    Their tacos are bomb.com! I love walking down here from my house to get my taco fix. Really nice people, fast service.

I stopped by to see that they had and was psyched about almost all the things on the menu! Pasta, Chicken Wings, Mac 'n Cheese bites, Fish Tacos, super great selection. The food came out hot and relatively fast for the stuff I picked. The Nook was open, so I had time to grab a quick beer while I was waiting. I made the difficult choice and settled on Fish Tacos, Mac 'n Cheese bites and the Potato Salad and Macaroni Salad. Portion size was good, definitely had leftovers for the next day. The food was great, the salads were fresh and didn't feel like they were scooped from store bought tubs. The fish tacos were really tasty and I really like the corn tortillas. I like that the Mac salad had black olives in it, better than the salad down at Marination! I'm not sure exactly what their schedule is for West Seattle as they're pretty new, but I checked on their website www.GilbertsGreats.com. I'll definitely stop by the next time I see them in West Seattle!

Wait started probably around 6pm although there were still empty tables then. They provide garnishes for your water and also provide 4 salsas/accompaniments for your meal. I got the 16 oz ribeye served on hot stones. They cooked it slightly less than what you want, so for my medium rare, they cook it rare. It also comes with chimichurri and molacete(?) which has a more refreshing flavor. They season with rosemary and even light a branch on fire for more aroma. I tried a bite of my friend's filet mignon which was good, but my preferred cut is the ribeye or NY strip. We also shared the papa loca (worth it - so good) and the cauliflower (not as good, but I'm comparing it to a version made by Cuerno, a Mexican steakhouse in NY). I had a glass of the pinot noir and the garzon, and both were good, slightly tannic and 'juicy'.

I loved how simple the taco Wagyu is as the meat is high quality For my second visit I got the Vacio Wagyu which came in a sizzling hot stone plate and it stayed hot for me to cook all of my Wagyu. It didn't really need the accompanied sauce but it was nice to have. I felt the large rock salt was a little bit nub and would make it too saucey but I found the rosemary a perfect combination with the Wagyu especially as one was cooking underneath. Excellent service as well - our server was attentive and timely. I've only gone here for lunch and we did not have to make a reservation as it was not too busy!
