Let's get straight to it. The service was great, the bathroom was clean, and the tables were clean. It could use a little update, but that's not what I'm reviewing this time. We had the papas locas, quesabirria, and fajitas chilingas and of course corn tortillas! The basic chips and salsa were brought to the table. The salsa literally tasted like only black pepper. I thought there is no way anyone on purpose puts that much black pepper in a salsa. Maybe an accident? It was inedible. Kinda of scared us with the start. The next dish was good but not good. Let me explain. The papas locas are just fries, with some type of white cheese sauce, guac, meat, and sour cream. It just felt lazy. It needed something to tie it all together. It wasn't until they brought our mains, with the spicy table sauces that it hit. It needs some type of spice, to mellow out the richness and balance and meld it all together. The portion was great for the price. Maybe add jalapeños and you hit something. The mains on the other hand were dang good. Especially the birria. In this world of food trends, the quesabirria is the current star. Most places have their own version, but the top two mistakes, is that the make its either entirely too salty or they don't add enough spice and it feels more like a broth for soup rather than a true consume. This place did neither. The munchkin has never said any birria is as good or better than mine. Well looks like the day came. It was absolutely fantastic! The corn tortillas, spectacular alone, elevated this to the point it's probably in the top three birria tacos I've ever had anywhere! Bravo! The fajitas chilangas were great. But the problems I always have resurfaced from time to time. First, this was cheap bistec, they just seasoned it perfectly. NOT fajita. The chicken was good, and the chorizo and jalapeno were a great new way to have it. The problem is there was neither enough chorizo nor jalapeno to take it to the level of the birria. It was almost good enough, but with the beautifully executed corn tortillas, it was more than adequate for our hunger pangs. The charro beans I asked for were actually undercooked. That is a first for me. They are usually overcooked. They had decent flavor, just needed more time. The table salsas were also good. Just enough spice, and just enough heat. Not salty at all. I work stop by again if I was in the area! We had great dessert, but can't give them credit since it was a third party.

Their potato sausage and egg taco barely had any discernible sausage to it. It's the communal salsa bar that really makes the tacos extra special. They do have a fountain drink station, bottled soda on ice and a pot of coffee by the order window. You can get quite a variety of mixed drinks like margaritas along with numerous beer choices, although no local beers. Because of the value and sauces, I would definitely come back to this spot again. And just so you know, they do not have a public bathroom here and they are closed Monday. I cannot tell you how giddy I was when I noticed a Los Tios was here. I told the wife it was non-negotiable, and we would be eating here for lunch. For those who do not know, Los Tios is a restaurant that has a long standing existence in Houston dating back to the early 1970s. Even though I reside in the San Antonio area, I grew up in the Houston area, and have a very fond memories of Los Tios. As a tot, I shared many a good meal with my parents and grandparents. So yeah, stumbling across this was huge in my book! We arrived and were greeted promptly. They had the typical Mexican restaurant decor and big open floor plan. While walking to our table, I was digging the Stevie Ray Vaughan music playing throughout the restaurant. We put our name on a list, and after a brief 5-10 minute wait we were seated. We were greeted promptly by two nice waitresses. One waitress was in training and learning the ropes. They took our drink order and we were left to peruse the menu. Chips and salsa came while we waited for our drinks. Chips and salsa always tells the story if a Mexican restaurant will have good food. Knowing the quality of Los Tios, I was not worried. As expected, the chips and salsa were just as delicious as I remembered having them as a tot! We picked at chips and browsed the menu. On a side note.. When in Rome... You must get a puffy queso. This is one of their signature dishes you get here. It is an actual queso puff and not a cheap imitation taco shell flipped over with queso on top. This is the real deal. I ordered the lunch special of one puffy queso and one cheese enchilada. The wife ordered the chicken fajita tacos, but did not get a puffy queso. Her loss.... After a nice visit with the wife, and in good time, our food arrived. Very hot plate, so I went to knock out the puffy queso first. It was absolutely delicious. Crunchy, cheesy, and really good. After my plate cooled down a scarfed down the rest. All of it was very delicious. Not one spec of food left on my plate. The wife enjoyed her tacos. We paid our bill and made our way out the door. On the way out they have a big bowl of Andes mints, so I grabbed some before heading to the car. The entire experience was nostalgic and delicious. Everything was excellent just as I remembered it. If you are in Fredericksburg, I highly recommend you stop in and get you some good Tex-Mex. You will not be disappointed. According to local news, Los Tios is/was supposed to come to San Antonio. It's small but feels intimate not tight. I wouldn't call the place fine dining or upscale, but it's a step above casual. We were there for lunch and I felt fine in shorts and flip flops, but wonder if dinner is a different story. The lunch menu was mostly simple cafe sandwiches, salads, soups, and a couple different nachos/chips and salsa/chips and queso appetizer options. The Mexican food were primarily the daily specials the waitress rattled off for us. Speaking of, service was very friendly prompt, and helpful. Our waitress did a great job helping us figure out what we were in the mood for, offered substitutions and chatted us up on where we were from and what we were doing around town. Great staff.
