Last night on a busy weekend night, my son and his husband treated me to Cowboy Prime to celebrate my son's birthday, as well as my own (since we are two days apart) and I am SO glad they did!! The martinis were wonderful, and the sushi is the best in town by far. Our server Christen was such a delight! We absolutely adored having her, she took great care of us all evening. She recommended great drinks and the young man Jordon was knowledgeable behind the bar. They were both so kind and fun, it seems Cowboy Prime really put together a great team! I attended a work meeting for dinner. This place is very nice! Staff go above and beyond to make sure you feel welcome. Food is wonderful! Most of our table had different types of steak they really enjoyed. I had chicken that was very good-tender, well cooked and seasoned. We had tartare both beef and tuna that the others enjoyed- I don't eat. Also had Rock Shrimo that was fabulous- could have eaten as meal. Cocktails were wonderful- try the Midland Sunset if you like sweet drinks. Restaurant is just way too small! We went in a Tuesday night and had no where to sit to wait for our table. Bar area had only a few seats at bar, no standing room. Only 1 person restroom with location on way to kitchen so no good place to stand to be out of the way while waiting. Let me start off by saying Cowboy Prime is maybe my number one restaurant to go to if I want my taste buds to go crazy. The food is amazing. Every time I go in there. I get nothing but great service. The people are always greeting me. They're fast they pay attention. If my water is low, they come and refill it as soon as possible. The ambience of the room is just amazing. I like how they have lights everywhere and the bar is so nice and you can even see people making the food and it's very nice to be in and it fits perfectly. The setting is perfect. Consistently delicious. I love the Beet Salad, the lobster Mac and the peppercorn filet every single time. Best Sushi you will find in the Permian Basin. Sometimes I come just for the sushi. I know I said best sushi in the Permian Basin but honestly we just had sushi at a high end restaurant in Boston and I was disappointed because it wasn't as good as what you can find here. We sat at the sushi bar without a reservation. No one brought us water or menus for a long time and we finally flagged someone down and they seemed like they hadn't assigned a server to the sushi bar that night and several people ended up serving us over the course of the evening but we could tell it wasn't the area they'd been assigned because they seemed like they were going out of their way to attend to us. The sushi salad appetizer was amazing; the dressing on it was delicious! Our entrees were also very good and they were even able to accommodate for a lactose intolerance change to an item by allowing us to switch a dairy based side for a plain vegetable option. We liked the midland sunset drink a lot but The Manhattan was watery (and the outside of the glass was covered in syrup...) and the yes ma'am I was not able to drink at all because it was a glass of pure syrup I tired but I just couldn't get it down, left it 3/4 full. What's not to like! In casual traveling clothes we luxuriated in the beautiful and inviting fresh decor. That was just the beginning because our server, Dylan, took great care of us. Midland's newest high end restaurant, Cowboy Prime, certainly lived up the the hype. My parents, husband and I went last night and had a fabulous dinner. I had the lychee martini--it was super refreshing and not overly sweet. We had the carpaccio, octopus, and tuna tartare for appetizers. We loved the tuna, and the octopus was unlike anything else we have in Midland. The carpaccio could have used sauce or something salty or acidic to give it more dimension. I ordered the ribeye for my entree, and it was cooked to perfection. The steak was very high quality and worth the $82 it was priced at. My husband loved the beef stroganoff, and my mom enjoyed her filet as well. I also got the truffle fries. They were good, but also could have used some kind of dipping sauce. For dessert, we got the Baked Texas and the molten chocolate cake with raspberry sorbet. Both were fantastic, but I particularly loved the cake and sorbet. The only issues we encountered resolved around service and time. It took forever for my husband and dad to get their first drinks from the bar--like 45 minutes. The speed of the bar did improve later. We also went long periods of time without being checked on by our server. Because of this, it took us three hours from the time we arrived to the time we departed. I understand the restaurant is new and they're still getting servers trained, so I didn't count this against their rating. But I would hope this improves within the next few months. If you go here, do not plan on it being a short dinner. I definitely plan on coming here again, and I'm excited to see this new restaurant thrive in our community. read more

We have come here several times for several special occasions, and twice we have been disappointed. This week we planned a weekend to treat my sister and her husband and our experience was rough. The food was cold and rubbery. We got the seafood pasta special and one of the steak options. The steak had no flavor and was cooked badly, tasted like they just put it in the microwave. Service and staff were fantastic! We also waited at the bar for our table and there was a 40 something woman who had been WAAAYYY overserved who proceeded to harass us over our outfits, asking a rude question filled with curse words. I was sad that the bartenders had to deal with her and that management hadn't asked her to leave an hour early. Not a great way to start a night when you know you're going to spend $400+. Ultimately, just isn't worth the price for us anymore, we will just go next door from now on. read more

My 2nd time here, everything was delicious! The service is amazing. Although they made a mistake on the temperature of my brother in laws steak, they quickly corrected it and brought him a complementary snack while he waited. The ambiance is always amazing! Anyone who prefers chain restaurants, over actual quality independent restaurants is delusional. You pay for quality. A steak from Walmart is going to be cheaper than one from Midland Meat Market. My husband and I went to Cowboy Prime for a special meal out on Sunday Jan 13. Gabby was our Waitress and she was so attentive and knowledgeable about the entire menu. We splurged with some Dom Pèrignon which nicely set the tone of the meal. We started with the Blue Point oysters in the half shell with the full set up and honestly, they were some of the best ones we have ever had! They were huge and tasted of the ocean. We also had the octopus appetizer which was also perfectly prepared and had a great roasted red pepper coulis that I could just eat by the spoonful. Other highlights were the amazing lobster mac and cheese which was everything we could hope for and the cook on the lamb chops which made you want to gnaw on the bone!! The ceasar salad was great and the scallops with asparagus risotto with shrimp and the lobster. Finished with the flaming Texas dessert and that delicious Italian meringue and creme brulee and espresso shots. Wow!! The lighting was perfect, the music was appropriate and upbeat and our seating was very comfortable. I had so much anticipation coming and it was worth the wait! The server was so polite and helpful in making selections. I had the bloody cowboy and it was a little sweet for a bloody Mary but good. My second drink was amazing bees knees! The lobster was phenomenal for my Benedict! Hubbys burger and fries were super yummy too! He enjoyed the octopus too though it wasn't to my taste. Nothing but great words about cowboy prime. Always amazing. It's now a regular spot for us.

It was terrible. The food did NOT justify the cost. We went for our anniversary and everything was so bad. We tried a little bit of everything. We did have a reservation. We were seated and our waitress asked for our drinks right away, we asked for a few minutes to look at the menu and decide on our drinks and she seemed irritated or something. She never came back. Another waiter walked by and asked if we had been helped and we said yes but hadn't seen her for a bit. This other waiter went and grabbed her for us. I asked for a drink recommendation and mentioned I like sweet drinks, she suggested something floral. It tasted like perfume. They have 3 appetizers listed on the menu and we asked for 1 of them. She said they were all out. This made no sense to us since they only had 3 options and our reservation was before dinner time. We asked for another appetizer and she said she would go check if it was available and asked if we had a backup. I said there are only 3 options on the menu. She went to go check and came back and said it was available. We waited an hour for our food. It was not busy. Our appetizer was the octopus, it's really expensive and you get a small portion of octopus on top of some really weird looking and tasting potatos. I didn't like the octopus but it was the first time i have tried octopus so I don't know. She took our silverware when she picked up our appetizer. When our steaks came out we asked for silverware and she brought us a tiny knife that we really struggled to cut our steaks with. Not sure if it was meant for that. The truffle fries tasted like dry regular fries. We ordered our steaks medium and they came out very rare. We told the waitress and I'm guessing someone who was the manager came along and offered to take them back and cook them longer but we declined because we are weird about people taking our food after we complain. Plus the steaks were terrible in general. Had absolutely no flavor. We had ordered the bone-in ribeye. It was just a cooked steak. No flavor, nothing special. She seemed annoyed and she offered a complimentary dessert and we got the baked Texas. I was not a fan of that either. The manager came back and asked how it was and we said it was fine because we just wanted to get out of there at that point. Pretty sure I heard her walk off and say "awkwaaard". I guess she could tell we were lying about it being ok. We did get to-go boxes for our steaks because we were gonna try and re-cook them at home but we ended up throwing them away and decided it wasn't worth our time to try and salvage them. Aesthetically pleasing, no doubt! But the food is sub par and the waitstaff is nothing special. I ordered an old fashion for $16.5 only to find out that waitress was the one to make it. Not a trained or skilled bartender. The drink was underwhelming. I gave the waitress the three options I was deciding on and had asked for her recommendations. Naturally she steered towards the more expensive of the three. However, her knowledge of the menu and the difference in complimenting sauces wasn't great. However, I went with her recommendation and got the steak frites. I asked for a medium prepared steak. What I received was half rare and half well done. The troubling thing with this is, this steak comes cut for you. Which means the kitchen staff saw how under cooked the steak was and still sent it out. The fry's that came with this were potato crumbs and not fries at all, almost as if it was the bottom of the bag. The menu had this listed for $36, I was charged $41. Mistake? Maybe. But this is the third time this has happened to me in this town. I'm starting to suspect sketchy business practices. I only finished half of this meal and waited several minutes for my waitress to return. There were only maybe 4 other tables on a Sunday at 4:00pm. When I was asked if I enjoyed it I replied with "not really". And nothing more was said or asked. My takeaway from this is...if your going to present yourself as a fine dining establishment, then you need to follow through with more then appearances. Wait staff needs desperate training and to be taught to keep weekend plans and gossip at a minimum while on the floor. The manager needs to spend more time visiting tables then gossiping with the waitstaff on the floor. If someone is willing to spend $94 (after tip) for a late lunch and a single drink then they deserve the experience this establishment is trying to pass themselves off as. This place wasn't for me. I've had the privilege of traveling all over the world and have had some great restaurant experiences. This wasn't much different then an experience at Texas Roadhouse or Outback. read more

Burger was great. I got the aged prime burger and it was so so good. The chips and fries were both excellent. My husband got the steak frites and it melted in your mouth just like a filet. Our server/bartender was Dustin and we LOVED HIM. Very nice and knowledgeable about the menu. Gave us all some great recommendations.
