Cake was delicious! We met Paul at Freedom Bakery for a tasting. His presentation and style was very easy going and we loved the cake. Later on I spoke with Paul over the phone and sent him a few pictures of what I wanted in terms of design. He gave me some suggestions and we rolled with it. My inlaws made our cake topper and dropped it off the day before the wedding. Paul set the topper in some frosting and it looked fabulous. He also took some pictures of him making the cake for my memory book. Everyone raved about the cake. We had two different flavors, Chocolate with Raspberry and Bavarian Cream and a Mango white cake (the Santa Cruz, I think). We kept the cake topper, Cookies and Cream, and had it a few weeks later with some friends while we watched our wedding video. The price was great and the process was so delicious and seamless! I did respond to Paul via Yelp but looks like he has not received it. I told him there is no need for a refund and that I will give his cupcakes another try at a later date. I do want to reiterate though that I understand about eating a cupcake that is still cold but this was definitely not the case. Paul was a pleasure to work with. The tasting was organized, professional, relaxed and yummy! We were looking for a fairly simple wedding cake that could be done really well and that's exactly what we got. They have some unique and tasty filling blends and the cake was moist. We had 3 tiers and each was different. I loved the raspberry-lemon filling the best, but I really liked almost all of their options. We haven't cut into the top layer Red Velvet yet, as we are saving it. Paul was easily reachable via email or phone and was always helpful. When I didn't know if I wanted a cake stand, Paul was there to supply info and links. When I decided not to have a cake topper, Paul made sure to ask that the florist had enough flowers to satisfy my vision. Our florist left fresh flowers on the cake table at set-up for them and FBandC did a wonderful job of arranging them on the cake. Initially, I didn't see this place as a 'typical' wedding-specific cake place, but they delivered quality and everyone thought it was beautiful and very tasty. I cannot recommend this place more highly for a wedding cake vendor. Our wedding cake was stunningly beautiful and delicious. Even better, this is because Paul and Nina were so accommodating and easy to work with. These two, and the rest of their staff, really know what they are doing. They demonstrated the utmost professionalism, attentiveness, patience, and responsiveness, even when I was sending emails sometimes multiple times in a day, going back and forth between decisions about the cake design. The cake tasting was what first blew us away. We had already decided to move forward with another vendor, but thought we'd do this last tasting on our list anyway. The cake we tasted was just in another league, the filling options much more sophisticated than other vendors. We were sold. At the tasting they were obviously very busy, but took copious notes on what we wanted as far as design. I was (annoyingly, probably) both particular and unclear about what I wanted the cake to look like, and how it would fit in with the overall design theme of our wedding. I provided some photos and some additional ideas and they executed the cake design flawlessly, despite all of my vagueness and indecisiveness. Everything about the cake was absolutely perfect. We had a three tiered cake (10-8-6) with the "Donut Cake" favor for the bottom tier, and the pistachio-lemon filling for the top two tiers - and WOW. They far exceeded our expectations in terms of the beauty and deliciousness of the cake. If you are thinking about booking this place for a cake, do it - you will not be disappointed. read more

After leaving the Bagel Cafe & Bakery in utter disgust. I came back to Freedom Bakery where they truly know how to treat their customers. I tried their Dream Cake which just melts in your mouth with it's whip cream and chocolate cake. It was delicious. I also tried their Rye Bread. We are from out of town, but Paul did such a great job of coordinating and working with us on every little detail, he is very knowledgeable and made sure everything worked smoothly. We had a phone call with him as well as many many emails, and he really answered all our questions. We were picking up the cake and driving it through windy hills to get to our venue, but he made sure everything was packed very well, with ice sheets and non-slide sheets, and the cake was fine. We wanted a very specific pillar cake, and gave him a reference picture, and he delivered above our expectations. So many of our guests let us know how sublime they thought the cake looked. We got our wedding cake from FB&C and I couldn't be happier. Paul was very responsive from the get-go. He presented us a beautiful plate for our tasting with 8 different flavors. During the tasting, I wasn't wowed by any of the flavors, but they were good. I used to work in catering/weddings and have tasted many wedding cakes - I've never been amazed. Anyway, we went with white cake with chocolate ganache. I also had a couple of photos of cake designs that I brought with me, and Paul was able to accommodate our needs. On the day of the wedding, the cake was delivered in perfect condition and was more beautiful than I had even anticipated. It was so wonderfully done and looked like satin. But here's the great part - the taste was 10x better than our experience at the tasting! I'm not sure what changed, but that was definitely one of the best wedding cakes I've ever had. Many of my guests complimented me on it, also very surprised at how good it was. I would 100% recommend Paul and FB&C to take care of any of your bakery needs. We ordered our two tier cake back in January after seeing them at the Monterey Bridal Expo. The top tier was red velvet cake with white chocolate cream cheese filling, and the bottom tier was their "Santa Cruz" special (white cake with mango mousse filling). It's really hard to pick a favorite for me, but my husband loved the Santa Cruz. We had the cake covered in butter cream and decorated with white chocolate shells (which were amazing as well).
