Today I had literally the worst take out service I have ever received from a restaurant . I ordered 5 chicken fajita meals at 7pm , was told on the phone they are a little backed up and it would be ready in an hour to and hour and 15 minutes . Well at 8:45 they come out and say we are sorry we are out of fajita chicken . And they only have steak . So I suck it up and deal with it . Finally at 9:10 ( ten minutes after they close my order comes out ) . The entire time I'm there other people are getting their orders . And people are being sat for dine in . This is normally my go to for Mexican cuisine but after this experience with not even so much as an apology or a offered a glass of water while I wait . I will never return . read more

Was in Dade City yesterday and noticed Coyote Rojo #3 . Liked the name so we stopped for lunch. I was born and raised in Tucson and my wife is Colombian, so we know a little about Mexican/Latin food. Everything from the chips and salsa, my mole chicken enchilada to my wife's tamales were freshly made and delivered with a smile. Nothing from a can or box here. My wife likes Cerveza Michelada which is a weird (to me) concoction of beer, Clamato, lime, soy sauce, Worcester sauce and hot sauce with salt and chili powder around the rim. Not only did they know what is was, she said it was one of the best she ever had. We were too stuffed for dessert. Imagine my surprise to find #4 in Spring Hill. This place is excellent. I can safely say it's the best Mexican place in a 10 mile radius. The wait staff is nothing short of impeccable. Everything we've tried here is delicious. But I would definitely recommend the steak fajitas and the shrimp (which are huge) fajitas. My 10 year old is a picky eater and devoured the steak. We'd eat here every day if we could. Went there last Friday around 6:30 for dinner we were greeted and seated promptly. It was very busy the place was full. We ordered our drinks three different margaritas they were a very good. And we ordered our appetizer and then we waited and waited it took about 45 minutes for the appetizer to come to the table they kept offering chips and salsa as we waited. They kept telling us the food was coming. It finally did a hour wait time. At least it was worth the wait our server was very busy but kept checking on us. The food was excellent no complaints my spouse and I had the chicken steak and shrimp fajitas for two it was done to perfection and it was more than enough for both of us and I'm a pretty good eater. Mom also had a chicken fajita and she enjoyed it as well. We will definitely be back good atmosphere good music conversation will make the wait seem to go faster. Today we are at Coyote Rio. I was so damned disappointed. They put oregano in Pico de Gallo. Who put Italian seasoning in Pico.They need to go back to the Coyote Rio Bushnell establishment recipes. I don't care for their food much, I can't stand the way we are charged for for almost any little changes we make to our food and I find their food to be boring tasting some of the food either comes out dried out or just overcooked. I do like their ambiance and their wait staff are really good. I will say that there a couple of things that I have tried are good, but I feel like you can do better at a different restaurant, try the one at Spring Hill Drive and Kass Circle, next door to the post office, they're excellent. read more

We were told they have only been open 9 months and they have seen a drop in clientele since the snow birds left. We had great service, which we should have since we were the only customers. We ordered a frozen peach and strawberry margarita, I must admit they were great and I have a buzz as I write this! My cohort in food crime, aka my husband ordered the beef chimichanga. I love cheese, so the cheese quesadilla was for me! What makes one of those better than an another??? It's all about the cheese and this one was generous! I asked for tomatoes, guacamole, sour cream and lettuce on the side. They could have given a little more of these but I will know to ask next time. Rice and beans as sides were good. Best Mexican Restaurant we have been to in the bay area. The mahi mahi dinner is flavorful, colorful, Wonderful texture and cooked to perfection. I have had this fish dish twice now and it has been consistent. My daughter ate the giant steak burrito without leaving a bite. The chips and salsa were spot on and everything was seasoned correctly. Came here today with a group of about 30 from our club. They put us in a secluded room that held everyone comfortably. Never being here before I did not know what to expect with a large party and how everything would go down as far as service and food quality. Well, I was pleasantly surprised how things went with our lead server,Pedro, doing a great job making sure everyone had chips and salsa right away and taking drink orders immediately. The drinks came out fast,remember it's 30 people, and then he went on to each and every person taking their order making sure he got it right and explaining it if we needed to know more about what we ordered. I ordered the beef chimichanga and my wife the taco salad. Both were excellent and well priced.I got way too much food on my plate and it was hard to finish it all. And it was only about 12 dollars. The drinks were very good but maybe a little strong. Everyone in our group was well satisfied and the restaurant passed out Mexican hats so our group could take a photo with them on. I plan on coming back soon, maybe just the 2 of us, for another great meal. It's hard to find good places in Spring Hill to eat, but this place is at the top of our eating out destination.
