I didn't take any photos of them before, but please take my word for it. Tucked away in the back of a gas station on Fruitvale & Norris is a hidden gem. I have been a customer for over 20 years and will be for the rest of my life. This place is owned and operated by two two brothers Tyson & Jaren. At one point I lived less than 200 yards from here and would be buying meat at least 2-3 times a week. I have since moved to the complete opposite end of town and don't get there nearly as often as I should. Somehow I get almost giddy when going in and have been so focused on my upcoming meal that I have completely forgotten to leave a review. Shame on me!!! If your a fan of high quality meat this is a must go kind of butcher shop! For years they carried Harris Ranch (and still do) before a lot of the major chains picked them up. They now also carry Snake River Farms (look them up) one of the elite cattle breeders in the world. I guarantee you cannot find a better cut of beef anywhere in Bakersfield! The brothers are extremely knowledgeable and passionate about what they do. They will ask you how many people you intend to feed to ensure no one gets left out of the meal you are preparing to serve. They will ask you what method you intend to cook with and provide instruction whether it's grill, smoke, bake or fry. They will even write the instructions down for you. The meat selection is great with options like Cordon Bleu, stuffed Tri-tips, Fajitas, and much more! The selection of sausages is unmatched. Tip: the Apple sausage is incredible and if it wasn't for the texture you would sware you are eating apple pie! Some things to consider on your first trip are the Killer Griller, Blue cheese stuffed Tri-Tip, and of course the Apple Sausage. Was very disappointed with this place. I've heard a lot of good things about this store. However, yesterday I asked my fiancé to get there and purchase some meat after his job. He bought two pork chops (16$) and two chicken breasts (11$). He isn't that good at grocery shopping, however, this place had an amazing reviews, that gave me a trust. When I opened pork chops today, I was shocked. The meat not only had areas with the brownish color, but also smelled terrible and was slimy. Didn't opened the chicken breasts yet, but I'm already very sad. Don't understand how people may sell something like this to others, especially meat? A friend of mine sent me here to buy Tri tip. This place was not on a side of town I frequent. I was skeptical from the beginning. Once in the place, I was warmly welcomed like they knew I was coming! I told them I needed 4 Tri tip, and was told I should buy a package of six. The service was phenomenal! This butcher shop is fantastic! Wanted to try smoking a pork butt for the first time! Walked in to purchase the pork butt, however, they were all sold out. The butchers behind the counter said I could use bone in pork loin and it would be the same thing. I took their advice and gave it a try. Those guys were right! I went in looking for something special for our anniversary, and was not disappointed. The butcher was amped up to help. He recommended a beautifully marbled ribeye, seasoned it on the spot, and happily gave advice on how he would cook it. He even took the time to share photos of the same cut of meat he had just cooked the week before, just to show how good it could look. My wife and I have pretty much given up eating beef but today found cutting edge and bought two ribeye steaks as well as some pork chops. We ate the steaks tonight and they were unbelievable- tender, flavorful, perfect texture, the way I remember beef from a long time ago. Were they expensive? Sort of, but a lot less than having a mediocre steak in a restaurant. Anyway, how does one measure extraordinary taste? I'm anxious now to try the pork chops -- maybe another review. But these steaks deserved their own review. We love to bbq and this is the only place we buy our meats. The tri-pepper sausage (aka crack sausage) is so addictive! All of their sausages are made in the store and I think we've tried them all. The tri-tip is as high quality as I have had, we have also had some of the steaks. Prepared properly they are so tender and flavorful. Yessss, I've been going to Pounds Market for over 30 years, its been at least 20 since I bought anything at the meat market. I just did yesterday Boy O Boy! it's phenomenal. they have excellent cuts. Even the elusive and rare dry aged bacon wrapped filet! Now if they would carry the bone in variety! The basque sausage was excellent! Also tried the blue cheese sausage, huge hit as well! I saw stuffed tri-tip, three types, as well as a behemoth Killer Griller. I will definitely be going back to work my way thru the case. They have baskets, and special cuts available as well. Previously we have had some not so good luck with pork chops (not from here). We went in for our usual weekly visit to get items we always get, Killer Griller, Sirloins, Chicken, Boneless BBQ chicken leg/wings, skewers, kabobs, etc...
