I must have a completely different pallet than those who consider this good Mexican food!! After over a dozen trips thru town, my wife and I tried this on the better reviews in Yelp. I tried to look beyond the interior's old and run down appearance in hopes of some freshly prepared hot food. The salsa (tasted like canned tomato soup with a few onions & spices) was the first disappointment, the cheese enchilada the second and it went downhill from there. We could stomach only a few bites or the next day would have surely been worse. The staff was OK and maybe we caught an off day, but will not return here. I have eaten in Colby a few times (fast food is about the only option, but it is predictable) and nothing has been memorable until this one for all the wrong reasons, including the next day affects. Stopped in Colby for a night along a long drive. There aren't a lot of choices in Colby so we made due with what we had. Being in a hotel, I was leery. The atmosphere is bland but that's not why I eat Mexican. The service at first was very poor (it took us a while to get seated in an open restaurant) but after that it picked right up. The food is only acceptable because it is located within a hotel and only for late night meals after a long drive. Salsa was very watery along with the rest of our food. If you are looking for authentic Mexican food this is NOT the place! The flavoring was pretty good, but everything seemed precooked and packaged and, again, very watery. Came here for dinner. Glad I was only passing through. I would move if this was my only Mexican choice. And I use the term Mexican very loosly. 1 star is 3 stars to many. Chili relanos tasted like there was something that might be on one of the recent CDC recall list. Teuly a very unpleasent experience. We would have complained if we could ever find our waiter. I would think that when your plates were removed that might mean you are done. Still had to hunt someone down to get the bill, and as for refills on our drinks we gave up on those and were glad qe had ice to quench our thirst. All and all, never again. read more

Disappointing... I stayed at the Quality Inn for work and decided to try the restaurant attached so I didn't have to venture out in the snow. When I walked in, three employees were lounging on a bench and waited until I was standing directly in front of them to acknowledge my desire to dine. I don't even want to start about the cleanliness because I'd have a book to write after all is said. The margarita tasted like pure sour mix and had no hint of alcohol whatsoever - such a let down after a long day. I tried the chile relleno and the adobo mole but both were substandard. The relleno had some separated pre-shredded cheese on top and was greasy without much flavor. The adobo mole had some good depth of flavor, but the chicken it was smothering was bland and overcooked. The "Mexican rice" was like it came out of a bag and lacked flavor completely. Overall this was a disappointing experience and I will be sure to choose something else next time I'm in the area and would recommend you do the same. read more

Little Rock to Steamboat stop in Colby. Recommendation from Hamp Inn desk was spot on. I will say the Carne Asada was great. The beans that came with it, not typical, pintos with chorizo were the best I've ever tasted. Salsa tasty but a little thin, spice was good. Chips came out warm. Margaritas were just right. We broke down short of Colby and stayed at a nearby motel for two days waiting on our repair. After reading the reviews for this restaurant , we decided to give it a try, and are glad we did. We went at 7:30 on a Thursday and the place was packed, in a good way. We didn't expect amazing food, just due to the location, but did receive pretty darn good food. The prices were super reasonable and the service was excellent. It was one of the cleanest restaurants we have seen in a long time. The daquiris were awesome and just $5 for one served in a big, frosted beer mug! We would go back for sure! read more

I asked the question to the waiter where in Mexico do they cook food like this? Jalisco is the answer given. I go to the cashier and ask the same question. He says the owner is from Jalisco. Really? Pre-made taco shells with unseasoned (no authentic flavor) ground beef? Pre-made tostada shells? The Mexican food I grow up on from my mother, taco shops and restaurants in San Diego deep fries their shell in house with real corn tortillas and a famous Tijuana style taco shop in San Diego uses soft corn tortillas. Ground meat tacos are for franchise chains that make a cheap Tex Mex style. May you folks in Kansas should champagne Marcella of Food Network and Tacos El Gordo to open a real taco shop in Colby. read more

Typical authentic style Mexican food with ranchero slopped over everything:( mild and tasty chips white cheese dip and salsa, the beef Tacoes, bean and rice and my tostado were better than average. Service was lackadaisical . I judge Mexican food tough and FYI to another reviewer that was not Americanized Mexican food sorry I strongly disagree. Taco Bell , chipolte and Qdoba are in the American/ Mexican category. Most who are searching for home cooked versus fast food will be delighted with this restaurants food. read more

Staying in the hotel so we had dinner here tonight. The service was fantastic, very friendly. The food was fine. The chili relleno was perfect, the seafood salad (grilled seafood on a bed of fresh vegetables) was amazing. The burrito and chimichanga were okay. Would certainly recommend this place. read more

This place is the ultimate Mexican dive! Nothing fancy, a little dirty but the food is crazy good. Must get cheese sauce for dipping chips along with the salsa. If you like spicy ask for spicy salsa as it has pleasing heat. read more

We were in Colorado and meeting my sister who lives in Kansas at a halfway point. It was good. Living in Detroit and having experienced Mexican Town, I am not new to Mexican food. First off, the staff was great and on top of the water, chips and salsa, and making sure our party of 5 were well taken care of. I had veggie fajitas and my boyfriend had the seafood fajitas, both were quite good. My siblings had this meat thing that came in a large mortar bowl that they really enjoyed. It was a large portion and delicious per their reports (I'm vegetarian, so did not actually taste it). Overall a great place to stop if you are driving from Colorado to Kansas. We will probably make that our meeting spot. read more
