I don't frequent Hibachi but the sushi is absolutely the best I've experienced. I'm from Denver and have experienced sushi almost everywhere. This place beats them all in my opinion. everything is fresh and they sushi is especially flavorful and creative. The wiating staff puts a lot of effort into your comfort and preference. I've been eating sushi at a minimum 3 times per week for 15 years and this is my preferred place. read more

First impressions are hard to overlook. I was surprised at how dirty the hibachi grill was. We have dined at the grill countless times, but I haven't ever seen the grill that dirty. The food taste varies from chef to Chef. This time, chef's flavoring was a little on the peppery side for my taste, but some people like pepper. It's hard to predict which chef you'll get so you don't ever really know what the outcome will be. There really are some chefs that season better than others. Overall, if you're looking for a dining experience, it is fun to have your meal prepared in front of you. The 3 star rating for Fuji Mt. is pretty spot on. Nothing spectacular going on here but nothing necessarily bad either, especially considering this spot is in the middle of absolutely nowhere! I met a friend here for lunch and it was DEAD. No one else in this place except us, which I did not hate at all! We ordered quite a bit of sushi and it came out to us pretty quickly, which was nice... But over all, it was, it was well, fine. I ordered: - Sashimi Deluxe and requested no shrimp or octopus, which the chefs listened to - thankfully (because I'm not a fan). The sashimi was tasty. Some of the fish were bland and boring but that's to be expected from an assortment of sashimi that you don't specifically choose. The salmon and the hamachi sashimis were the best. - 3 Salmon Skin Handrolls (with no rice or sauce)... I asked for no vegetables but they served them up with cucumber... I guess technically cucumbers are fruits, ha! That being said, the actual salmon skin was delicious, nice and crispy.... I definitely could have ordered more! My friend ordered: - 2 rolls I don't know the name of because I was day dreaming about my food as she marked her requests down. - 1 salmon Handroll that looked nice and fresh - 1 seaweed salad - 1 Naruto roll *she seemed content with her food but she wasn't flat out regaling over it. I think my problem with this spot is that... It's actually expensive! I really didn't think I ordered all that much but then the bill arrived and BAM $100. I think my friend was kind of taken aback by that too... Which made our lunch not as tasty. I'm actually glad this place wasn't 5 stars-- because I drove 40 minutes to get there... The person Inspoke to on the phone was curtious and easy to talk to on the phone. Picked up my order and got my sashimi and rolls at a good time. the sashimi was perfectly cut and tasted great. I was so happy that I could have white tuna sashimi. My dragon roll has mushy rice and the textures of the avocado didn't help. The eel sauce was a bit much. I wasn't so thrilled in eating it. The miso soup was ok, nothing spectacular but it was good. The place must be good for those who want an experience in eating their food. Waitress was nice. Food was bad. Told that hibachi meals at table were same as at the grill. Ordered the steak and scallops. Steak was tender and scallops were good but they weee swimming in a bowl of teriyaki sauce rather than having nice grilled meat and vegetables. My husband ordered the teriyaki seafood, light on teriyaki. It was suppose to come with a lobster tail. They said they ran out of lobster so they gave him pollock fish instead. This is our go-to place for Hibachi and then guy from Texas is our favorite Hibachi chef for sure! He is funny and entertaining and cooks everything to perfection! The rest of staff is hit and miss and can either be great with service or you feel totally ignored and have to get up and get someone just to get your drink order in! The language barrier is often a factor as well. All the food, sushi, hibachi, appetizers, and mochi are excellent and they always have 25% your check coupons in Peak Values magazine (and online) every month! read more

We have been going here since they opened, probably 15yrs ago. We've usually have a good experience, but last night was atrocious! We had family from out of state and a party of 8, so we took a whole hibachi table. The other tables around us has the great cooks, putting on the show and doing everything we've come to expect from this place. That was not the case for us. Our cook, never said a single word to us. Did not do any of the fun cook things they're supposed to do. He kept running back to the kitchen for things he forgot (meanwhile the food sat there overcooking). The food was not cooked properly and had no flavor. Most of us only ate about half of it. We also had an issue with one of our orders of sushi, they forgot it and didn't even bring it out until the end of the meal. When I complained to a manager about it, she was aware he is a terrible cook, but he was her boss and there was nothing she could do. She offered us a meager 10% discount (on the food only), which came to about $20 on a $380 tab. Needless to say, we will be hard pressed to come back to this place for some time. Modern lighting fixtures, TVs with sports on for those who can't concentrate on their meal, and a gorgeous photo of Mt Fuji for those who think this is named after either an apple or a water bottle. When we walked into the restaurant, there was a male employee who "greeted" us. He just stood there and said nothing. I said "hi, 2 please" He didn't say anything, not even hello, picked up menus and walked away. My wife and I followed him to a table. He put the menus on the table and walked away. I said "thanks" and he never said a word. The server was friendlier and took our order. I had the broccoli chicken lunch and a side order of ikura sushi. The salmon roe wasn't fresh; it was an off color dull brick red color and smelled very fishy. The lunch dish was very salty. As far as the guy who didn't say a word to us,, I know he could speak cuz I saw him talking to another employee. Small portions, bland and we were charged for rice!! I've never been to a hibachi restaurant that charged for rice! The only reason I did 2 stars instead of 1 was the service of the wait staff. How disappointing. We have eaten here for years and enjoyed it. The service this time was horrendous. Made a reservation for our party of 8 at a grill table. Told them it was a birthday knowing they bring a birthday dessert. Host asked about it while seating us and I reconfirmed. I followed up with the waitress and let her know of the birthday and when the chef came I announced it to him. NOTHING to acknowledge it. Chef was HORRIBLE! We might as well have just ordered off of the standard menu for the lack of entertainment and even eye contact. He was more interested in watching all of the other tables than cooking for us. Never broke a smile. NEVER looked at any of us seated at his grill. Looked over our heads at the other tables. THE WHOLE TIME. NEVER SAID A WORD other than to ask my son if he wanted a sake squirt. LITERALLY! He seamed pissed to be there. Angry faced. Did NOTHING for the show except the volcano. NO egg rolling. NO flipping food into mouths (which my granddaughter was waiting for) NOT EVEN a spin of the spatula. No peeing squirt bottle. NOTHING! He cooked our food with no fun involvement and left. And when he was wiping the grill, splashed me with boiling water ALL OVER my upper body and scaled me. I have burn marks where the water hit me. No apology or even acknowledged it. It was NOT something you could have missed because I yelled at the pain when it happened. To top it off, the birthday ice cream was never brought over even after reminding the waitress at the end. We waited a half hour after we paid the check because of the HORRIBLE service we were determined to at least get that!! I grabbed the waitress and said if she would bring the I've cream we would leave the table. I'll drive into town from now on to go to a Japanese restaurant. There are a lot of low-star reviews and I'm just not sure why. Maybe this place is hit or miss and I caught it on a good night? I can think of no reason to give it less than 5, and here's why. I attended with a large group (about 20 people). We sat at 1 entire hibachi table and even had to bring in some extra chairs and squeeze together to fit everyone. Despite the huge group on a Friday night, service was quick and accurate. With 2 other friends, I shared appetizers and the Dragon Boat. The sushi was absolutely delicious. In fact, everything was. Most everyone else got hibachi and seemed to like their orders too, but check out the dragon boat! For 3 people, I think our split check came out to under $40 per person for shumai and shrimp tempura and THE DRAGON BOAT. We couldn't even finish it all. We left a few California-roll type things and a couple of slices of octopus. Well worth the money and I'll definitely visit next time I'm in the area. read more

Fuji Mt. has been open for maybe about two years. We should have gone sooner. I didn't know how a sushi restaurant in a stripmall in Monument would be but we were really surprised. They do NOT have a happy hour for sushi rolls which is a shame, but there are daily specials on drinks, wine and cocktails (see my photo). The specialty rolls were great! The basic roll I had (can't remember which) was rather bland. The tip I have for the business: open your blinds at night! You have a good looking place but no one would ever know that driving by.
