The curtido was more like a coleslaw. It needed more time to pickle and much more spices. I didn't taste the oregano at all or pepper. The red sauce that typically comes with the pupusas tastes like canned tomato sauce. Very vinegar-y.

If you're in a hurry, do yourself a favor and call ahead for takeout, the wait can be long, but that's because most items are made to order.
