And hence there was very limited time for me to go over the menu to decide what I wanted. Nonetheless, I decided to go ahead and get the shredded beef burrito. You can go ahead and fill your own and put as much stuff in there but even with minimal ingredients it is quite a feeling size. The seating can get a bit crowded obviously during high peak hours.I decided to give this for stars instead of five because I felt like it was a little bit pricey for the place as well as the quality of the food. I would always give this place 5 stars before today... I am so disappointed. I have been coming here for years and wanted to stop in on a weekend I was in town and get some of my favorite sweet pork! We ordered chips and queso (something I have ordered many times before) and it was runny and chunky at the same time. I asked the people for a new one or something else to compensate because it was disgusting. They insisted that "this is the recipe" and would not budge. My boyfriend went up to them and asked again. I went with my usual- a salad with beans and chicken, extra guacamole (have you seen the tiny scoop that is used for the guacamole??), pico, and salsa instead of dressing. They actually charged me for salsa. Not cool, Costa Vida, not cool at all. The chicken was a tad tough and it was just meh overall. Hubs went with nachos and said it was good. They do use shredded cheese and so send the nachos through the warmer to make it melt. I, of course, think this is a good thing, however Hubs is a sucker for the cheese sauce that is ubiquitous on most nachos. We've had a weekly Monday engagement in Lone Tree which has sent us off trying different places in the area. I don't think we'll be coming back here. read more

Even done wrong, the food still tasted great, but I placed an order for 8 for a lunch meeting, gave two hours notice, and when I arrived, had to wait another 20 minutes past the scheduled time. Worst of all, they asked for names for each meal, but did not label the entres in any way. I not only had to pop open EVERY lid, but dig around with a fork to determine what meat and whose meal was whose! My wife and I found this place after several trips to Sky Ridge Medical Center (in preparation for the birth of our first child). It has now become a staple, thanks to great food, a friendly staff and a decent atmosphere. My wife gets the Mango Chicken salad (the small tends to be more than enough for a meal), while I always opt for the chicken burrito, with the medium sauce (sweet and spicy) both inside the burrito and smothered. What I like about the Costa Vida touch is they run the smothered burritos through an oven to give it that extra heat and flavor. Wahoo's still holds the edge on decor, but Costa Vida definitely delivers on the quality. We make a point to eat there at least once a month. And while our baby isn't old enough to eat here, I believe they have a great deal for families ... something along the lines of "kids eat free" on a particular day. read more

I've been coming here for 9 years and have never given it a review. I really like this place a lot. They have tasty food, friendly employees and a mostly clean dining area. No matter what entree I try, always get the sweet pork. I dream of that stuff. I've tried the nachos; salad; baja bowl; quesadillas and enchiladas. I've not had their burritos or tacos. The small size of their entrees are plenty for one person. I like that they put shredded cheese on the nachos and not melted cheese. The quesadillas can be quite greasy. Their queso; salsas and guacamole are pretty decent. The dinner employees are amazing and if you come regularly they will remember you. I really wish they would add a second baby changing table to one of the restrooms. Also, they really should fix their entry. Everytime you walk in and out air is sucked in. Fresh hand pressed tortillas, need I say more? This is literally the yummiest quick lunch option if you work around the area. Their sweet pork and ranch dressing is to die for. I've been coming here since high school and have had pretty much everything on the menu. While everything is good, I always find myself going back to the sweet pork salad. If you're not into pork, their chipotle chicken is also tasty. Trust me, their salads will fill you up. My boyfriend never eats salads and he gets salads here! They lay a tortilla on the bottom so it soaks up all the yummy dressing and meat drippings. I guess you can low carb it and omit the tortilla, but you'd def be missing out. I just skip the rice when I get the salad. I always get the tomatillo ranch on my salads. I would drink that stuff if I could. It's super tangy, slightly spicy, and has that great garlicky ranch taste. Oh did I forget to mention their queso?!? Last week my wife met me for lunch at Costa Vida, which is just across the highway from my office. Neither of us had visited this small chain that appears to have originated in Utah, so we had no idea what to expect. Upon arrival I was shocked at how crowded the counter service restaurant was. Taking a quick glance at the menu, I quickly decided on a chicken burrito while my wife chose the sweet pork enchiladas inside of flour tortillas. We each followed along the counter as our selections were prepared and we were able to pick the ingredients that we wanted to go into each. I opted for rice, black beans, chicken, cheese and what I think was Tomatillo Cilantro Sauce. It was a little hard to understand the offerings so I just went with what looked the best. I also had my burrito smothered, which added more cheese and the selected sauce to the top. From there the burrito is sent through a rolling oven similar to what you'd see at Quiznos. And finally some lettuce and pico de gallo was added to the side of the big burrito. The choices for my wife weren't as difficult. The enchiladas come with your choice of meat and cheese and then smothered with Red Enchilada Sauce and more cheese. The rice and choice of beans (pinto or black) are served on the side and again this dish is garnished with lettuce and pico de gallo. My first taste of my burrito was filled with lots of sweetness. This initially threw me off as I had never tasted Mexican food that was so sweet. I soon realized that I may have been given their Raspberry Chipolte Chicken. When I ordered I wasn't given an option on the type of chicken, and I only saw one offering, so everyone must be getting the raspberry flavored chicken. This isn't completely strange to me as I often use lemonade when preparing chicken for tacos at home, but the sweetness was very overwhelming in this dish. Once I found a bottle of Cholula I was able to spice the meal more to my liking. I'm also thinking that the sauce I had selected may have been sweet as well, since the sweetness didn't come out in my wifes enchiladas as much as my burrito, and she even ordered the sweet pork. We also ordered a side of chips and salsa to go with our meal, and were given an obscene amount of chips (a filled pan the same that our meals came in) and some pretty good tasting salsa. I was afraid that the salsa would be overly sweet as well, but it wasn't. So perhaps I somehow selected all the sweet ingredients for my burrito, and there are ways to create something that would more suit my taste. I'm not sure, and I'm not sure I will ever find out. I don't go out for lunch very often at all, and I don't think the restaurant competes with my favorite Chipotle burrito, even though they are quite different. read more

Costa Vida has recently become my favorite local fresh Mexican spot! They are definitely a step above most other fast food Mexican spots in terms of quality and freshness of their ingredients. They have daily specials where you can get the burrito of the day for about $7.99! I have tried the chicken and the sweet pork burritos and enjoyed them both! I slightly prefer the sweet pork because I enjoyed the sweet flavor and spices. The burritos are nice and big with fluffy fresh tortillas. They smother the burritos for you and melt the cheese and sauce of top while you order. This location is also pretty big and has outdoor seating which I enjoy. Their sauces are great (especially the Sweet sauce) and tortillas are made fresh. I've eaten their Fish Tacos, Cheese Enchiladas, Steak Tacos, Raspberry Chipotle Chicken Tacos, Steak Quesadilla and Smothered Chicken Burrito w/ Sweet Sauce and Sour Cream. All meals are served with choice of black or pinto beans and rice. Prices are reasonable, especially for the quality of ingredients that are going into your body. Homemade tortillas! That is definitely the highlight. This place gets BUSY during lunch and dinner. They have a unique flavor, it is more like TexMex than it is a Mexican restaurant. I would classify it more as a Fresh Mex flavor. I have had several things from Costa Vida, my favorite being the sweet roasted pork. You can get it on tacos, burritos, quesadillas, etc. The flavor is VERY good. Coming from New Mexico I would consider this to be barbecue in a tortilla. I ordered a green chili steak enchilada and I didn't see any green chili on it and it tasted sweet. My boss bought my team lunch from Costa Vida about a week ago. Since that time, I've visited the restaurant twice! I'm stuck on the sweet shrimp tacos... so freakin' good! I also tried the Tres Leche cake on my visit last night. So moist and delicious. It was the perfect portion size, but it was so sweet I still only ate half. I also tried a bite of my partner's sweet pork enchiladas. They were pretty good, though the pork was actually a little too sweet for my taste - it was like a pork mole`. As others have mentioned, the concept is very similar to a Chipotle or Qdoba: you pick an entrée type, pick your protein, pick your rice and beans, and pick your sauce and toppings. However, I wouldn't say Costa Vida is competition for the other burrito chains: the food is more like fast food authentic Mexican / fish taco hut than like a burrito chain. They also have a conveyor belt oven to melt your cheese and heat up your food. It's a nice option when you're wanting real Mexican food or Tex-Mex but don't want a full-service dining experience. The prices seem steep, but when you compare to other fast-casual concepts, it's pretty much around the same price point. Word of warning: avoid the Lone Tree location unless you like really crowded places and go to the location in Englewood instead. It's quieter, the line is shorter, and I found the service there to be much more friendly and helpful. read more

Our order somehow didn't come through, but the cashier figured out the problem immediately, took down my order from my email receipt, and had it made right away. She also gave me a free soda for the inconvenience. So if I was just rating the place on customer service, she'd have earned them five stars. However, they also serve food, and it's not great. I ordered a taco plate. The tortillas were so thick and chewy they could pass for mediocre pita bread to the untrained observer, the beans were tasteless, and the rice was somehow even more flavorless than the beans. We thought they were both okay, good enough to come back, but definitely could use some improvements to the flavor. Additionally, I went for the cilantro dressing and I found it to be too sweet. I get a similar item from their competitors and like the other version more. One additional note, this restaurant has gone to a payment system which automatically prompts you for a tip. Of course you can click 'no tip' but otherwise the lowest % they offer is 18%. You have to click 'other' if you want more options. I don't think fast casual warrants an 18% tip. We clicked other to leave a smaller tip, but it's just a little off putting. A strength for the restaurant is we went midday on a weekend and the line moved swiftly. While I like Costa Vida's menu and their personnel, their customer service at corporate is awful. Recently they switched to a new app, which I could never get to work, with little notice. I had 24 hours to get my points converted (a lot of them, basically a free lunch for my husband and me) once I switched over to the new app. Their new app provider Spendgo said they'd get back to me in 3-5 days. Of course, I lost my points, and that means something to a couple of seniors on fixed income. I complained to corporate's customer service and got a response that said I needed to contact Spendgo. I contacted Spendgo again, and they said I needed to contact customer service. Talk about a run-around. I did contact customer service a second time and got no response. All they would have had to do is apologize and offer me a coupon for a free lunch, and I would have been satisfied. They didn't care that I told them they were losing me as a customer. Too many fine choices for Mexican food in this area to make me want to go back, even though I love the Eagle, ID restaurant that we used to eat at. Using coupons and discounts, we ate there about once every two weeks, so they have lost a regular and valuable customer. read more

BAJA. Now what do you want? A burrito?" He told me in a condescending voice, and I said, "No, a BAJA bowl," clearly getting annoyed at his customer service. He made me repeat everything to him again even though he didn't get that far into my order the first time and he proceeded to keep talking in Spanish to the other employees who all started to look at me. This was my first and last time coming here. Not too bad.... I have had a few better and a lot worse; so it gets three stars. The chicken burrito is good but once you dive into it you realize that a lot of it is the tortilla and not as much filling. BEWARE!! I visited Costa Vida today and was charged 20% more than all their posted and printed menus stated. When I questioned the employee, he called the owner who said he raised the prices but hasn't told anyone yet and hasn't removed the printed menus and hasn't changed the electronic menu on the wall. The owner instructed the employee to charge me the new pricing anyway. That is NOT good customer service or really even very ethical.
