Be willing to go with the flow. You aren't getting hamburgers here - you are getting actual haute cuisine. Cutting edge stuff. If you are willing to give it a try, your mouth will water. The pairings are just so good. The valley view, the cats, the staff are just so friendly and attentive. We joined the wine club a few years ago, and came today and were not disappointed. A friend brought us here on a girls' trip! We made a 4PM reservation on a Saturday for a food and wine pairing ($45, 5 wines accompanying 5 dishes). Le Cuvier is up at the top of the hill with sweeping views of the whole valley. It's a narrow, winding path to get to the top so drive carefully! Once you arrive, its a colorful, quirky, nature-filled, calm retreat. We got to meet both friendly winery cats, Otis and ( swear I thought I'd remember the other one's name!) Cat presence always gets extra points from me. We were seated on the large shaded outdoor patio, and we were the only customers there. It was late in the day and I guess the midday rush had all just vacated at once. Our server was really great at describing the winemaking process, flavor profiles and history of the winery, but the patio was completely silent. We took out a phone to play our own music and she commented that her mother did the same thing when she visits. Dining experiences need music! If they're aware of this, I hope they consider adding some soft music for a more comfortable ambiance. Wines - All of the wines here are natural, which not many wineries can claim in this area, and I tasted some very unique blends like nothing I've tasted before. My favorite was the Syrah, but the rest of the wines weren't really my style. Food - The menu is changed regularly and it's obvious that the chef enjoys putting it together! We didn't get to try the ramen that my friend raved about because of the new menu, but we loved the mini "street taco" tostada and the spam maki. I did think some dishes would have been better served hot, like the orange-glazed chicken thigh. Out of all the times which I've been, quite a few throughout the year has to be the best yet. For the wine and the food paring. We had an early reservations 5/2 just after they opened. When we arrived, give or take a couple of parties already seated for the first seating. The gentleman that checked us was the sweetest. You get the welcome tea drink which the cup is used for water throughout your tasting. Very friendly and sweet. A little joke throughout the whole experience with the food pairing and meal. I was joking that he was hyping up the meal that it better be worth it. Let me just say, he was 100 percent right. The best meal out of all the times I've been..... It didn't take long till our table was ready. Also it was a first time that we were seating outside in the courtyard. Normally it's inside the room once you enter the courtyard. It was a nice Saturday and the weather was great. A nice touch to the beginning of something sweet. There was also another table set up down in the garden area that was utilized as well. Gabby who took are of us that afternoon was the sweetest. The details and explanation of everything was to the tee. Also, this is the second time that I had to mentioned they forgot our little posey of flowers...lol... The small details that we love. Depending on the menu and tasting, the pairing is brought out with each glass. Wine are set up first and pairing followed. This visit, we started off with three pairing. Bacon and leeks strata, amazing by the way. Then the antipasto salad followed by a 4 spice seared duck breast. Wow, just with those three pairing with the wine was excellent. Each wine delicately chosen to match the meal, details on details. Afterwards, the last two paring were brought out. The oven roasted portobello mushrooms and ramen were the last of the pairing accompanied by the wine pair. Just those small tasting alone was excellent. To finish off with the tasting which with members we alway go for the lunch pairing afterwards. A meal with a glass to accommodate the dish. This by far was the best I've had. A 2022 Cabernet Sauvignon paired with black angus filet mignon. Poomes paille, bordelaise, wedge salad of half romaine lettuce with Parmesan, bacon, mini san marzano tomatoes, asparagus, Tokyo turnip, chives and Caesar dressing. Wow, it was fantastic. The streak was cooked perfectly with a nice pink center. Salad was crunchy and paired well with all the trimming and then you have the wine pair, chefs kiss. The chef knows their food. Everything was excellent as alway and this was another wonderful experience. A first time tasting in the courtyard was great. Gabby was amazing and the sweetest. And the gentlemen checking us in. We were tasting on this side of town and decided to pop in to Le Cuvier as we were driving by, we arrived too late to do the food and wine pairing, but were still able to do a tasting - which was exactly what we were looking to do anyways. Sat on a long bench with a beautiful view and Miranda brought us out our wines one at a time. She doesn't normally do tastings, so it was very kind of her to stick around and let us taste! We had so much fun chatting with her about the wines, history of the winery, and Paso in general. We really liked a lot of the wines here and ended up leaving with a bottle of their cab sauv and l'enfant du pape. All of Le Cuvier's wines share a signature profile: soft tannins, bold flavor, and remarkable structure. Amazing views! This winery used to be a residence so there are separated locations on the property which would be nice if you're having a party or gathering. The service was pretty quick and the wine knowledge was high. I think what elevated the experience was the sampling of food provided with the wines. We are members of the wine club and usually love the lunch pairing. Unfortunately, their pick up party was lacking though, which was the same cost as the lunch pairing. The lunch pairing is usually very upscale and beautifully plated. Unfortunately, the pick up party, which I expected to be even more high-end as a gratitude to their members, was more like a barbecue. The food was not the best. Did the original food and wine pairing. Advertised as $90/person, we were expecting a full course meal. However, we were shocked to see each course was the smallest bite of food. The reason I didn't dock another star was because we bought some wines and our tasting went down to $45/person, which was more reasonable. However, we definitely had to stop by another place to get more food afterwards. Especially if you're being served a lot of wine, you need more food to avoid getting so drunk. It's my second time here with my boyfriend and his family who has been a member for so long (M. Marsh) and sad to say but they had failed again and this is within a 6 month period. The reason behind this is the first time my boyfriend got food poison , how you may ask well his father is a doctor and was diagnosed on the scene. The second time was today. They forgot our main course for our wine tasting which was the pork loin. We basically were there for 3 hours. They had no excuse but to say the board, what about the board??? The kitchen staff didn't read it and on top of that before coming here they knew that one of the guest is allergic to bell pepper yet they still served bell pepper on his food. The ambiance is nice, you can hold a conversation with your guest but you can also hear other guest chatting. The decor is very chic with a touch of Europe. The view is amazing. Me, the hubby and my cousin and her hubby came on a Saturday around 12 with reservations ( 90 min experience). We were delighted to find out it came with a food pairing and 5 tasting wines. When we arrived we were greeted with a palate cleansing tea ( I liked it but the cousins wanted more sugar in it lol). The hubby is allergic to almonds and they were accommodating in making sure there was nothing that would cause a reaction. Jordan our server was very knowledgeable about the winery and gave us the history of Le Cuvier. Blown away by the kindness of this winery! My husband and I came here for my birthday on a Monday. I was very sad because Le Cuvier only offers the full wine and lunch pairing on the weekend. Since it was Monday, we did the wine and appetizers pairing, which is offered daily. When the hostess and owner found out it was my birthday, they had the chef make the weekend only lunch pairing for me specially, and it meant so much! The chef even came to talk to us after and he was so kind and we learned a lot of good tips about grilling from him! This winery is a must in Paso! It is beautiful, the food and wine pairing is one of a kind AND each wine has its own creative story, which is so fun to read as you sip. Beautiful mountain-top views from Le Cuvier's outdoor dining setup during covid. Reservations required, as we found pretty much all wineries have been during these times. They take restrictions and safety very seriously. Once you arrive, somebody comes to greet you then your table is set up while you wait at your car. You are then shown to your table with all tastings and food laid out on the table. They utilize a "transfer table" to bring anything else to you such as water, as they do not take or place anything directly on the dining table once you're seated. The lunch menu changes approximately monthly, and is a very good deal for the quality. Their wine is at the higher price point, $75/bottle for non-members. When drinking a bottle of the Pentimento (red) at home, we felt it's best to drink with food. Goes great with steak, pizza, or charcuterie board. read more
