Came to Cooper's BBQ based on a friends recommendation. When you walk into the establishment, you first are met by a bar area. It was an hour before closing time and they were already short on meat options. I decided to try the briscuit because it was one of the options left. I asked for a quarter pound. The butcher cuts the meat but I didn't notice them weighing it at any point. Then you move to the line and the meat is packed for you and you can choose your side items from the line with some being prepackaged and others behind the glass. Then you proceed to the register and I was surprised when the total rang up nearly double the price point for the quarter pound of briscuit that I ordered. I mentioned it to the cashier and she had to take the meat back to have it recut. They offer free beans and other items like bread, pickles and onions to dress up your meat. I wanted to try the bacon wrapped pork but they were out for the evening. Was in town recently for the UT-UGA game and decided to undertake a BBQ tour of Austin and surrounds. Context: I grew up in TX and went to school in Austin. I've had plenty of BBQ both within and without TX. I did not try all of the spots that I wanted to this trip in Austin, notably missing out on Terry Black's, Interstellar, and LeRoy and Lewis, amongst others. I am judging BBQ relative to all other BBQ out there, not just vs TX-style or Austin BBQ. Cooper's was easily the biggest disappointment in my recent BBQ tour of Austin. Don't get me wrong, the building and sense of history are sublime. The bar is magnificent. However, the food...oh, the food...that's a different story. 1) Customers are rushed through the queue, and whoever is cutting the meat doesn't really pay attention to what you request, instead giving you whatever he wants. 2) To wit, I requested half lean, half fatty brisket and was given all fatty. We are talking FATTY, as in mounds of pure, inedible fat. They clearly do not trim their briskets properly, instead apparently seeing this as an opportunity to charge customers for this inedible fat (they charge by the lb.). 3) Salt. Salt. Salt. The smoked turkey was inedible due to an insane level of salt. This was the only item I threw out during my BBQ tour. 4) Cognitive dissonance between the old-time building and playing modern pop music. This created a weird distraction and made the whole experience feel "off". 5) While the flavor of what meat there was in the brisket was solid, the fact that what I ordered was 3/4 inedible fat made the value fall flat. Sadly, I cannot at all recommend Cooper's for these reasons: ripping off customers by charging them for fat that Cooper's should have trimmed, VASTLY over-salting food, and playing pop music. 2/5 stars. read more

I placed my order at the pit on the RHS, moved to the left where you can get sides then further left to pay at the register. At the extreme left are stations for setups, condiments, bread and the complimentary simmered pork bits and pinto beans. I chose a half pound of Brisket that was cut, sliced and weighed by the pit master. I skipped the sides because of the complimentary Pinto beans. The Brisket was tender, a little dry, had a mild smoke flavor and a very salty crust. The beans were also a little salty, mildly smoky flavor with bits of pork belly; very good. All staff was friendly and extremely helpful with instructions and advice. I liked the food excepting the high salt level of the brisket crust. Another local favorite. Customer service is on point! Cooper's is pleasantly different from most BBQ spots I've visited. At Coopers, not only do they have the drinks and utensils station, they also have a bread station where you can get as many slices as you want. Most places put 2 slices on your tray. This was THE most overpriced bbq I have ever purchased. For two reasons, 1) it was expensive, and 2) it was largely TERRIBLE. The way they sold it also added to the expense. I could not buy chopped brisket by the pound, I had to buy it by the sandwich and each sandwich was $19 dollars. $57 for three chopped brisket sandwiches. And the brisket was horrible. The attached pic shows the "moist" brisket on top and the "lean" on the bottom. As you can see, moist is actually just fat and lean is dried out crusty yuck. It was either $5.50 for a single serving of a side or $20 for a quart. No pint size. I thought the sausage was ok but my partner had a hard time chewing the very tough casing. I've had the beef rib at their place in Llano and it was moist and a decent size; here they're shrunken and chewy. Overall I think this is the place to go if you're expensing it and you've had a lot to drink and you need something to fill your stomach. That Old Time look is just lipstick on a pig. You can view all of the meats and choose what kind you would like and purchase by the ounce/pound. It looks a little messy but it's good. After you choose your meats you head to your left for sides, condiments and desserts. We got there kind of late so the desserts (I believe a few cobblers) were pretty picked over and didn't look appetizing at all; so we skipped that. Next is where you choose your beverage and pay. Then, you find seating which is open family picnic style. The food was delicious! We got brisket, sausage, Turkey, green beans and Mac n cheese. No complaints besides the desserts! I really loved the atmosphere. Gave a very homey feel. Like we were in a family owned log cabin. As this was our 4th stop on the tour, we had to try it. According to our guide this was one of the best places to have Brisket. The Brisket that was brought out was dry. You had to use more bbq in order to get it to taste decent. I'm sure their brisket is usually on par, however, this was not the case when serving people on a food tour. Their beans and pork were good, yet a bit too salty for my taste. The sauce brushed on my half-chicken was really good. The ribs were flavorful. The string beans had bacon and the grilled corn both had great flavor. Moved to Austin two years ago, and today I had an old friend in town who I hadn't seen in 10 years. I took him to Cooper's for authentic Texas BBQ, when I normally rely on Terry Black's as my go-to place to take out of town guests. The food at Coopers absolutely delivered. The barbecue was excellent. Unfortunately, the entire visit and dining experience was ruined in the last 90 seconds by an incredibly rude bartender. We were sitting at the end of the bar while there was still a half-full dining room and other customers finishing drinks. It was getting close to closing time and I could tell the bartender was very anxious to get off work, because he had already taken out the trash and put away the trash cans for the night, probably 20 minutes before the restaurant even closed at 10. He didn't seem to mind the other customers sitting at the bar, finishing drinks as the clock ticked closer to 10, never announced last call or anything, but boy, was he was scowling at my friend and I. It was as if he were trying to telepathically push us out the door. As we got up to leave, I did what I always do as a former service industry person and tried to pre-bus and clean up our tray. But because the trash cans were gone, there was literally nowhere to throw anything out. We stacked everything as best we could on the red tray on the bar, said thank you, and started to leave. The bartender then yelled at us all the way to the door, in front of other customers, screaming that we had left "the biggest mess he's ever seen." Keep in mind, this was only two people sharing a ribeye, a couple of sides, one cocktail, and one fountain drink. I imagine he's never worked during the Sunday church crowd or served a family with young children if this was, in fact, the biggest mess he had ever cast his eyes upon. We turned around because the reaction was so over the top that I thought there had to be some misunderstanding. I walked back, picked up the tray with all of our trash on it, and handed it directly to him since I didn't know what else to do to help him calm down....and he still kept yelling at us...about how we needed to put our trash on the red tray...and not leave a mess on the bar. I kid you not, he was screaming at me for not putting my trash on the red tray WHILE I was physically handing him the red tray with my trash on it. You can't make this stuff up. If Cooper's expect customers to clean up after themselves, fine. So maybe don't remove the trash cans while people are still eating and drinking, then publicly berate them for not doing something you made impossible. If there was some special configuration with which we were supposed to place our meat juice-covered paper place mats and Styrofoam cups upon said red tray, please provide a tutorial next time, in lieu of a trashcan. I don't think that would help get you off the clock any faster, but heck--neither did rushing to do all of your closing work, 20 minutes before the restaurant even closed. Whatever time you think you saved, you then wasted it screaming at customers who did nothing wrong, and as a result, will never return. Sad, because I was actually thinking that I preferred Cooper's to Terry Blacks, but there won't be a second visit to confirm. Can't risk another meltdown being directed at me or another visitor of mine. The food was great, but the bartender's behavior was rude, aggressive, embarrassing, and completely unnecessary. It ruined what should have been a fun reunion with an old friend. We both walked away completely bewildered and severely uncomfortable after being raged at publicly. Do better, bartender. It is unrealistic to have a bartending job at a restaurant that closes at 10, but expect to be able to walk out and go home at 10:05. Especially on a Saturday night in Downtown Austin. read more

We of course ordered the brisket which was deliciously tender and melt in your mouth good. You can tell that they cook this meat low and slow for hours! We also got the dry rub pork ribs that basically fell off the bone, you can taste the richness of the meat. The grilled corn on the cob did not disappoint either. The person who was handling us did seem impatient and would start to walk away when we took more than a second to choose something. It made us feel rushed even though there was no one else online. We got to the cashier and noticed that the pit worker didn't even listen to us and gave us .6 lbs of brisket, .8 lbs of rib and a single beef rib which came out to around a lb. The rest of the order was jalapeño mac n cheese, pecan pie, peach cobbler and corn. We just decided to order more if we ended up being hungry. The sides were decent with our favorite being the peach cobbler. The meat, however, was really bad. We got the ends of the brisket that I think the other places we went to would cut off and some of the beef rib ended up being like jerky. The saving grace was the small piece of turkey. We ended up ordering another lb of turkey which ended up being super juicy and honestly great. The free beans were really good, too. I intended to spend lightly and just sample some of the items but that didn't go the way I had originally planned. I wanted 1/2 beef rib, 1/4 pork rib, and 1/4 brisket and ended up getting 2/3 brisket (19.60), 2/3 beef rib (19.09), 1/4 pork rib (4.87), and a side of jalapeño bacon Mac n cheese (4.25) for a total of 51.75. The food was extremely disappointing and underwhelming. They had no real type of bbq sauce that would help enhance with flavor but instead had some liquid sauce that wasn't good. The beef rib wasn't good at all and it was undercooked (a part of it the rib looked raw and way too pink to he cooked properly). The brisket was mainly fatty and salty and lacked any real flavor. The pork rib was the one of the only items that was okay for the most part. The mac n cheese jalapeño Mac n cheese was mid. All in all, this was one of worst bbq food experiences I've had and I definitely wouldn't recommend or return at all. read more
