    As someone who's been smoking brisket, pork butts, and ribs for 7+ years, I don't hand out BBQ…read morepraise lightly. I judge every spot against what I'm putting out at home... and a lot of places fall short -- whether it's weak seasoning, lack of smoke, or just flat-out underwhelming flavor. But Wild Waylon's BBQ? Yeah... this place is LEGIT. We went all in: pulled pork, brisket, and the big dino beef ribs -- plus mac and cheese, green beans, a bacon-wrapped jalapeño popper, and the jalapeño cornbread. Every single thing delivered. The brisket had great flavor and was cooked right, the pulled pork was juicy and well-seasoned, and those beef ribs... absolute showstopper. Big, meaty, packed with flavor, and done exactly how you'd want them. Sides were just as solid. The mac and cheese was rich and satisfying, green beans had great flavor, and that bacon-wrapped jalapeño popper + jalapeño cornbread combo? Yeah... ridiculous in the best way. And the smoke -- you can actually taste it. That alone separates them from a lot of spots. The whole experience was on point too. The big pit out front lets you know immediately they're serious about their craft, and the staff was friendly, welcoming, and genuinely helpful the entire time. Prices are also very reasonable for the quality you're getting. This is one of the few places I've been where I walk away thinking, "yeah... they're doing it right." If you're anywhere near Fredericksburg -- or even just passing through -- this spot is absolutely worth the stop.

    When I'm in the mood for bbq I usually head to Randy's. It's not an everyday food due to their…read moreprices but more of a treat. The food doesn't generally take too long to come out. When it's nice outside they have several picnic tables to sit at and eat. The pulled pork sandwich with Cole slaw is my favorite. They give a nice portion of meat on the sandwich. They have a good bbq sauce that goes well on it. The minced beef was not my cup of tea so I wouldn't order it again. The ribs are just ok. They use St. Louis style and precut them by the bone for you. It's a toss up when you get fall off the bone or rip off with your teeth. Most often it's tough and have to tear into it. They had baby back one time and I really enjoyed that. I think that should be the staple instead. I tried the catfish one time and was pleasantly surprised how good it was. Definitely want to try it as a sandwich at some point. The fries are not cheap but the large is a lot of fries. I think their baked beans are the best in the area. The Mac and cheese is okay and did not care for the collard greens. Overall not a bad place and definitely better than most in the area. Still only go for a treat but I do come back.

We ordered the ribs and chicken combo with collard greens and macaroni and cheese, and the rib tips with a side of cornbread. We were pretty shocked and disappointed to see a bbq place selling prepackaged cornbread, and weren't aware that's what it was until after we got home and opened everything to eat. The Mac and cheese side was good, and I think the collard greens were ok, it just would have been better if they were cut up a little more manageable and didn't have so many stems. As for the meat....all of it was terrible! It was completed smothered in their bbq sauce and did not have a good flavor to it. After eating, my husband and I both got sick. We did also ordered one of the packaged Nightingale ice cream sandwiches, which was our favorite thing of the entire meal. Not a place we will go back to again.
