It's like a medium rare burger, it requires very little chewing. It's the combination of the French roll, the steak, the grilled onions, and Asiago cheese that truly make it just a great sandwich. Wallace is a rare combination of the highest quality product, convenience and affordability. Their website is simple to navigate and order from, while the monthly pick up as quick and easy as it gets, you're in and out in 30 seconds. The products, well I don't know where to begin. Everything I have purchased from them has been excellent (and there has been a lot). I have purged my kitchen of any grocery store bought meat and have switched solely to Wallace. Their meat comes vacuum sealed and frozen, which has resulted in my freezer being stocked to the brim with grassfed, organic and ethically raised meat. I challenge you to find a better steak in the city at any price, let alone the prices they charge. For a similar cut at these price points, you're probably looking at a styrofoam tray with a gray piece of meat on it from your local supermarket.

Such a difference between a Jewel or Mariano's bought product of the same and this shops'. We put the steaks on the smoker and they melted in our mouths like butter. So amazing. After going to several grocery…read morestores which either had no brisket or bulk sizes of it, we reached out to Leffelman on instagram and asked if they would be able to provide us with a 3lb Brisket the next morning. They answered promptly! The store is well situated just north of the tracks downtown Downers Grove. The cashier greeted us and took our order as we looked around the shop. The service was great but the brisket was even better! We highly recommend Leffelman as a butcher and look forward to coming here again next time inspiration strikes. Thank you!
