    @fogliapasta From Crab Ravioli to Culinary Dream: Foglia Pasta's Delicious Journey It all started with a Dungeness crab, a newborn, and a father-in-law's wise words. Chef Jeremy Baumgartner, a seasoned veteran with 30 years in the culinary world, was looking for a side hustle while his wife Stephanie cared for their new baby. Inspiration struck in the form of homemade crab ravioli made with his father-in-law's fresh catch. Foglia Pasta was born, not in a fancy kitchen, but in a humble 10x10 space with a dream. The word "Foglia" meaning "leaf" in Italian is used by pasta makers to describe a sheet or "leaf" of pasta. Chef Jeremy, fueled by passion and a tax return, poured his heart into crafting colorful raviolis using natural dyes from juiced beets, blueberries, turmeric and kale. After his first farmers market in March of 2022, Foglia was an instant hit in Portland, OR. Today, Foglia Pasta is a thriving testament to the power of passion and hard work. Chef Jeremy's dedication shines through in his 12 vibrant dough colors, each inspired by the season's freshest ingredients. He's a master of his craft, constantly learning and experimenting, with every book on pasta at his fingertips. Foglias ravioli are supercharged with flax seed, hemp seed, chia seed, spirulina, acerola, green tea, local bee pollen, turmeric, local walnut/hazelnut, cocoa, beets and fresh greens. From dungeness crab and truffle to goat cheese and brisket the flavors at Foglia Pasta are as diverse as they are delicious. I was fortunate to witness the magic firsthand as Chef Jeremy handcrafts 250 boxes of ravioli in just four days, and they sell out every weekend.     Jeremy and his team offer great customer service. The ravioli are delicious! Definitely on the pricey side, but worth it.

    Let me start by saying I didn't take pictures. For anyone who reads my reviews, that's a big part…read moreof them: ALL THE PICTURES. Presentation, portions, half eaten, etc... but I didn't. Because the food was so damn good. Look - I'm going to start off by saying I grew up practically on The Hill. Out here, you'll have to Google it (make sure to add 'RI' to the search or you'll get some political BS), but back east, "alls you's have ta say" was those two words and anyone would know you knew your Italian, food and otherwise. There isn't anything on this coast that vaguely compares to The Hill's food, but walking into and biting out of Geraldi's was having a little piece of home. There's this little shop in the old town where the owner knew your voice when you called to order... you'd walk in, and you heard "hey cousin!" whether you were or not, and that's the vibe you get from Geraldi's. The food is much the same - you get something that looks like Nonna was at the range all day with her sauce (it's not gravy - no meat) and you came home looking like you haven't eaten in weeks: "I'm gonna fatten you up before you leave" and you walked out the door with a sub (sandwich, that is - not a submarine) that weighed the same as a newborn. We got three of those babies: a Chicago Beef (seal of approval from the orderer - only 'complaint' was that they had to eat it all in one day because the bread was quote too soggy to make it to lunch the next day - travesty), an Italian sausage (just as delicious when 1/2 was reheated the next day) and a Chicken Parmeroni (I thought somehow even better when 1/2 was reheated the next day) and I could have absolutely gone back the next day if it weren't for A. the leftovers 2/3 of us had and B. the meal planning we'd done for the week. I also grabbed a side of giardiniera because I will get it anytime I see it available and I inhaled it - I need to know if I can by it by the vat instead of the side cups because it too was similar to what I can find at home (about practically nowhere out here) and amazing!! I'm still upset I didn't take pictures though!

In addition I paid extra for chicken . My garden salad was very good - the tomatoes and cucumber were fresh as was the lettuce mix . That was a winner , plus the dressing was not a fat laden creamy one it was a balsamic type. Overall we just thought $37 was too much for what we had and our original idea of getting Qdoba next door would have been a better choice for less money .     Likely not visiting this location again... I was driving my…read moreson home from surgery and needed to grab food for the family after being at the hospital all morning. As I entered, the guy working the register apologized for being on his phone and put it away to help me. Very nice. I placed my order and he was very kind & patient. The 3 ladies standing in the prep kitchen continued with their very loud, all Spanish conversation, not really appearing to move to prepare any food (including for the two customers who entered after me). I don't care that it was Spanish, just that their conversation seemed to supercede the need to do their job in that moment... So, I took my waters & treats out to my family & returned for the entrees I ordered. As I re-entered, one customer left with an order, another sat at a table waiting for his order, and a to-go order remained on the counter. While I was waiting, the guy walked over & offered me the to-go order on the counter "if I wanted it because the customer canceled their order after the food was made and it would just have to be thrown out, unless someone wanted to take it." He did warn me that it had been sitting out for about 40 min so if I agreed to take it I should heat it well to be on the safe side. So I said sure. One of the ladies from the chatting trio had starting preparing some food, finished the order of the gentleman who ordered after me & then continued with my order. In the meantime, a manager, or assistant manager appeared from the back and was informed that I would be taking the abandoned to-go order. They approached and said, "are you sure? It's been out for a while." I inquired about how long, and they said over two hours. AT THAT POINT, WHY IS IT STILL SITTING ON THE COUNTER AND BEING OFFERED TO CUSTOMERS?! SO NOT SAFE! So I declined that food & just waited for my order, which was taking a long time. When my third & final entree was completed, the guy at the register pointed out that they used the wrong kind of chicken & slid it back to a woman in the prep area. However, I had already been waiting too long & said just let me take it as is. She hesitated while her friend was still chatting away at her so I busted out my fluent Spanish to say, I don't have time to wait for you to fix the mistake because you were too busy chatting with your friends. The guy was apologizing but I told him he didn't have to apologize since he wasn't the one that messed up the order. Maybe that (assistant?) manager needed to spend less time in the back and more time clearing counters of old food and redirecting employees.

While sitting and waiting I was able to observe some things, The person taking the orders, was also prepping orders, and failing to wash their hands from working the register to going back to food prep. Kinda foul. Especially for not using gloves at any point. They also had a rice crispy treat prep sitting out, where I saw people continue to lean over to grab their food. It was moved at one point. To the pickup counter where it sat on the counter, where pickups are placed. That being said, I would not eat here due to the lack of food safety awareness.
