This place is amazingly good! And they have fantastic vegetarian green chili!! I love their enchiladas, omg. Their chicken is grilled and juicy, not shredded. Everything is fresh! Only complaint is that the cheese in my cheese enchilada was not fully melted but, it was still tasty. Yum. read more

I've found that nothing cures a hangover like a breakfast burrito! A friend of mine had been talking this place up a lot lately, so one morning after a glass of wine too many, I decided to check it out. Keep in mind that they only have a "daily" burrito, meaning they only have one type of meat on any given day for the burritos, or of course a vegetarian option. They had sausage the day I went and it was delicious! This burrito was delicious and reminded me of Santiago's -- but better! Gooey and melty, the spicy green chili in here mixed wonderfully with the meat, cheese, and eggs to create handheld comfort food goodness! AND the burritos are only $2.50! I can't wait to go back on a different day and try a different variety. The only reason I'm not giving 5 stars is because the burrito wasn't served quite piping hot, it was warm, but like it had been sitting in a warmer rather than freshly prepared. I ended up microwaving it to heat it up a little more. Oh and another tip! They have a $5 minimum, so either bring cash or buy two... you know you want to! read more

Very very very sub par ingredients. for their prices I would go to pinche tacos, where the owner takes pride in the atmosphere of the establishment and the quality of the food. If you just ate here in the last 10 minutes, I am so sorry! I would of posted earlier but after having 1 bite of my huevos rancheros, I was neck deep in my office trashcan; hopefully I got the salmonella out. If you haven't eaten here yet... DON'T!!! I am not a Mexican food connoisseur by any means. Heck, I even like Casa Bonita! I like my food to be edible, taste decent, and for God's sake, be at least warm. The experience I just had with my take-out from Bubba Chinos met none of these expectations. It is very rare that I throw away any food, let alone after one bite and still starving, but this food went straight to the trash. Everything was cold/room-temperature, the re-fried beans were the texture of clay, the rice literally had no taste, the egg was not cooked long enough, and the tortillas were right out of bag (not even heated up). However, the green chili by itself tasted pretty good. My coworker ate with me as well, and her cheese enchiladas, beans and rice were the same way. She didn't eat hers either. The service is also lacking; very rude and unaccommodating. If I could give it negative stars, I would. Needless to say, we will not be going back. Moral of the story: DON'T EAT AT BUBBA CHINOS (or at least the Colfax location) and keep liners in your trashcan. read more

The quality of food resembles a Taco Bell knockoff, just more expensive. I tried to give it a second chance, hoping my first bad experience was an anomaly. Let's just say the second time around didn't even meet my expectations after my first visit. Denver fresh Max is a solid cheap Mexican food joint up on the edge of Capitol Hill. I usually only go there and get the two dollar breakfast burritos which are pretty delicious and obviously a great deal. If you're looking for authentic Mexican food you might want to head further east into Aurora as this has a slightly American twist on it it. That being said, their green chili is pretty bomb and I can't complain about that. read more

This place is great. Delicious food. And everyday there's a 5$ lunch plate meal that is worth the money. I've tried a good amount of what they have to offer and everything is great. How to make a Bubba Chino's breakfast burrito: 1. Get a stale tortilla 2. Overcook the tortilla 3. Drop your pants and squat over the tortilla 4. Drop your best work out onto the tortilla, wrap that and the tortilla up in a piece of paper, shove it in a brown bag and charge $6 for it. Tip for the cook: If you are serving someone a handheld burrito, you damn well better make sure they can eat it WITH THEIR HANDS. After seeing this place featured on some really well known food blogs I had to try it out. My wife wanted doughnuts from next door, but I wanted some meat in my belly so I decided to check it out. Awesome green chili. Awesome breakfast (don't bother trying anything else). The usual cashier lady (I wish I knew her name) is the nicest cashier in cap hill hands down. I get upset on days when she is not there, to the point where I don't want to eat there because the other girl definitely does not have quite the same lovely personality. I have to begin with the guy behind the counter. Man, he ran his ass off. Someone didn't show and this man was working his butt off. Props to him - during his rush, he checked on me, smiled and made it seem like it was nothing. Everyone else who was waiting he also appeased. I wish I would have caught his name.
