Let me start with the cheesesteak. I am a firm believer that an amazing cheesesteak has to nail the 3 components: 1) quality meat, 2) gooiness of the cheese, 3) freshness of the roll. Harvey's nailed the meat. The gooiness of the cheese was inconsistent but I do like their take on their own wiz. The roll was eh. Also, the onions were just thrown into the meat instead of being car elided on the flat grill. I think what really took my by surprised was the staff. The cook seemed to be on break eating while I waited for my order. Now it was a little dead in Union Market. I showed up around 5ish on a Friday night. But I was a little caught off guard when watching the staff during the making of my sandwich. Just expected a higher standard. If I lived in the area, I love the availability of getting fresh quality cuts of meat as they have available for your viewing pleasure. Their menu of sandwiches available here still look great. I picked them up on a Saturday to eat on Sunday. On Sunday when I opened the package I was met with the smell I feared I may. It's like meat you buy at a grocery store that is on the sale by date and usually get for a discount. The meat is not spoiled but has an off taste to it. That's how these smelled and sadly tasted. I sent an email to the store and they apologized and offered me free replacements. I went back and when o got to the meat counter the Pattie's were a bright red. I was excited. I brought these home and cooked them and they are absolutely amazing. I believe they were 10.99 a pound which for the quality of the beef, it's not much more than a grocery store. The grind on these Pattie's were absolutely amazing. Best texture for a hamburger I ever had. The flavor is excellent as well. These are grass fed and grain finished beef and have a different and different flavor than standard grocery store beef which is normally fed straight grain. I highly recommend this butcher shop. They also have great looking steaks which again are a bit more than grocery store steaks but the flavor difference of grass fed beef is worth it.

The selections are thoughtful; they work with good importers, which is key. I haven't been here for a tasting since 2006, but for several years they held tastings on Fridays and Saturdays hosted by one of their key importers. Those tastings opened my eyes to the world of wine, much to the chagrin of my wallet. I learned about everything from Gewurztraminer to Sekt to Torrontes. It's been all downhill since then. The Owner, Alex, answered and gave me some great information-- most importantly that he DID have a Brisket and he COULD accommodate our request. Whew!!! When I arrived, Alex showed me the meat and discussed with me the options for trimming off the fat and trimming it down to the size I desired. Alex's staff -- both the store personnel and the actual butchers -- were all friendly and helpful. Alex gave me a tour of the store and I bought a bunch of cheese, dried fruit, etc., while I was waiting for my USDA Prime Brisket to be ready! Such a nice store! Such nice people! Not the least expensive cut of meat I have ever bought ... but WOW!!! The meat cooked perfectly!!! This was literally the single BEST brisket I have ever eaten (and I have eaten a LOT of brisket in my life!)! I have subsequently heard from other people in the area that The Cut is well known for selling top quality meats. I look forward to going back for more soon!
