So the ribs were extremely hard on the outside and dry. I thought I was going to choke in my hotel room by myself. The pork was very dry and had a weird taste like it was reheated. The Mac was over cooked and mushy. No flavor. The fries didn't seem to have salt either. Normally I don't waste food but I couldn't eat it. Ended up just eating fries and cookies. I've eaten BBQ in TX and this just wasn't it.

Chef Brian told us it's something like a 20-hour process, which definitely shows. A quick heads-up: they do not have mustard, ketchup, ranch, or pickles. If those are must-haves for you, bring them along. Service was good, especially considering it was essentially a two-person operation. Chef Brian was upfront that things were running a bit long due to earlier guests, which we appreciated. We took the opportunity to grab a drink nearby and came back, no issue at all. The food was outstanding. We ordered the fried chicken dinner with fried potatoes and collard greens. The chicken was phenomenal: crispy, juicy, and full of flavor. I initially assumed a pickle brine, but Chef Brian explained it's actually the herbs he uses that give it that depth. Whatever the method, it works. Excellent food, honest service, and a smaller, no-frills space. You can sit for hours and take in the pictures and memorabilia (we did haha). There's a gift shop down stairs near the old mine shaft (they're pretty expensive but it's a neat shop.) We were there for an early dinner. The big 24oz "Big Ass Beer" is only $10! I had the Tombstone Tea (basically an spiked Arnold Palmer - very good!). We shared a burger. It was big! Well cooked and plenty of fries. It was karaoke night. We didn't participate but there were some "regulars" who sang. Very entertaining!
