As you walk in, you're greeted by a market and an oyster bar. Then, through another entrance, you discover the dining room. It's such a fun and unique layout. They offer a tasting menu, but since we were planning to stop somewhere else afterward, we ordered à la carte. We started with the oysters, and they were incredible. The strawberry sherry jelly on top elevated the fresh oysters beautifully, adding just the right touch of sweetness and acidity. Next came the chickpea socca and the tomato salad. Together, they were absolute perfection. The tomato salad was one of the best I've had. Dressed with a tomato-water dashi vinaigrette, it was bright, refreshing, and full of umami at the same time. Light, yet surprisingly deep in flavor. Our favorite dish of the night was the Summer Pasta. The lemon butter sauce, tender summer squash, and bursts of fresh tomato created the perfect balance. Every bite tasted like summer. For our final dish, we had the halibut with artichokes, couscous, and grilled kombu. It was beautifully cooked and everything paired well together. It was delicious, although the earlier dishes had set such a high bar that this one felt a little more familiar. But I understand the focus of this restaurant to be fresh, in-season food, locally sourced, vegetable-forward, French-inspired. It's a neat location near Mt Tabor. There's not an immediately clear check-in table. And you're walked through the back to the other side where the Coquine dining room is. It feels a tad underwhelming - perhaps too casual for the finer dining expectation. Additionally, the person who greeted us was a tad surly. Service was friendlier during dinner but a little less hands-on than I'd like. I liked the design of the restaurant. Good lighting, natural decor, red countertop. They are a "zero foodprint" restaurant so the napkins and coasters are washable, serving utensils are wood, etc. It gave a very organic feel. Okay that said! From the moment we walked in, the atmosphere felt casual and authentic. The wood interior, Vietnamese nón lá display, and small dining room created a welcoming neighborhood feel that lets the food take center stage. We started with the Bánh Ít Trần, and it was an excellent choice. The chewy rice dumplings had a pleasant texture, while the fried shallots, scallions, and pickled vegetables added layers of flavor and balance to every bite. The highlight was the Miến Gà (Vietnamese chicken glass noodle soup). The broth was exceptionally clean, light, and comforting without being bland. You could taste the care that went into it. The glass noodles had a perfect texture, the chicken was tender, and the generous amount of herbs, scallions, and crispy fried shallots added freshness and aroma throughout the bowl. This is the kind of soup that feels nourishing rather than heavy. One tip for first-time visitors: arrive early. We got there around 1:30 PM, and nearly half of the menu had already sold out. That says a lot about how popular the restaurant is, but if you have your heart set on a specific dish, don't wait until the afternoon. The menu is intentionally small and rotates, which I appreciate. Focusing on a handful of dishes usually means they can maintain quality, and based on this visit, they're doing exactly that. Overall, Annam VL is serving authentic Vietnamese comfort food with outstanding broths and honest flavors. If you're a fan of traditional Vietnamese soups, this spot absolutely deserves a visit. Just be sure to get there early before your favorite dish sells out.
