The food truck is outside, and all done by one chef. That's to say, the food is made fresh and patience is needed. Thankfully, inside that had a great selection of local and international beer so I bought a 6-pack for us to enjoy while we waited. There were also colorful characters enjoying food and drinks outside who talked with us at length. It was really pleasant to be able to wait comfortably.
