I have gone to this spot two times this month, taking a different son with me each time. The food is good, but serving size is small for the price. At both visits the service was very slow. First visit was about 10 minutes, 2nd visit, last night took 20 minutes to get a salad, tacos, and black bean burger. There were just a small number of people in the restaurant and quit a few people in the kitchen. On our first visit I left without checking my order, then when I got to the park, I was missing my salad fork, my salad dressing, and my son was missing his avocado that he paid extra for. This is the one that started it all. I remember when this just opened. Mr. Cubby himself at the helm, sweatin' away, living the dream, and just trying to the best Chicago beef sandwich that he could. Did he dream that the empire would have expanded as quickly as it has? With locations all over the Wasatch Front, it's been fun to see how the hard work has been paying off. At the heart of it all, however, is the food. Before you write it off as a place with big ol' sandwiches packed full of beef, take another look at that menu. Oh, you'll find the signature stuff on the menu, for sure. That logo is a big ol' hunk of meat, after all. But it's really surprising how many other options they have. I've been to a few locations and seen them selling their fair share of salads, and you'd do well to give one a try. Maybe compromise--get the tri-tip, so you have a little beef and a little greenery. This location has its idiosynchrosies. It's a little cramped, for sure, at least where you order. There's a winding line, and you have to cross the entrance and the immediate counter that faces you in order to hop in. Just follow everyone else, you're probably going to have a line anyways. I've NEVER had a salad here I didn't like. Seriously. I love them all. The Kale Citrus, the Tri-Tip, the Wild Rice, the Beet/Citrus; they're all great. They are perfect for a day when you want to be healthy, but you also want to NOT feel like a rabbit, because you're craving a certain heartiness. The salads are loaded with nuts, cheeses, fruits and veggies. The two salads I have on repeat are the Tri-Tip (tender beef strips, cherry tomatoes, almonds, feta, Craisins) and the Apple/Chicken salad (apples, blue cheese, grapes, candied pecans). I also always, always order the sweet potato fries. I get both the chipolotle fry sauce and the regular. They're crinkle cut, crispy and lightly salted. Very frustrating especially if your hungry. 50% of the time it's fine and there semi fast but the other 50% is what ruins it. Yes, it's exactly what I had hoped for in a college town. Cubby's delivers the goods with their original and Tri-tip. Their sandwiches are incredible. They're worth the stop from wherever you're at in Utah. I've been to Chicago and had similar beef sandwiches in the area but Cubby's hits the spot and tops them, most of them at least. Only 4% of my reviews are for 5 star food. If DP Cheesesteak can't get one for an excellent rendition of a cheesesteak, how does this place rate better? They still have flaws. It's not quite as good, to me, as JohnnieBeefs, but in it's own way it's every bit as good. The entire experience and larger menu is better. Also, it's nearby. I like that. We need more places like this in Utah County. I was thrilled to see it packed today. This time around, the bread was better. The beef had more herbs and spice. The giardiniera left a tingle on the lips afterwards, but I think it's still too tame. However, I'm not likely the target market. I don't expect locals will allow it to be full strength, so I'm not going to hold it against the restaurant. Sometimes a place just has to make adjustments. This one is reasonable. They've found a good balance. My only nit is that I still want a bit more juice to be soaked into the bread when it's wet. This time around, the giardiniera was pretty heavy on the oil that dripped out too. I think the only real issue I have is it's too dry and they still don't have an order of fries for one person. I brought a friend. He thought is was a great sandwich, but he commented, without me saying anything, he'd like a bit more juice too. Cubby's... you're breaking my heart. I have loved you since the day you opened and I sauntered in with my buddy Leland. I have been a devoted Cubby's missionary since then, even when people have had a rough visit here and there. I go through phases... for a while it was a dragonslayer and rosemary fries every time. Recently, I've been loving on the beet salad with steak added. I get the walnuts switched out for pecans because I'm allergic to walnuts. They won't kill me, but they give me a headache and make my throat and skin itch - not a pleasant experience. On my last visit, my salad came without the steak I added and paid for. I hate being "that person," partially because it's annoying and partially because I'm an introvert but I'm a hungry girl so back to the counter I went. They apologized and added the meat. NBD. I dove into my salad and a few bites in my throat started to itch. Upon closer inspection, I saw that there were walnuts in it. Back I went again (reluctantly) because I didn't want a headache and a case of the itches for the next few hours. They were very apologetic and offered me a free dessert - a bit frustrating, but a classy enough response. Today I went in again, confident that I'd had a weird fluke of bad luck. As I was ordering, I noticed that they charged me $3 for the extra meat on the salad rather than the $2 quoted on both displayed chalk menus in the restaurant. When I pointed it out, the cashier deferred to someone who appeared to be the manager who then stated that "the menu was old." And then walked away. Not classy. It kills me, because this is one of my last meals in the state and I chose to come here because I love it so much. Combined with my last experience, I wasn't impressed. Yes, just to clarify, they also put the same fresh and quality meats in their salads. If you're looking for a sandwich or burger (or again, a salad for that matter) that doesn't taste like its got cheap meat that's been sitting frozen for years and then thrown into a microwave, later to be tossed under a heat lamp for hours (IE if you want something that's more local and fresh tasting), then you'll be more than happy with what they serve up here. The beef and chicken here were indeed fresh tasting and delightful. I must say, not only was the food tasty, but it was served swiftly as well. As for the pricing, I wouldn't call it cheap but it was indeed fairly priced. For two people that got individual entrees/drinks and one small fry to share, it ended up costing just over twenty bucks. While it wasn't quite as cheap as I was originally hoping for, it was still well worth the ticket and I'll surely be coming back soon! As for the decor and ambience of the establishment, I would describe it has a Mid-Western styling mixed with a minimalist approach, with a sprinkle of modernism. This place is fantastic lunch place. It's very unique to Provo. You walk up to the counter to order. The line was pretty long at 12 pm, but it went quick. It only got longer as the lunch hour went on. It just goes to show how popular this place is. They do have salads, but they are known for their beef sandwiches. I had a tri-tip sandwich accompanied by 1/2 sweet potato fries, and 1/2 rosemary peppered fries. They were both amazing. I would choose the sweet potato fries over the rosemary. The beef was fresh, tender, and tasty. It was such a good sandwich. Not too greasy at all. Their spicy BBQ is equally sweet. I really enjoyed it. I got a butter pecan whoopie pie for dessert - it was soo good. The place is really casual and kind of rustic. The decor really works for them. The front of the house was very clean. You can see the food cooking and the grill area looked very clean, too. It has a couple of TV's in the dining area. It's a pretty small place. I would come early if I had a group of 4 or more. The staff was polite. One thing I did notice was that there were maybe 6 guys on staff when I was there at lunchtime. I didn't see a single female employee. I thought this was very strange seeing that the population is about 50/50. I'll check out the demographics when I come back again. I will definitely be back. read more

Provo, you are lucky to have such an establishment like Cubby's. Tasty, fresh, and a variety of food options. Cubby's brings a flare to the Provo food scene that is different than most. My wife have been coming here more recently to help out with our "eating healthier" goals.
