Review from 4 weeks ago on Google. I've always been a fan of Chuey's for many years. I've mainly had their food to-go due to they are always busy with normal seating. Tonight I decided to eat inside instead of my usual to-go orders. I went to go sit at the bar. I went by myself. The food overall was delicious as always. The service I received tonight was not pleasant. The bartender who serviced me spoke to me in short sentences and never came back to ask if I needed anything else or if I wanted another drink. The bar was half full of other customers dining and they were all sitting there prior to me dining. Throughout my dining experience tonight, the bartender would check up on the other customers multiple times but she never came back to check up on me. When I had asked for a coconut mojito, she said she ran out of mint but didn't suggest or ask if there were other drinks I wanted. She didn't come back to ask me if I wanted another drink or anything else. I was at this bar eating for 45 mins at least to up to an hour. I had to ask for another basket of chips even though it was obviously empty. May I add that I was the only non-white customer at the bar. I would like to hope this wasn't a racial service issue but I do not know. I was polite with the bartender the whole time during my visit and still tipped her 15% after all this happened because I never not tip even if the service was terrible. I'm writing this post so the owner and mgrs are aware of what type of service their employees are showcasing to their customers. Went to Chuy's to celebrate a birthday. There were 9 adults in our party. We were told there would be a 45 minute wait. I pointed out that there were as many as 10 empty tables visible, but they refused to seat us. The manager was called and we asked if we could just sit in an unoccupied table in the patio. He said no. We would just have to stand around outside for 45 minutes. Terrible customer relations! He lost at least 9 customers and we spent several hundred dollars elsewhere. read more

So, I typically don't like leaving bad reviews, but people need to be warned about this place. We showed up at 8:30pm (they close at 10pm) with a group of 11 people. There was only about 15 or 20 people in the restaurant with a lot of open tables. We waited for 30 minutes for a table. Once we got seated, we waited another 10 minutes for our waiter to take our drink orders. Once we got our orders, we never seen our waiter again until we stopped him passing by to ask if we could get a refill. Halfway through the meal, the waiter brought our tickets to the table. It's by far the worse service that I have received in awhile. We were very polite to him and still tipped him. But everyone else should know what to expect when they come here. The food is always good. The two things that dont give it a better rating is the salsa freska is too hot to eat and the margaritas leave something to be desired. I got the best margarita that they have and it was hard to enjoy because it was very sour. If they would make a salsa freska mild without so much heat the place would be five star. read more

I don't know what people are talking about! This Chuy's is so good! Every time we come we are seated quickly, even when it's busy. Our server Jack was friendly and perfect in his attention, stopping by regularly to check on us and get anything we needed. The food was hot and flavorful and so delicious! I love the steak burrito, and even the green chile rice and refried beans are way better than anywhere else around. I swear some places just throw the rice and beans on the plate to fill up space so that the tiny burrito doesn't look so small. Not Chuy's! Perfectly proportioned, and more than enough! And of course the chips and salsa here are my favorite too; the salsa tastes so fresh and with a solid kick of spice. I am leaving stuffed, but my mouth wants more. Honestly, the best thing I can say about this place is the ambiance is fun, and I love that some latino mommas are making tortillas fresh as you walk in. So fun!! I guess the other good part was our server. She did do a good job with the size group we had. She was kind and efficient and helpful. So, the atmosphere and the one server was good. However, from that part on, everything is a disaster. The food was bland and tasteless. The salsa tasted like it was from a can and unseasoned. The food was well-below par of good Mexican food. Just about everyone had leftovers, but no one took them home because no one wanted to retaste that food. We all shared some of what we each got, from chimichangas, to enchiladas, to quesadillas, to just the refried beans. All of it, again, was bland and not appetizing. And everything is over priced. The Ambiance if fine and the service is great. That does not make up for poor quality food. We ordered the fajita's (don't order the fajita's). The chicken looked and tasted like it came out of a bag and someone microwaved it and poured it over cooked onions on a grill. The tortilla's used to be handmade here, but does not seem to be the case anymore, they were stiff and cold and we sent them back, only to get similar ones that were "fresh" brought back to us. As far as a chain goes, these guys do a great job. Good TexMex, great flavors, nothing bland and their jalapeño ranch maybe worth wrestling a bear for. Been to chuys all over Texas and happy to see them in CO. Usually consistent good service and great menu, good TexMex food. Beautiful patio weather for some Tex-Mex and margaritas! As is the folly with all Mexican restaurants, I loaded up on complimentary chips and salsa, regretted my decisions when my main course came, but ate everything because it was delicious. We started out with so many basket of chips with fresh salsa and the creamy jalapeño (definitely get this dip). We also asked for fresh tortillas and they brought it out without an extra charge. You can watch them being made inside with the fresh tortilla dough on the giant round griddle. They're puffy and soft (more puffy than a tortilla, but not as puffy as pita). It is definitely unique and amazing. For drinks I got the Texas-Tini. It's a maragarita that comes with an 18 oz shaker and a martini glass with two jalapeño stuffed olives. Fancy! ;) I also got the Chuy's Brew (frozen margarita with a 7oz mini bottle of Corona). They were both great! The fajitas came after I had finished a basket of chips...there's just no self control here. I ordered the combo (chicken and steak); the meat was seasoned well and tender. It's not the best I've had, but this five star review is for the service, drinks, and atmosphere. Portions are huge though; my friends got the burrito and wow...that could've fed 3 people. I spent about $50 for 3 well sized cocktails (~$10/per) and fajitas for one (~$16). Honestly, I would've been happy just getting drinks with the chips/salsa/creamy jalapeño and a tres leches (which I will be back to try)! read more
