I have to thank my daughter-in-law for convincing me to drive 10 hours from Arizona to dine at a restaurant in New Castle, Colorado. It was certainly worth having a appetizer, and a entree. Some chefs can create a combination of ingredients that approach magic. I have eaten sea scallops in a hundred restaurants that never thought to add beurre blanc sauce, radish slices, and greens. Each time I have sea scallops in other restaurants, they will be compared to EATS Bistro. Likewise for the Crispy Japanese Wild Atlantic Salmon Cakes. One of a kind delicious. Sat at the bar. Bartenders were lovely and helpful. Great ambiance. Got the Kostas and the Bao buns. Bao buns were fantastic! The Kostas was very good--the lemon potatoes really shined. However, I wish there had been more steak based on the price ($45). It came with two fairly hearty skewers. Cocktails were solid. Found this wonderful restaurant in New Castle last night. Bust as can be, on a Thursday but they found a two top for us in the bar. Great atmosphere, tasty cocktails. We had the Artichoke hearts as an app, delicious! I had the chicken piccata which was done excellently. My buddy had the Lasagna which was fantastic . We split some triple chocolate cake for dessert.Magnifico! Can't say enough about the service and the vibe. We'll be back, highly recommend "Eat"!! read more

Oh my goodness, we had the best experience here; the food, the service, the friendliness & the atmosphere!! What a perfectly amazing little hidden gem!! I did not expect to find this good of food in New Castle!! I figured it was a smaller town and the food would be average. Boy was I wrong!! We had our anniversary dinner here and it truly could not have been more perfect!!! In fact we loved it so much we're going to eat here once more before we leave! My hubby had the Kosta and I had the Phad Thai, both were amazing!! For a drink we had the Mare's margarita and it was yummy!! We also had the bacon and eggs appetizer which was excellent and for dessert we had some type of peanut parfait that was to die for!!!! My mouth is watering just thinking about it! The best restaurant in the Roaring Fork Valley. Some of the most unique food options I've had in the area. We love the ahi tuna appetizer, the burrata, smoked salmon deviled eggs, arancini, and Philly cheese potstickers and those are just the appetizers! Eat is a small dinner-only (and drinks, of course) restaurant. It has kind of a dark, jazzy feel. I'd say "speakeasy"...but it's not "that" dark, and it's certainly not smokey or stinky. ;) I counted ten tables, including the two outside on the very small patio. You can see and hear most of the kitchen from anywhere in the restaurant, but they do a good job of a) not yelling in the kitchen and b) playing music and a reasonable enough volume to drown it out. There's not really an official looking "waiting" area or "hostess" stand because it's so small, but they do the best they can with what they have. I would say that this restaurant is geared more towards adult couples out for a drink, but we had a "well-behaved" (as much as she can be) 3 year old with us, and they were super nice to her. They do have a small kids menu as well. We went on a Saturday night. We were able to get a table immediately, but they went on a wait (I'm guessing about 20-30 minutes) right after we got there. It was homecoming night though, so I'm not sure if it's always that busy or if this was something unique. The service was very attentive - our glasses were never empty, and we always had bread at the table while we were waiting. I felt like they maybe had too many servers on the floor, but this is only their second week open so they might still be feeling out business. Our food took about half an hour to get to the table. We arrived almost right when the restaurant opened, along with 7 other tables, and I think it was just a little slow getting out. The next time we go, I'd like to try going a little later (maybe 6:30 or 7?) to avoid the first rush. OMG, the food was worth the wait! We both got the cheesesteak, and it was delicious! Missing the peppers...but I usually order it without anyway so yay for that. Choice of coleslaw or salad as a side, and both were great. My kiddo got the kids cheeseburger, which was....pricey. It was literally just a cheeseburger on a plate for $10. Not the best tasting or the worst tasting burger I've ever had....but I was surprised at the price. I wish more restaurants offered plates for young kids to pick off of....all they need is a little plate of grapes, cheese, crackers, and oranges or something (and then just charge me like $3 so we're all happy). My husband and I were staying in New Castle as a pass through from Denver to ski in Aspen, and upon some research we realized we had to try Eat. Now, after eating there, I've done more research and realized they are soon to be selling and could not be happier we had a chance to eat there while Molly and Jeff are still in the kitchen/behind the bar. I cannot say anything but amazing things about this restaurant - from the drinks to the food everything was top tier. I was at first overwhelmed by the Manhattan menu, but after some convincing from our waitress I decided to try the tequila Manhattan and couldn't have been happier I did. I've never tasted anything like it and my life goal is to be able to recreate it at home. For appetizers, we got the Bao buns and scaccia and we were in love from the first bite of each. For mains, we got the pad Thai and of course the rollatini. We were skeptical of getting pad Thai in a small mountain town but even before the first bite when we saw the giant shrimp in the dish we knew we made a good decision. The rollatini were just as good as everyone hypes them up to be, but what really got me was the hint of mint that was refreshing and unique and unlike anything I've ever tasted (even in many many Boston north end Italian restaurants). We had to finish with the crème brûlée and of course could not find a single fault in it, just like everything else we had. I give nothing but well wishes to Molly and Jeff in the next chapter of their lives and all I can say is we feel so fortunate to have had a chance to eat at your restaurant before this chapter ended. Having heard so many great things about Eat, my husband and I arrived here right at 5 to ensure getting a spot on a Saturday night. Since we were the first ones in, we were sat right away at a booth by the window. Our waitress was helpful and attentive, and gave us a lot of great suggestions. The bread is made in house daily, so definitely make sure to indulge in some carbs if you're feeling it. My husband ordered their happy hour special: an applewood smoked BLT on cinnamon raisin bread with a Caesar salad, and I ordered the lentil burrito with a house salad. We also ordered the bacon jam and blue cheese sliders, but substituted white American cheese for the blue. The sliders were wonderful, on homemade rolls with a bacon jam that is the perfect balance of smokey savory bacon and just a tinge of sweetness. Our meals were equally delightful, with cinnamon raisin bread that was so fresh you could smell it before the waitress brought it over, and the lentil burrito being something I loved far more than I ever would have guessed. Honestly our only problem there was with a rather rude group of customers who hovered and stared at us because they wanted our booth (the place was still relatively empty and there are only two booths), but that was in no way Eat's fault. This dining experience was without doubt the worst I have been exposed to after 35 years in the hospitality business. We were a party of five women, who, after we requested, the server explained she could not seat farther from the open-window, extremely noisy kitchen. (Throughout our dinner, five to six servers and the chef/owner were hanging out in the kitchen speaking at the highest level of their voices - I'm refraining from using the word "screaming".) We explained that we were all hard-of-hearing and her reply was, "We just don't to do that. It would upset the traffic flow." There were only two other parties in the restaurant the entire time we were there (Wednesday night at 5:00 pm), with a circular table that could seat six and two booths that could easily have accommodated us with a chair pulled to the end of the table. Or - we could have seated three on one side of the booth. But when we suggested that solution, we learned that the Chef won't allow that because it adversely affects her plate presentations by the table being too crowded. At this point our server asked if we would like to speak to the manager, and obviously reported that she was being abused by me. The chef/owner came out and asked us to leave the restaurant. Are you kidding?! She said she would call the police if we didn't leave. We stayed, at the purportedly "only" table for five (There were five two-tops lined up where two could have easily been pulled together.) Needless to say, we will not be returning. And although they did not know it, I am quite well-known and have a big mouth. EVERYONE with whom I come into contact will hear this story. read more

We loved to see the old Maude's reopen! At first entrance, the restaurant felt crowded with employees. There was a hostess, and 2-3 servers for only 7 tables so it was a little overwhelming. The food was as good as it was before but $14 for the Philly cheesesteak (which has a good amount of meat but is on a small brioche bun and comes with salad or a small side of slaw) seems extremely pricey. Would have gotten 5* if the sandwich was $10-$12 instead. read more
