This isn't some dressed up "lobster salad" nonsense to cover up old or frozen meat, this is the real deal with only the slightest hint of mayonnaise to go with the sweet taste of very fresh lobster. The lobster roll as it should be: fresh, simple, unassuming. It goes without saying, but I've seen too many people get fooled: You should make it a rule never to have a lobster roll at a place that doesn't have any live lobster on the premises (look for the tank).
