very good, a little slow, but not terrible. Chimayo was fantastic. We came for an amazing dining experience, and a delicious experience is what we got! Everything was prepared from scratch, with fresh fruits and vegetables everywhere. It felt so decadent, eating such a freshly prepared meal. We got a big appetizer, which was amazing, then corn soup and stuffed avocado salad, which were so good too, and then our meals came out and I knew I was in trouble... there was simply too much food. The crown rack of ribs was gorgeous and so yummy. I ate less than a quarter of it. But... I got the crown ribs boxed up in a leftover container for the next day, and then I was able to make a little dent in dessert, too! My buddy recommended this place and glad he was on point. Luckily made reservations on OpenTable as this place was completely packed! Server was so attentive and never left our sight. Food came out so quickly our small table couldn't harbor it all. I think this place found a niche in Park City by providing average Mexican food with good presentation and above average ambiance and service. But I can't rate them highly because the price/quality ratio of the food is so grossly off. They start off the meal with some cold bread and a creamy, avocado dip that no one at our table liked. Margaritas had very little if any alcohol. Also tasted like they used a pre-made mix. The Trio appetizer has a not freshly made guacamole with some hummus and a liquid cheese with chip/vegetables. Why is a Mexican place serving hummus? Not sure but it was not very good. Queso dip came out somewhat cold so the cheese was not fully melted. Strangely came with some below average pita bread. Avocado salad and soups were pretty good, no issues. Enchiladas, both vegetable and duck, were unremarkable. I know you may be tempted to go here to get your Mexican fix but you can find places that are so much better in Park City. read more

I will say that it's slight smaller and I know it can get pretty packed so it's always safe to make a reservation before hand! The grub: for starters the bread and the verde dipping sauce is bomb and I couldn't stop eating it! The queso was super creamy and tasty comes just enough stuff to dip! The ceviche was fresh and tasty and had a good lime tang to it and was a pretty big portion to share. The chicken fajitas were good but kinda a weird Vega mix instead of the classic mix I'm used to. Came here last month with my husband and 2 boys and we were not disappointed!!! It was our first time in Utah and we wanted to explore park city and I decided to choose Chimayo based on the til tok videos showing their yummy food! The service was amazing! They were so sweet and considerate since I was with my 5 month old and they wanted to make sure we were in a quiet area. Once we were settled our server was so attentive and sweet and the food was incredible! We are Mexicans from Los Angeles so we know good Mexican food and their take on southwestern cuisine was so unique and flavorful! I got the corn soup which was one of the most unique dishes I've had in a while! We also tried the short ribs which had an al pastor flavor since they brought it on a pineapple and they surprised us with a bday dessert since I had mentioned we were celebrating a bday. I am in PC regularly, but it's been a few years since I have been to Chimayo. Honestly, the prices kept me away (about $100 pp). Yes, I know it is a tourist town, but Chimayo is next level pricey. Nevertheless, on a recent trip we decided to splurge at Chimayo, just once. Well....it might be worth it. I had the blackened wagu steak. It was awesome. The crown of ribs is also excellent. Margs were great. We had a fried cheese app that was very good, but I would probably pass on next time. I would give it five stars if it were a better value, but if you don't mind the prices and want an excellent meal in PC, GO! We will be back. read more

Dinner was absolutely fabulous! The ambiance is kind of like an upscale old hacienda... loved the 2 top booths on the main floor, super intimate and really nice because you get to sit next to one another without it being weird haha. We ordered the guacamole and crab app and it was delicious! We each had a house margarita which were flavorful and well presented. We also each got the elk London broil and it was unbelievably good. So lean and tender, and the potato quesadilla thing was so unique and flavorful. Highly recommend for a nice date night without having to get too dressed up. read more
