What arrived was a red sauce base overwhelmed by a mountain of raw arugula and shaved parmesan, lacking any melted cheese structure. NO CHEESE! WHY THOUGH?? A melted cheese layer provides crucial savory depth and acts as a moisture barrier. Without it, the wet sauce saturated the dough, rendering an otherwise stellar crust soggy and unseasoned (we had to request salt to bring out any flavor). It ultimately felt like a salad served over softened bread rather than a cohesive pie. When we provided feedback, the response was polite but indifferent. While the foundation is clearly there, the balance was completely off. I'd consider giving them another chance with a different pie, but Flagstaff has too many incredible pizza joints to settle for soggy bread. I'll post a follow-up review if I go back.

If I could give zero stars, I would. My girlfriend and I had an awful experience at Fat Olives from start to finish. When we were seated, our table was still dirty--crumbs, smudges, and who knows what else. The overall ambiance wasn't great either; it felt chaotic, and the place just didn't have a welcoming vibe. Our waitress was completely inattentive, barely checking on us. We had to flag her down multiple times just to get basic service. Our food came out wrong, our drinks were never refilled, and the food itself was just bad. We tried multiple items from the menu, hoping something would be decent, but everything was disappointing. The worst part? We both ended up with food poisoning. We were sick for days, which not only ruined our trip but also made us miss our visit to the Lowell Observatory. Those tickets were $70, completely wasted because we were too sick to go. Instead of enjoying our vacation, we spent the next couple of days absolutely miserable. I genuinely love giving great reviews when they're deserved, but I have to be honest--this was one of the worst dining experiences I've ever had. Save yourself the trouble and eat somewhere else. The staff were incredibly friendly and genuinely seemed happy to be there--smiles all around, which made the experience even better. Decided to come back last night because our addiction to this pizza is just too hard to kick! It was another busy night but the staff handled it with grace. The hosts were an absolute delight quoted accurate wait times and directed us to the bar to pass the time. The bartender was sweet and efficient, she kept us busy with great conversation. Once at our table the server chelsea was knowledgeable and quick, she reminded us why we fell in love with fat olives. Thanks for the wonderful experience. One star, not because of the food, but because of the service. We had some friends in town and we were really excited to take them to one of our favorite restaurants, but wish we didn't. I had the margherita D.O.P and Veggie Pizzas as well as the Straciatella. All three dishes were excellent. The spice level was perfect, and the food was fresh and flavorful. The desserts were also delicious. I had the pistachio cannoli, tiramisu, and a flourless chocolate cake, and all three were to die for. Venue: The restaurant is clean and well-maintained. My boyfriend and I patronized Fat Olives after a ridiculously stressful day in Flagstaff, and it was exactly what the doctor ordered. From the cocktails, to the mini-happy-hour appetizers, to the arribiata pizza to the s'more dessert, we were completely thrilled and satisfied with everything that went in our mouths. I agree with another poster about the rudeness of the hostess with the short hair, she was abrupt and kept us waiting (even though they had literally just opened the doors and there was only one other table inside). I hate when a hostess knows you are there but won't acknowledge you, preferring to stare at whatever they are writing....it takes a second to say, "be right with you" with a smile. But, our server in the bar smoothed us over and Fat Olives won with the incredible food and great bellinis. The housemade bread and mozz.....wow. Excellent Pizza with a nice atmosphere. The thin, tasty Pizza dough here is delicious! The pizza dough ingredients are imported from Italy and fire oven baked to perfection. There is a bar area, and a dining area that has booths, four top tables and seating at the pizza bar. The wait staff was very friendly and helpful. Our waiter, was super nice and attentive. The drink menu was expansive, lots of wine choices as well as beer and mixed drinks. We were there for lunch, so we just had the iced tea, which was fresh brewed and refreshing with a generous slice of juicy lemon. In addition to the pizza, there were other traditional Italian dishes on the menu, as well as sandwiches. We discovered Fat Olives on a recent trip to Flagstaff. When you enter the restaurant it is very underwhelming! That all changed as soon as we were seated and our server Mike came to our table. Mike was AMAZING!!! Mike was so informative about the menu and gave us excellent suggestions. He also mentioned that Guy Fieri had eaten there and ordered the Belgio Dolce pizza. We all agreed to give it a try. The pizza was unlike anything I had ever had. It was fantastic!!!! We also tried the roasted olives and tomato bisque--both delicious. Portions were large and service was outstanding! We told Mike the food was so good we would come back on Thursday and we did. This time we ordered 1 pepperoni and 2 Belgio Dolce pizzas. We asked for Mike again and he was just as awesome! We ended our meal with tiramisu and gelato (YUM). Do yourself a favor and eat here and don't forget to ask for Mike! read more

Fat Olives in Flagstaff was an absolute lifesaver on my cross-country road trip! The location is super convenient--just a quick hop off the highway, making it the perfect spot for a delicious break before getting back on I-40. I ordered the Caesar salad and the Margherita D.O.C., and both were incredible. The pizza was perfectly cooked with fresh, flavorful ingredients, and the salad was crisp and refreshing. After days of surviving on gas station snacks, this was a much-needed treat! The service was top-notch, too. The host was so friendly and even went above and beyond by bringing my food out to me in the parking lot while I walked my dog. That level of kindness really stood out and made the experience even better. If you're in the Flagstaff area, don't miss Fat Olives--it's a game-changer for road-trippers (and dog-friendly, too!). On my last visit to Flagstaff, AZ, we stopped off at Fat Olives twice.. I'm glutton intolerant and was able to enjoy the regular thin crust pizza at Fat Olives. They do however offer glutton-free bread and pizza crust.. Lauren was our bartender and server. I tasted the artichokes, pizza, caprese salad and wine from the tap. My favorite was the appetizer plate of roasted vegetables. It is evident that the food is fresh and made from high quality ingredients. Food was absolutely delicious and the red wine was smooth. Everyone there works like a team and is happy to be there. The manager came over and said hello. Excellent customer service. Had an amazing time and will be back on our next visit. read more

If you're looking for a pizza experience that goes beyond the ordinary, Fat Olives is the place to be! We tried the Belgio Dolce pizza, and it was absolutely off the charts! The appetizer Bacon Marmalade was a perfect balance of savory and sweet--truly a flavor explosion. To top it off, our server Isaac was fantastic! He was attentive, friendly, and made sure we had everything we needed throughout the meal. The atmosphere was welcoming, and the service was spot-on. This was easily one of the best dining experiences we've had in a while. We can't wait to come back and try more from the menu. Another delicious dinner! We've eaten at the always popular Fat Olives many times, but tonight we came in without a reservation. The host was polite and friendly, but didn't lie about the wait. He maintained his affable demeanor in the face of our loud conversation:) When we opted to stay and grab drinks at the bar, we committed a faux pas by sitting at an empty two-top (oops!). Waitstaff sweetly re-directed is to the lobby but seated us a bit earlier than the anticipated time. Our waiter was attentive without hovering, and the food....yum! Definitely try the roasted artichokes (appetizer) and whatever else the staff recommend. It's all fabulous! read more

Fat Olives is our go-to spot every time we're in Flagstaff, and for good reason! My new favorite restaurant! I came to Fat Olives with my soon to be mother and brother in laws on a recent trip to Flagstaff. We were instantly excited about their happy hour menu. We ordered the Fat Olives insalata, Stracciatella, and abruzzo to share. All were fabulous. We each had a Peroni and decided to order a regular sized caprese and parma and arugula pizza. Delicious! The service was great, the beer was cold, and the restaurant had great ambiance. The happy hour prices can't be beat, and the regular menu prices are extremely reasonable. I will definitely be returning here again soon! read more

We started with the green apple/brie and fig balsamic on a baguette. This was a great idea but the execution needs improvement. The bread seemed a bit stale. It should have been toasted for crunch and texture as well as adding flavor and interest. The salmon on creamy orzo was perfectly cooked and my wife enjoyed it. I had the chicken parm. It was a generous serving over spaghetti. On the positive side the thinly pounded breast was nicely fried- not heavy at all. There was minimal sauce on the chicken and on the spaghetti leading it to be quite under- flavored, as a local guide and others have stated. Overall, I think the restaurant has great promise. As it stands, I give it 3.5 stars.
