    There was a decent size line that took about 10ish mins around 12:15am on a Saturday. The meat from Lampredotto sandwich (€5) was melt in your mouth. Worth trying because it's unique and local, but would not say it's a staple that I would go back for. Also wanted to try the roast beef plate (€9). It came with slices of bread (which you can ask for more for free). I didn't, as the bread is pretty tough and dry. It works well as a vehicle to soak up the oil/meat juice/soup, but not as a stand alone. There is some seating on the side. They take card.

    Da Nerbone is located inside Mercato Centrale. You won't miss it because it's the sandwich place in the corner with a long line. We got there on a Tuesday at around 1:15 and waited about 15 minutes. Since this was our first stop in the market and we wanted to try other things, we only got one panini to share. We had the classic lampredotto sandwich (spicy). Immediately after the first bite, we wished we had ordered two. The tripe was so tender and the sauce was really flavorful. It comes smeared with a green and red (spicy) sauce, which I'm sure was probably some sort of herb (parsley?) and chili sauce. Whatever it was, it really made the sandwich. It's a messy sandwich, but worth the trouble. Just make sure you have plenty of napkins and some wet wipes on hand for the aftermath.

    I had a friend recommend this place and claim it was the best things she's ever tasted, so I had to come by! By chance, we stumbled upon this in the Mercato Centrale and just followed wherever the line wrapped around. I was so excited to try this. The menu is all in Italian, but honestly everything on the menu is pretty good. They're known for their lampredotto, as it is a typical Florentine dish. It may not be for faint hearted, but I think it's very worth trying. A lampredotto is essentially the stomach / triple of a cattle. The meat is braised with a bunch of veggies and makes it super tender and flavorful. The bread is sliced in half and hollowed out, so the juices can be absorbed but the sandwich itself won't be too dense. Everything comes together with a salsa verde and hot sauce. Everything coming together is a flavor bomb in your mouth. My friend and I enjoyed this meal so much, we had to come back again! Unfortunately their hours are only until 3pm so you would def have to swing by here before the lunch hours are over. The sandwiches are a little cheaper than the plates, because I think the portion for the plates are a little bigger. Both are pretty good!

    During our tour of the Central Market, stopped by this iconic spot for a quick lunch meal. The lines are usually long, the ordering process a bit chaotic, but things actually moved along fairly fast and we were seated with our food in no time. Had heard such good things about the lamprodotto sandwich (i.e., shaved and slow cooked tripe), but my wife chickened out at the last minute and we did the porchetta sandwich and a risotto dish instead. Both items were really delicious, but I see why folks say the bread can be a bit dry, so the extra meat juices are critical to making the sandwiches easier to eat. Glad we tried, but not sure we'll be returning to this spot.

    I had had this place bookmarked for years but never went because I didn't think my wife would be into it. On our most recent trip, we had our lunch plans messed up and needed something in or near Mercato Centrale, and then we noticed that they had pasta and other non-tripe dishes. We were both really glad it worked out like this. The pasta was excellent -- not top tier, but really, really enjoyable. The lampredotto sandwich was even better -- I get why people from all over come here for this. But to me the star was actually the porchetta sandwich, which was just perfect. In the states, a messy, liquidy sandwich like this would fall apart after a couple bites, but this is the kind of thing Tuscan bread was made for. The insanely crunch bread, perfect porchetta, and whatever else they put on it just worked so incredibly well together. This sandwich will have to be on my todo list next time we're in Florence.

    We made it to try the famous lampredotto in Florence ! For me it just wasn't my thing but I had to try it for myself ! Got to try it for yourself while vacationing in Italy!

    Da Nerbone specializes in lampredotto which sounds unappetizing, but definitely worth getting here! Lampredotto is considered a traditional Florentine dish made of tripe, the cow stomach lining. The lampredetto name is derived from lamprey eels which has a resemblance to the tripe meat. For this dish, they cook it in broth with tomato, onion, parsley and onion until the meat is velvety smooth. While there is an option to have this as a sandwich, I decided I just wanted to enjoy it as a soup. The person prepping the dish picked out several pieces of tripe to slice up before drowning it with the broth. In addition, they gave two sauces, one was like salsa and the other was like chimichurri. Getting that little extra spice from the salsa with the brightness of the chimchurri really adds something to the meat!! It was the one dish I left Florence thinking I had gotten once more~! While there are plenty of other places at the Mercato Centrale that now offer the lampredetto, it is worth waiting to get it from Da Nerbone! Please note the hours! Only open in the morning to lunch hours. The service was pretty fast and efficient! Overall, Da Nerbone is worth getting for the lampredotto to get the full Florence experience.

    On the first floor of central market by the main entrance. Get it for lunch, but be prepared to wait in a long line and bring cash. Get the lampredotto sandwich with the salsa verde and the boiled beef mixed plate. We came here twice. The first time I thought I got the stracotto but I was mistaken. The stracotto is a healthier version of a sloppy Joe. It was fine but not amazing like the boiled beef mixed plate. There is seating next to the stall or go upstairs to the food hall where it is more lively.

    This spot is a must stop when visiting Mercato Centrale. There will be debates about who has the best Lampredotto but for sure Da Nerbone has earned their place on the top/best list. They stay busy so that should be an indication. There was a line around 1:30 on a Thursday but it moved quickly. They do offer pasta and salads. That said, its all about the Lampredotto but not to be overlooked are the Bollino (boiled, juicy, fatty tender beef sandwich), and Stracotto (beef cheek stew sandwich) to name a few. Ordered the Lampredotto and it was excellent! The broth that the Tripe has been cooked in is soaked up by the bread which gives it the just right soft texture. So rich, saucy and the Tripe is so tender. Paired it with a Greek Salad and house red wine. Perfect! Service is friendly, that said, have your order ready as this is how they keep the queue under control. Don't miss this Florence gem that's been around since the 1800s!

    Si... Oui.. Yes.. Expect to wait in line or be loud to get your order. This eatery locates on the first floor of the mercato centrale where the locals go to buy their groceries and dried goods. Don't be scared of the ingredients if you come from a country (eg. The US) where eating offal is not common. Actually, it took me a full 24 hours after reading about it to "man up" to give it a try. Holy smoke, it was so good. So tender and juicy and not gross at all. For 5 euro, you get their Lampredotto sandwich. You can also get a place if you don't want a sandwich. Give it a try before you decide that you don't like it.

    Da Nerbone is housed in Florence's Central Market and is well known for its Panino con Lampredotto. This basically translates to tripe sandwich. My wife and I quickly found the stall which unsurprising had a long line to order. We waited about half an hour and found some community seating nearby after we got our food. OMG! The sandwich was phenomenal! Hearty bread was filled with melt in your mouth flavorful juicy tripe. This could have been the best tripe I have ever had. We also ordered the pasta of the day: Tagliatelle alla Boscaiola. This pasta also super delicious! Savory pasta was covered in a creamy mushroom sauce and mixed with briny black olives. Da Nerbone is a must visit.

    The roasted beef plate was delicious here. I'd like to try it again with their green sauce. I enjoyed the tripe as well. For a quick bite that's very different from most of what you will find around, this is definitely worth trying. I enjoyed it a lot.

    If you love tripe, you must try the lampredetto, a well-known tripe sandwich, ​and Florentine specialty. It's a popular snack you can get from street vendors all over Florence, but you won't find it anywhere in the San Francisco Bay Area. At least I haven't seen it, and I'd be one of the first to find it​ because I absolutely LOVE tripe! I'm always up for a dish of tripe, whether it be in Mexican menudo, Chinese black bean sauce or in an Italian tomato-based​ sauce. If you're averse​ to tripe or offals, stay away from this place. Consider yourself forewarned. However, if you love tripe and offals as much as I do, put on your running shoes and run to this place now! I specifically came here for the lampredotto because Da Nerbone has been around since 1872. It was one of the first vendors to come into the ​Mercato Centrale, where they currently remain today. My instincts lead me in the right direction. There were huge lines every time I came by. The tripe was EXCELLENT! It's essentially boiled in a broth, sliced and placed in between bread with a dollop of a chimichurri-like sauce. There was too much bread for me, so I literally tossed the bread and just ate the tripe. So delicious! So moist! I'm guessing that the chimichurri-like sauce was intended to help tame the flavor of the tripe, but there was so little that it didn't seem to make a difference in that sense. Not a problem for me at all though. Just be sure that you like tripe​ because you will definitely taste the essence of the tripe. You can also get other things here, like a Florentine-style tripe dish, which seemed to be popular, but looked a bit soupier than I prefer in a Florentine-style preparation. My only regret was only coming here only once. The lampredotto is definitely on my radar for my next visit to Florence, and wherever else I can find it. If you come here, have one for me, please!

The non reservation line was not really moving unless people left the line. We waited a good hour. As we inched closer and closer, the lines were now both outrageous and getting seated seemed like a distant memory. The staff came out and gave out Sangria and Bread bites to help those in line feel welcome. We did finally get seated and we were so glad we waited, it was worth it! I complemented the meal with a delicious glass of white and red and ended with the utterly divine tiramisu. I will be dreaming about this meal for years to come. So epic.

I went to the internet for the best Florentine steak and Trattoria Mario consistently popped up as highly rated. I reached out to the restaurant via email to make a reservation for a Friday. I wanted to get the earliest reservation possible, so the restaurant reserved me for 7:30pm, which was when they open. I was advised to show up on time - even a 2 minute delay would make me miss my reservation. I can see why Trattoria Mario was strict on reservations. They open on the dot, and then a staff member calls out each reservation at 7:30pm like a roll call. Seemed to me that if you don't have a reservation then you're out of luck, because there was no waitlist and the restaurant small and space was limited. Service was great. Our waitress was highly attentive and got us in/out of the restaurant quickly, which was what we were going for. Food came out in a timely manner. We ordered the penne al ragu, salad misto, and a Florentine steak to share. The penne was perfectly al dente, and I liked the meat sauce. I did find the pasta sauce salty, but it could've came from the grated parmesan. The saltiness was not a fluke. The Florentine steak was just pure beef and a ton of salt... too much salt for my liking. I also decided that I'm not a fan of Florentine steak in general.

This restaurant is such a VIBE. Cozy, romantic and a total scene. Service was great as was the food. It was tough because there was so much on the menu that I wanted to try but we couldn't not order the pear ravioli and the Florentine steak. The Octopus was beautifully prepared and presented, but didn't have much flavor. They nailed the Espresso Martini! One of the best I've ever had! We ordered the huge Florentine steak to share between 4 of us and it was more than enough. Ultimately what knocked this review down to 3 stars and what was really disappointing was how they targeted us as tourists with the note at the bottom of the bill (see picture). It read "GRATUITY NOT INCLUDED" in all CAPITAL LETTERS. Also note it was the only thing in English on the entire bill. If it had been our first meal in Florence we might have fallen for this tactic, however it was our last. There's definitely some hostility towards tourists in Florence. Don't get me wrong, some of the people and restaurants we've visited have been very welcoming and friendly. However we recently saw tourist taxes go up significantly, and then you see tricks like this on the bill at La Giostra. This was the ONLY restaurant in Florence where we encountered this. Once jet fuel prices make flying a relic of the past I would argue that some Europeans who depend on tourists for their livelihood may not miss our presence but will certainly miss our spending. Save your money and go research the many other places to eat while in Florence.

The menu was solid, if a bit "generic" at times. While everything we ordered was delicious, nothing at Trattoria Giovanni felt like a dish you couldn't find elsewhere... and honestly, that's perfectly fine! It was traditional, comforting, and exactly what we were craving. The plate of cured meats and cheese was phenomenal, a great start to the meal. The pastas were really good as well, though one of the meat dishes had a slightly off texture, with the chunks of meat a bit overcooked. All in all, we loved our meal and would definitely recommend this spot if you're in Florence.

To top it off the tiramisu was just as spectacular as every other dish. The manager is super nice, cool and welcoming jamming out with an amazing playlist of aid & hard rock, dance & classic tunes. Definitely recommend the walk over the Arno to visit and enjoy the flavors and friendly staff.
