We came here on a weekend evening and the wait was short, around 5-10 minutes. The hostess and our waiter were all kind and helpful. We ordered the bbq chicken sandwich, Nashville chicken sandwich, and the original bratwurst, all with fries. The food was pretty good but there were a few things that were not as good. The bbq burger, which I substituted chicken in for, could have used some more sauce. Like the Nashville chicken sandwich, there were two chicken Patties, although on the thinner side, it made the sandwich feel much bigger than it should have been. Because only one patty had sauce on it, the other chicken patty tasted bland. The fries were really tasty and fresh. Apparently the Nashville sandwich had too much hot sauce in it. First time we are coming here since the remodel. We were looking for something slight different than others but we don't want bar food. We found the menu offers some fusion German cuisine. Sounds very interesting and we decided to give it a try. We did not disappoint. The Thai chicken schnitzel comes with two pieces of chicken cutlets. Peanut sauce just like eating Thai food. It was done perfectly. We also tried the rock fish schnitzel. The portion is not as big as the chicken but it is so refined the tomatoes side cooked just right and balanced between sweetness and sour. They also serve traditional schnitzel and other dishes. They all sound good. Really hard to choose from. The remodel looks great. I think it is classy. The hostess and the waitress are very nice to us. I was looking for a schnitzel and they had three different schnitzel options. We ordered the jager schnitzel, rahm schnitzel, and the bratwurst platter. Unfortunately, both of our schnitzels were cold when they came out so we asked if they could be reheated. After they were reheated, our food was still not hot and barely warm which was very disappointing. The schnitzels were sadly very very bland, I had to add a lot of salt and pepper to it and even after adding the seasonings and drenching it in gravy didn't help much. Parsley spatzle was just okay, nothing special and bland as well. The bacon and mushroom gravy that came with mine was really good. Not the worst food I've had but definitely below average. I wasn't all that impressed in my visit to Colchucks but it wasn't necessarily a bad visit. Maybe the puffing it was getting from the folks I was hanging with made my expectations a bit high. I kept it simple with the Bacon cheeseburger. I was told by a fellow Yelper; this is where I went wrong. I should've gone with a schnitzel or a sausage. Maybe they're right, but the place is called "Colchucks Burgers & Brews" after all. The burger is a single 1/2 patty with White American cheese, and a nice cut of bacon. The usual lettuce, tomato, onion with a squiggly squirt of comeback sauce. Now the comeback sauce is the best part of this burger, or any burger you can get I can tell. I'm not sure what is in it, but it was very good. The Burger was alright. An average tavern burger that didn't hold together that well. It tasted kinda dry to me and huge pieces of lettuce that I'm not a fan of much preferring it being chopped a bit. Tomato and onion were fresh though. Tried to get extra comeback sauce. Came up on the bill an additional $0.50. A surprise that pops up every now and then I'm not a fan of. Had the 'Effen Good TIme' Cocktail, also alright. Thought it would be a bit stronger. Friendly, open, and efficient. We told her our woes about the dinner we'd just had and she gave us the rundown about the chef/baker who was going to make our German Chocolate Cake. I had the Le Royale burger, for my overall meal (no drink included and tip included) I payed almost $30! This is surprisingly pricey for a burger. I think the burger was one of their better options but I found it to somehow be more sweet than it was savory, I know, surprising for a burger. The fries were very stale, I advise anyone who's ordering from Colchuck's to get their sweet potato fries instead, they were very delicious (minus points for some much needed salt). This is a really nice, yet casual sit down restaurant good for families or as a casual date spot. We had a large, walk in party if 10 and they were able to seat us without waiting on a Saturday afternoon around 1:30 PM. Servers were young but knowledgeable about the menu and very friendly. I had never had schnitzel before so I was excited to try that and spatzle as well. I had the Jagerschnitzel which is pork vs. the veal dish they also had on the menu, it was served on a bed of deep, rich Demi glaze with big chunks of Portobello mushroom in it & topped with freshly pickled red onions & flat leave parsley to brighten the heaviness of the dish. The spatzle was lightly crisped & tossed in a simple sage & butter sauce but also paired well with the Demi glaze. My husband had a brisket dip sandwich that was served on thick sliced, grilled sourdough bread. It also had some caramelized onions inside with the brisket which gave the sandwich good flavor. It was served with a small cup of au jus and your choice of fries or salad. My SIL wanted a salad & it was huge...mixed field greens tossed with roasted golden beets, goat cheese, carmelized onions & toasted pecans in a light vinaigrette with a strong Dijon mustard taste. It was pretty tasty & very shareable. My other SIL split a burger & fries with her husband, portions are ample. My nephew wasn't that hungry so he ordered the Bavarian pretzels and shared some with the entire table...you get 2 pretty good sized ones with 3 different sauces for dipping, white melted cheese, stone ground mustard & a pimento cheese dip...served warm. One of my daughters had a chicken schnitzel sandwich with no arugula or tomato confit & she was very satisfied, although I thought it was kind of tasteless...but good for kids. The rest of the kids had chicken schnitzel strips & fries from the kids menu and they were also very happy with their meals. Food came out fresh & made to order so it took about 15-20 minutes but it was so tasty, it was well worth the wait. They have a full bar too so my SIL's had some cocktails while we waited for our food. Colchucks was a perfect restaurant to come in out of the rain & get a hearty, sit down meal. Visited Leavenworth for the past 5 days and decided to try out Colchuck's for our last meal before heading home and it was by far our favorite spot. Staff were very friendly and accommodating on arrival and our server Chris M was the best. Both friendly, with a dash of awesome awkwardness and knowledgeable of the menu with great recommendations. From photos I saw previously they have upgraded and curated their menu. They had a thaischnitzle i wanted to try but went with a veal weinerschitzel as I can't resist capers! Searched photos on yelp looked meh at best but the new presentation and version was great and I love the capers, sauce, and leaf forward salad accompanying the protein. The schnitzel was great, crispy but still juicy not dry inside seasoning was good too. The kaesespaetzle was also amazing! Had spaetzle at many other restaurants that looked like beat up moosh lol. But the noodles here were still uniform and the cheese pull on their cheesy spaetzle was insane. Had to use two utensils to wrap up and get the cheese off. Best part was the portions are big, he did say it was family sized portions but we both ordered a dish anyway and we had lots of left overs. Highly recommend they deserve a much higher rating. The menu looked like it would not be vegan friendly at all (pretzels ARE without butter and cheese,) but it also seemed like the atmosphere wouldn't be that pleasant. Totally wrong. First off BIG thanks for the hostess staff for enforcing the mask requirement of Colchuck's AND the state, with firmness and a smile (and free masks to anyone who didn't have one.) I waited for about 10-15 minutes for a table and saw at least 5 people who were rude to them. If they get 20 people an hour with that kind of an attitude they would see about 100 in an 8 hour shift. Big big shouts of praise to those ladies for keeping it professional and kind. I wouldn't be doing so well at the end of a shift! We needed a place to warm up, have a good drink and maybe carb up a bit. Colchuck's didn't disappoint. The drinks were delicious, atmosphere relaxing and the pretzels were carb-y. Oh and the rest of the staff was extremely friendly too. We had to use the restroom while we were there and despite it being an hour before their closing, it was clean and stocked. The name may have changed, but the menu (and the quality) have not! Colchuck's, formerly the Bavarian Bistro, is a strong contender for the best restaurant in Leavenworth, and possibly our most-visited. Whether we're stopping in just for the bar, to enjoy some of their fabulous cocktails, or sitting down for lunch or dinner with friends, we've never left this place disappointed, whatever you want to call it. This last time around, we had drinks with friends the night before, then turned around and popped in right at opening, for lunch. Our favorite table is in the corner at the front of the building, overlooking the bustle of Front Street, but someone had beat us to the punch; we still ended up with a window table elsewhere, though. I ordered their Bloody Mary to start, because it comes with a pepperoni stick, among other things, and that's just too awesome to pass up. My wife had her favorite beverage, Snow White's Demise (a Hot Toddy-adjacent drink), that morning and the night before, as it is delicious and warms you up in a hurry! The only poison in this apple drink is the whiskey, and it ain't gonna kill ya, but it might make you sleepy, if you have too many! The menu is a mix of American and German standards. Colchuck's boasts they have the best burger in the valley, and lemme tell you, I've had the Cobra Kai before, and they're not just boasting: it'll Crane Kick you in the chops, and have you running back for more, like Johnny Lawrence running head first into Daniel LaRusso's foot! The Yardbird is another favorite of mine, with a massive cutlet of breaded chicken that's almost like a slab of hot and spicy Nashville schnitzel, which needs to be a thing on its own (Colchuck's owners, take note)! My wife ordered the other thing I wanted, the Huner Schnitzel, with its ridicu-licious miso mustard sauce! Between my sandwich and being unable to keep my hands off her schnitzel (wink wink), I left Colchuck's fat, happy, and in desperate need of a walk down Front Street, to burn it all off. Service has always been stellar here, despite one server's proliferate use of the word "dope" as a response to just about everything. We three shared the harvest salad with chicken breast added, pretzels with three dips and sausage charcuterie board and Randy also had a brat.
