The venue, staff, and wine were excellent. We came on the rainiest day in Paso Robles for the year so we ended up in the barrel room which was actually a nice back drop. Just a little cooler temperature wise. But they thought of everything by providing us with blankets. There were two different flights. 2 of us got the Limited flight and 1 got the Signature flight. The wine is primarily Rhone style, which is not my "go-to" but the wine maker's favorite varietal is Syrah so that definitely was favorable since that is my favorite Rhone varietal. I chose the Limited flight because they had the carbonic Grenache "Jhoom" and I'm always interested to see how that expresses itself. I think the winemaker really did a great job! Granted it was not a Beaujolais Nouveau, since it was from Grenache it had that similar bubblegum light fresh fruity expression. Would be good at a Thanksgiving dinner. My favorite wines of the two flights were the Cabernet Sauvignon from Limited flight and the Syrah " Source" from the Signature flight. Everyone really did enjoy their time there and we all thought that Kylie was delightful. She did a wonderful job telling the stories and pouring the wines.

Such a beautiful culinary experience at Copia Vineyards and Winery! We got to meet the owners who were fantastic and amazing hosts. There is seating inside as well as outside in their back patio. The photo features their new culinary pairings for this season! Enjoy this pairing offered Friday- Sunday at 11am and 1pm.

We really loved our visit to Copia Vineyards. The tasting room is gorgeous yet intimate which makes for an amazing experience. We tasted through 6 of their wines and loved each and every one of them. Our wine educator was Victoria Reller, Tasting Room Manager. She was attentive and possessed great knowledge of the wine industry. We all felt she was one of the best wine educators we have come across and we have visited 100's of wineries. You can tell Copia has gone to great lengths to ensure that each guest has a wonderful experience. Wines are priced right and a basic tasting is $25 which is waived with a purchase of 3 wines. Pens are free and they wrap each bottle of wine in elegant packaging to go. We plan to visit again and perhaps try their wine and food pairing.

Newer established winery that offers a little bit for everyone. The 2021 Matador was my favorite!

Alex was great at educating us on these delicious wines, so we joined the wine club ! Nice to meet the owners too!

It's every winemaker's dream to have a vineyard and winery so why not in Paso Robles? The soils and climate a suitable for almost any grape varietal (hence the 300+ wineries in the Paso vicinity) While many, each vineyard or winery stands on its own merit. In the case of Copia, their claim is the Rhone and Bordeax varietals. If you choose to stop in for their tastings, be prepared! It is educational and tasty. Whoever paired the wine with the charcuterie did an EXCELLENT job! The pairing of cheese to wine was so notable (we later hunted down the cheese source in Paso) So their current offerings- The Source, The Story, The Cure stands up front. If your passing through the Paso Robles town be sure to stop in and check out Copia, especially if you like Bordeaux Street parking and municipal stalls available. Tasting fees may be waived if you are a club member

Great wines, great service, beautiful spot and cute winery overall. We've been wine club members forsome time, but this is the first time we've made it to the winery in person. Definitely worth the wait! Such a cute spot and not a long drive from town either which is a plus.

Had a great experience visiting the Copia tasting room in downtown Paso! I had been wanting to visit here for a while now and was so happy that we finally made the stop in. Our group of four visited right at opening on a Saturday morning. We didn't have a reservation but were seated immediately at the beautiful table in the storefront window. We received wonderful service from the gentleman working the tasting room, I believe his name was Victor or Vincent - I feel bad I can't remember! All of the wines were fantastic, full of depth and flavor. It's always a dilemma choosing how many bottles of wine to buy when it's only your first stop of the weekend, so I only ended up taking one bottle to go. But, I would gladly drink any of them again and would've liked to take one other with me if it weren't for my overflowing wine cabinet. Can't wait for their vineyard tasting room to open in the coming years, I will for sure be visiting and taking more wine with me then!

    Food and wine experience

A truly wonderful experience! Copia has been on our list to try for a while now and was recommended by many locals we've met. Kudos to their social media team. I reached out when I didn't see a reservation for 2 (only saw openings for 3+) for a last minute birthday weekend. The team answered our questions and sent us a direct reservation link for a time we requested. When arriving, Victor greeted us with welcome rose and got us seated inside (even though we had an outdoor reservation). Much appreciated as it was in the 100 degrees that day and already getting hot. All wines we tried were delicious. The food was top notch and paired perfectly with the wine. We loved that there were even add ons of other red wines we could add to our flight for just a little extra wine. Bonus that they had EV chargers on site as well! Overall an amazing experience. Easy drive up, and the views were serene.

    The Story

You think you're coming to Paso for the big winery and vineyard experiences, but it's really all about the intimate downtown tasting rooms! On our recent trip in town, we were walking around downtown when we passed by Copia. The name had come up many times during my searches for the best wineries and we decided to stop in. While they were no longer doing tastings by the evening, we got to sample a few reds before deciding on a glass to order. I really enjoyed sipping on "The Story". But what was most pleasant about this experience was the great atmosphere! We had the pleasure of being served by a man named Victor, who was so kind. He chatted with us and a couple next to us as we enjoyed our wine. As another group slipped in, it felt like one big family as we all conversed over great wine. It was the perfect end to a day of wine tasting. We were so impressed with not only the wines, but the service and hospitality and look forward to coming back soon!

Our name! Such a nice touch to our tasting.

My favorite was the Silken. The tasting room is beautiful and pretty big. They have a ton more seating on the wrap around porch and downstairs on the patio. They also have a short but good menu for food items as well. We got their charcuterie plate, a bowl of their daily soup, and a small salad. I do wish the soup came out a bit hotter but it was tasty with a nice kick to it. Would definitely come back to Parrish for a tasting next time I'm in town.

If you are looking for a wine pairing with food, where the wine works with the food, this is one of the places in Paso Robles you need to visit. Make a reservation - the food is custom prepared. Be willing to go with the flow. You aren't getting hamburgers here - you are getting actual haute cuisine. Cutting edge stuff. If you are willing to give it a try, your mouth will water. Le Cuvier is up at the top of the hill with sweeping views of the whole valley. It's a narrow, winding path to get to the top so drive carefully! Once you arrive, its a colorful, quirky, nature-filled, calm retreat. We got to meet both friendly winery cats, Otis and ( swear I thought I'd remember the other one's name!) Cat presence always gets extra points from me. We were seated on the large shaded outdoor patio, and we were the only customers there. It was late in the day and I guess the midday rush had all just vacated at once. Our server was really great at describing the winemaking process, flavor profiles and history of the winery, but the patio was completely silent. We took out a phone to play our own music and she commented that her mother did the same thing when she visits. Dining experiences need music! If they're aware of this, I hope they consider adding some soft music for a more comfortable ambiance. Wines - All of the wines here are natural, which not many wineries can claim in this area, and I tasted some very unique blends like nothing I've tasted before. My favorite was the Syrah, but the rest of the wines weren't really my style. Food - The menu is changed regularly and it's obvious that the chef enjoys putting it together! We didn't get to try the ramen that my friend raved about because of the new menu, but we loved the mini "street taco" tostada and the spam maki. I did think some dishes would have been better served hot, like the orange-glazed chicken thigh. This was such a cool, unique experience and it sounds like you'll never have the same experience twice! Would recommend to anyone.
